7-Layer Ice Cream Cake image

That's right, 7 layers! If you use homemade pound cake, double the sorbet and ice cream to get the same showstopping height.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Time 1h30m

Number Of Ingredients 8

1 frozen pound cake (10 3/4 ounces) in aluminum loaf pan, unthawed, or 1 homemade 4 1/2-by-8 1/2-inch pound cake, room temperature
2 cups raspberry sorbet, softened
1 cup vanilla ice cream, softened
1/2 cup coarsely chopped chocolate wafer cookies
2 large egg whites
Cream of tartar
1/2 cup sugar
1/2 teaspoon pure vanilla extract

Steps:

  • Remove cake from pan and cut horizontally into 4 slices. Line pan with plastic wrap, leaving 6-inch overhang on 2 sides. Build cake layers in pan in this order: bottom cake slice, 1 cup sorbet, cake slice, 1/2 cup ice cream, cookie crumbs, 1/2 cup ice cream, cake slice, 1 cup sorbet, top cake slice. (If necessary, return ice cream to freezer as you work.) Wrap in plastic and freeze at least 1 hour (or up to 3 days).
  • In a heatproof bowl, lightly whisk together egg whites and pinch of cream of tartar. Set bowl over (not in) a pan of simmering water and whisk until whites are foamy. Slowly whisk in sugar and cook, whisking, until sugar is dissolved (to test, rub some between your fingertips).
  • Remove bowl from heat and, with an electric mixer, beat on medium-high until stiff, glossy peaks form, about 6 minutes. Add vanilla and beat 1 minute. Remove cake from pan, trim sides if desired, and dollop meringue on top.

1 cup chocolate ice cream, slightly softened

7 LAYER BROWNIE ICE CREAM CAKE

7 Layer Brownie Ice Cream Cake image

Make and share this 7 Layer Brownie Ice Cream Cake recipe from Food.com.

Provided by JustaQT

Categories     Dessert

Time 1h40m

Yield 12 serving(s)

Number Of Ingredients 11

1/4 cup unsweetened cocoa powder
3 tablespoons water
1 large egg
1 teaspoon vanilla
1/2 cup butter or 1/2 cup margarine
1 cup sugar
1 1/3 cups flour
6 cups vanilla ice cream, softened
whipped cream
raspberries
Heath candy bar, crushed

Steps:

  • Trace an 8-inch circle on a piece of waxed paper, using a cake pan as a guide.
  • Place on a stack of 6 more pieces waxed paper.
  • Using the traced circle as a guide, cut through all pieces of paper, giving you 7 waxed paper rounds.
  • Heat oven to 375 degrees F.
  • Have 2 cookie sheets and an 8-inch spring form pan ready.
  • Brownie Layers: Whisk cocoa, water, egg and vanilla in a small bowl until blended and smooth.
  • In a large bowl with electric mixer, beat butter and sugar about 3 minutes until pale and fluffy.
  • Beat in cocoa mixture (batter may look curdled) with mixer on low speed; gradually add flour until well blended (batter will be very stiff).
  • Spread the 7 rounds of waxed paper out on countertop.
  • Drop a level 1/3-cup batter in center of each round.
  • Divide remaining 1/3-cup batter between rounds (about 2 t each).
  • Moisten a cookie sheet with water.
  • Place 2 waxed paper rounds on sheet (the water will stop them from slipping).
  • Spread batter almost to edges of rounds.
  • Bake 8 minutes or until surface looks dry and set but is slightly springy to the touch.
  • (While first batch bakes, spread out batter for next 2 layers.) Cool baked layers on cookie sheet on wire rack 3 minutes.
  • Put layers on waxed paper on a wire rack.
  • Let cool completely.
  • Bake and cool remaining layers.
  • Meanwhile, line spring form pan with plastic wrap, letting enough wrap extend about sides of pan to cover top when filled.
  • Peel waxed paper off cooled brownie layers.
  • Place 1 layer in bottom of pan.
  • Spread evenly with 1-cup ice cream.
  • Top with another brownie layer, then another cup ice cream.
  • Repeat with 5 more brownie layer and the ice cream, ending with a brownie layer on top.
  • Fold plastic wrap over top and freeze at least 8 hours or wrap airtight and freeze up to 1 month.
  • To serve: Remove sides of pan and peel plastic wrap down from sides.
  • Lift cake off plastic wrap onto serving plate.

