We've enjoyed a few hearty breakfast casseroles while visiting an Amish inn. When I asked for a recipe, one of the ladies told me the ingredients right off the top of her head. I modified it to create this quick and easy breakfast casserole my family loves. -Beth Notaro, Kokomo, Indiana

Number Of Ingredients 7

1 pound sliced bacon, diced
1 medium sweet onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
1-1/2 cups 4% cottage cheese
1-1/4 cups shredded Swiss cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

This is an always requested vegetable side dish at our holiday gatherings.

1 (16 ounce) package cottage cheese
6 eggs
½ cup all-purpose flour
¼ cup sour cream
2 teaspoons salt
½ teaspoon ground black pepper
2 (10 ounce) packages frozen chopped spinach, thawed and drained
4 cups shredded Cheddar cheese, divided

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Place cottage cheese, eggs, flour, sour cream, salt, and pepper in a food processor. Process until smooth. Mix spinach, cottage cheese mixture, and 2 cups of Cheddar cheese in a bowl, then spread into the prepared baking dish.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 45 minutes. Top with the remaining 2 cups of Cheddar cheese and continue baking until cheese has melted, about 10 minutes.

1 (14 ounce) can artichoke hearts, drained and halved
3 (10 ounce) packages frozen chopped spinach
1 (8 ounce) package cream cheese, softened
1/4 cup butter
1/4 teaspoon garlic salt
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons parmesan cheese, grated
1/2 cup soft breadcrumbs
1 tablespoon butter, melted

Steps:

  • Arrange the artichokes in a greased 1-quart casserole dish, and set aside.
  • Cook the spinach according to package directions; drain well.
  • Combine the spinach and the next five ingredients, stirring until the cream cheese and butter melt. Spoon the spinach mixture evenly over the artichokes; sprinkle with the Parmesan cheese.
  • Combine the breadcrumbs and 1 tbsp butter; sprinkle evenly over the casserole.
  • Bake at 350 degrees for 30 minutes or until lightly browned.

4 packages (10 ounces each) fresh spinach, trimmed
2 tablespoons butter
2 medium onions, finely chopped
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon white pepper
2 cups whole milk
1/2 cup heavy whipping cream
1/2 cup grated Parmesan cheese

Steps:

  • In a Dutch oven, place steamer basket over 1 in. of water. Place a fourth of the spinach in basket. Bring water to a boil. Reduce heat to maintain a low boil; steam, covered, 3-4 minutes or just until spinach is wilted. Transfer to a colander; drain. Repeat with remaining spinach. , When spinach is cool enough to handle, squeeze dry. Coarsely chop spinach., In clean Dutch oven, heat butter over medium-high heat. Add onions; cook and stir until tender. Stir in flour, salt and white pepper until blended; gradually whisk in milk and cream. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in cheese and spinach; heat through.

This is a delicious side dish for a holiday dinner. I found the recipe in Good Housekeeping (Dec., 2003) but it's originally from the Mabbettsville Market, in Millbrook, New York. This doubles easily for a larger crowd or potluck.

2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
1 (13 3/4 ounce) can artichoke hearts, drained and chopped
1/2 cup heavy cream
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2/3 cup grated parmesan cheese
1 (8 ounce) package cream cheese, softened
1 cup milk

Steps:

  • Preheat oven to 350°; in a bowl, combine spinach, artichokes, cream, salt, pepper and 1/3 cup parmesan.
  • In a small bowl, beat cream cheese until fluffy, occasionally scraping bowl with a spachula; reduce mixer speed and gradually add milk, mixing just until well blended.
  • Spoon spinach mixture into a shallow 1 1/2 quart casserole or 8'x8' glass baking dish; pour cream cheese mixture evenly over spinach mixture; sprinkle with remaining 1/3 cup parmesan and bake 25-30 minutes or until edges bubble and top is golden.
  • Serve warm.

This is one of those easy holiday casseroles that you can prepare ahead of time and just pop it in the oven when ready to eat. It is cheesy, creamy and oh so good. The spinach flavor really shines through. So yummy!

Number Of Ingredients 6

6 tablespoon(s) butter
8 ounce(s) white American cheese
6 - beaten eggs
6 tablespoon(s) flour
4 cup(s) small curd cottage cheese
3 - packages of frozen spinach

Steps:

  • Preheat oven to 350. Cut butter and cheese into 1/4 inch cubes. Set aside.
  • In medium bowl beat eggs lightly. Add flour, cottage cheese, butter, and American cheese. You can add a pinch of salt & pepper, but I normally don't. Defrost the frozen spinach, and do your best to remove and squeeze out most of the water. Add to mixture and mix well.
  • Place in a greased ovenproof dish (I use a large ovenproof round Pyrex bowl). Bake at 350 for 1 hr. Serve hot.
