A nice cookie any time. (Note these are a slice and bake cookie. Prep time does not include refrigeration time to set the dough.)

Ingredients

1 cup butter
2 eggs
1 1/2 cups brown sugar, not packed
3 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 teaspoon vanilla
3/4 cup dried cherries
1/2 cup chopped almonds (optional) or 1/2 cup pecans (optional)

Steps:

Mix butter, eggs, brown sugar, and flour until well combined.
Add baking powder, baking soda, cinnamon, vanilla, cherries, and nuts.
Roll dough into logs that are approximately 1 inch around. Wrap in waxed paper and place in the refrigerator until ready to bake.
When you are ready to bake, preheat oven to 350 degrees.
Slice logs into 1 inch rounds and place on an ungreased cookie sheet.
Bake 12 minutes or until golden brown.
Cool 5 minutes before transfering to a cooling rack.

3 cups unsifted flour
1 cup sugar
1/8 teaspoon salt
1 1/2 cups unsalted butter
2 egg yolks
1 teaspoon vanilla extract
Raspberry preserves
Pecan halves

Steps:

Preheat oven to 325 degrees. Line baking sheet with parchment paper. Combine first 3 ingredients using a food processor. Cut in butter until the mixture resembles coarse meal. In a small bowl, beat the yolks with the vanilla extract and add to the flour mixture. Beat until completely blended. Pinch off pieces of dough and roll into balls. Place on the lined cookie sheet. Make indentation with thumb, fill the hole with preserves and press on a pecan half. Bake for 20 to 25 minutes.

1 cup butter, softened
1 cup sugar
1/4 cup packed brown sugar
1 egg
1/4 cup maraschino cherry juice
4-1/2 teaspoons lemon juice
1 teaspoon vanilla extract
3-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon cream of tartar
1/2 cup chopped walnuts
1/2 cup chopped maraschino cherries

Steps:

In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, cherry and lemon juices and vanilla. Combine dry ingredients; gradually add to creamed mixture and mix well. Stir in nuts and cherries. , Shape into four 12-in. rolls; wrap each in plastic wrap. Refrigerate for 4 hours or until firm. , Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 8-10 minutes or until the edges begin to brown. Remove to wire racks to cool.