MEGA MAGICAL 7 LAYER CHOCOLATE CAKE

Mega Magical 7 Layer Chocolate Cake image

Provided by Duff Goldman

Categories     dessert

Time 2h15m

Yield One 8-inch round cake

Number Of Ingredients 35

Unsalted butter, for greasing
3 cups (600 grams) granulated sugar
1 2/3 cups (320 grams) canola oil
4 large eggs, at room temperature
3/4 cup (180 grams) buttermilk, at room temperature
1 tablespoon pure vanilla extract
3 1/4 cups (450 grams) all-purpose flour
3/4 cup (65 grams) unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
3/4 cup (170 grams) brewed coffee
3/4 cup (170 grams) warm water
8 ounces dark chocolate, chopped
2 cups heavy cream
1/2 teaspoon pure vanilla extract
Pinch kosher salt
2 cups confectioners' sugar
1 cup hot fudge topping, such as Hershey's
1/3 cup unsweetened cocoa powder
1 1/2 sticks (12 tablespoons) unsalted butter, softened
2 tablespoons whole milk
1 teaspoon pure vanilla extract
Pinch kosher salt
4 cups confectioners' sugar, plus more if needed
1/4 cup unsweetened cocoa powder
3 tablespoons meringue powder
7 tablespoons water
8 ounces white chocolate, chopped
1/2 cup heavy cream
Cornstarch, for dusting
Chocolate fondant
Piping gel
Chocolate sprinkles
Crunchy hazelnut truffles, such as Ferrero Rocher

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease three 8-inch-round cake pans with butter and line with parchment paper.
  • Place the sugar and oil in the bowl of a stand mixer fitted with the whisk attachment and beat on medium speed until combined. Add the eggs, one by one, until completely incorporated. Add the vanilla extract and buttermilk and continue mixing until combined.
  • Sift the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Mix together the coffee and warm water. Alternate adding the dry ingredients and the coffee mixture into the bowl of the stand mixer, beginning and ending with the dry ingredients. Mix until you don't see any lumps and a thin batter has formed.
  • Divide the batter evenly among the prepared pans and bake until a toothpick inserted in the middle of each cake comes out clean, 30 to 35 minutes. Transfer the pans to a wire rack and allow to cool for 10 minutes. Remove the cakes from the pans and set on the wire rack to cool completely, about 1 hour.
  • For the dark chocolate mousse: Place the dark chocolate in a large bowl and set aside. Pour 1 cup of the heavy cream into a small saucepan and bring to a boil over medium-high heat. Pour the cream over the chocolate, cover the bowl with a kitchen towel and let sit for 3 minutes.
  • Remove the towel and slowly whisk the ganache until it's smooth and shiny. Set aside to cool to about room temperature.
  • Meanwhile, whip the remaining cup of heavy cream to stiff peaks in the bowl of a stand mixer fitted with the whisk attachment, or by hand. Using a rubber spatula, fold one-fourth of the whipped cream into the cooled ganache to lighten the consistency, then fold that mixture into the remaining whipped cream until almost completely combined with just a few streaks. Add the vanilla and salt and gently fold until combined into a light, fluffy mousse.
  • For the chocolate fudge buttercream frosting: Place the sugar, hot fudge, cocoa powder, butter, milk, vanilla extract and salt in the bowl of a stand mixer fitted with the paddle attachment and beat on low speed to combine. When the sugar is incorporated, increase the speed to medium and beat until the buttercream is smooth and satiny, 8 to 10 minutes.
  • For the chocolate royal icing: Place the confectioners' sugar, cocoa powder, meringue powder and water in the bowl of a stand mixer fitted with the whisk attachment and whip on low speed to combine. Increase the speed to medium-high and whip until the icing holds stiff peaks, 5 to 8 minutes. If it seems too soft, add more confectioners' sugar in 1 tablespoon increments. If it is too stiff, add a bit more water, drop by drop. Transfer to a piping bag fitted with a medium star tip.
  • For the white chocolate ganache: Place the white chocolate in a medium bowl and set aside. Pour the cream into a small saucepan and bring to a boil over medium-high heat. Pour the cream over the chocolate, cover the bowl with a kitchen towel and let sit for 3 minutes.
  • Remove the towel and slowly whisk the ganache until it's smooth and shiny. Set aside to cool to about room temperature, then transfer to a piping bag fitted with a medium star tip.
  • To assemble, level the tops of the cakes with a serrated knife or cake leveler. Spread half of the mousse over the top of one cake layer. Stack the second layer and repeat. Add the third cake layer and frost the top and sides with a thin coat of the buttercream. Refrigerate until the frosting is firm, 20 to 30 minutes.
  • When the cake is ready, frost the top and sides with a thicker layer of the buttercream and refrigerate again until very firm, about 1 hour.
  • When the cake is almost ready, lightly dust your work area with cornstarch and roll the fondant into a circle about 20-inches wide and 1/8-inch thick. Drape the rolled fondant over the cake and, using a fondant smoother or your hands, lightly press and smooth it onto the cake, working your way from the top down the sides. Pop any air bubbles with a cake tester or toothpick and continue to smooth the surface.
  • Trim any excess fondant from the base of the cake with a pizza cutter. Using a pastry brush, lightly brush the bottom half of the cake with the piping gel, then cover it with chocolate sprinkles.
  • Pipe a scalloped border around the edge with the chocolate royal icing. Pipe little rosettes of the white chocolate ganache around the cake and press 1 hazelnut truffle onto each. Continue to pipe and decorate with the royal icing, white chocolate ganache and hazelnut truffles to your liking.
