Is there anything more comforting than a corn casserole? This slightly sweet and savory side dish is a 1-bowl, quick, fix it and forget it wonder that is perfect to serve at Easter, Thanksgiving, Christmas or any weeknight.

Steps:
- Preheat oven to 350 degrees. Lightly spray casserole or 9x13 glass dish with nonstick cooking spray and set aside.
- In a large bowl, stir creamed corn, corn, cornbread mix, butter, sour cream, heavy cream and cheese (if desired) together until well mixed and combined. Pour into prepared dish and smooth the top.
- Bake 40-45 minutes or until the edges are browned and top is golden. Cool 10 minutes before digging into enjoy.

- In a large bowl, combine the eggs, milk, 2 tablespoons butter, corn, cheese and 1/2 cup cracker crumbs.
- Spoon into a greased 11 in x 7 in baking dish.
- Toss the remaing crumbs and butter; sprinkle over corn mixture.
- Bake, uncovered at 350 degrees for 25-30 minutes or until edges are bubbly.

My mother won an award many, many years ago with this recipe in the Arizona Republic newspaper. I think it is delish and so different from a lot of other corn casseroles. Everybody I know asks for this recipe so I am giving it to everyone! Enjoy!

- Melt butter in a skillet over medium heat. Add onion, bell pepper, and pimento peppers and saute until tender, about 5 minutes.

Steps:
- Melt butter in skillet, add flour.
- Blend well, add milk and sugar.
- Stir constantly until mixture is bubbly.
- Remove from heat.
- Place back on heat and boil 1 minute.
- Stir in corn and egg, mix well.
- Pour into a well greased casserole dish.
- Mix crackers with butter and sprinkle over top.
- Bake uncovered in 350 oven for 30-35 minutes.
- For a 9X13 pan I triple the recipe.
- I use two bags of the frozen corn and triple everything but the salt and topping.

- Stir whole kernel corn, cream-style corn, sugar, egg, and about 3/4 of the melted butter together in a casserole dish. Fold about half the crushed crackers into the corn mixture. Sprinkle remaining crushed crackers over the top of the mixture and drizzle with the remaining butter.
