PINEAPPLE TERIYAKI BURGERS
Steps:
- Set up grill for direct cooking over high heat. Oil grate when ready to start cooking.
- In a mixing bowl, stir to combine ground beef, soup mix, teriyaki marinade mix, and 1/4 cup reserved pineapple juice.
- Form 4 patties slightly larger than bun. Gently press pineapple rings into tops of burgers.
- Season burgers with salt and pepper and place on grill pineapple side down. Cook 8 minutes per side for medium.
- Mix together mayonnaise, wasabi, and soy sauce.
- Serve hot on toasted buns with lettuce, tomato, onions, and wasabi mayonnaise.

- Preheat grill to medium-high heat and lightly oil the grate.
- Break up ground beef with the tip of a fork in a bowl. Drizzle in the soy sauce, sake, mirin, Worcestershire sauce, and sriracha sauce; crumble in brown sugar. Use tines of a fork to evenly distribute ingredients. Finish mixing with your hands (ideally your hands should be very cold for this). Shape into 4 equal-sized patties.
- Grill until browned and cooked through turning once, 3 or 4 minutes per side. When burgers develop a slight dome shape and juices begin to come through the top surface, they are done. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Serve burgers on slider buns with lettuce and tomato slices.

TERIYAKI PORK AND BEEF BURGER

- Combine the ground beef, ground pork, onion, garlic and 1 tablespoon each salt and pepper in a large bowl; stir until well mixed. Form the mixture into 6 balls. Press 1 teaspoon butter into the center of each ball; wrap the meat around the butter to enclose it and form a patty. Place the patties on a plate and refrigerate for 1 hour.
- Combine 1 tablespoon of the brown sugar, half of the pineapple and the dragon fruit and cilantro in a medium bowl. Toss until well mixed. Season with salt and pepper.
- Preheat a grill pan or outdoor grill to medium-high.
- Combine the soy sauce, ginger and the remaining pineapple and brown sugar in a large skillet. Bring to boil, then reduce the heat and maintain a gentle simmer. Remove the patties from the refrigerator and let stand at room temperature for 10 minutes.
- Place the patties on the grill and cook, flipping halfway through, until no longer pink in the center, 6 to 8 minutes. As the patties finish cooking, transfer them to the simmering sauce and cook, rotating in the sauce, until they are well coated and have absorbed some of the sauce, about 1 minute.

- Form beef into 4 patties, about 1/2 inch wider than the burger buns, with a slight depression in the center to account for bulging as they cook. Season generously with salt and togarashi and refrigerate until ready to cook. Sprinkle scallions evenly over a large plate or a cutting board.
- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate. Place burgers directly over hot coals, cover with vents open, and cook, turning occasionally, until burgers are well charred and burgers' centers register 110°F on an instant-read thermometer for medium rare or 120°F for medium, 5 to 7 minutes total.
- Brush burgers on both sides with teriyaki sauce and continue cooking, flipping and brushing occasionally, until they register 120°F for medium rare or 130°F for medium. Remove from grill and transfer to scallion-covered plate or cutting board. Brush with more sauce and flip burgers, brushing with sauce until well glazed and coated in scallions.
- Toast burger buns over grill until well browned and crisp. Spread bottom and top buns with mayonnaise. Divide half of cabbage over bottom buns. Top with cooked burgers. Brush with more teriyaki sauce. Top with remaining cabbage, close buns, and serve.

- Mix by hand the turkey, egg, bread crumbs, bell pepper, onion, garlic salt, black pepper and 1/4 cup of teriyaki sauce until well incorporated.
- Divide the mixture into 4 eaqual parts and form them into patties.
- Grill the burgers basting with the extra teriyaki sauce, takes 15-20 minutes.
- When the burgers are almost done top with the cheese and throw the pineapple rings on the grill.
- Take them off when the cheese is melted and take the pineapples off when you have nice grill marks on both sides.

- Prepare the teriyaki sauce: In a small saucepan over medium heat, combine the reserved 1/4 cup pineapple juice, soy sauce, rice vinegar, honey, garlic, and ginger. Cover and bring to a boil. Once boiling, remove the lid and cook for 1 minute, stirring constantly. While you wait for the sauce to boil, whisk the cornstarch and 1 tablespoon water together in a small bowl to create a slurry. Once the sauce is boiling, add the slurry, then stir to combine. Cook for 1 additional minute, until the sauce begins to thicken. Remove from heat.
- In a large mixing bowl, combine the ground turkey, panko, garlic, ginger, black pepper, cilantro, and 3 tablespoons teriyaki sauce. Mix just until combined, and be careful not to compact the meat. Shape into four 3/4-inch-thick patties. Place in the refrigerator for 30 minutes.

- Mix together the ground beef and diced onions in a mixing bowl. Set aside.
- Make the teriyaki sauce next. In a small pot, combine the sugar, soy sauce, water, garlic, and ginger. Warm over medium-low heat for 5 minutes until all the sugar is dissolved and the ginger and garlic has flavored the sauce. Remove from heat and let cool. Strain out the ginger and garlic.

- MAKE THE BEET PUREE: First, make your beet puree by dumping the whole can (water + all) into a blender or food processor. Fill the empty can to the brim with water and pour that in too. Then, blend on high until no chunks of beets remain. Measure out 1 cup from this mixture and set it aside to use in your burger.
- SAUTE THE VEGGIES: Next, melt the refined coconut oil in a large deep saute pan on medium heat. Add the minced red onion, garlic, and ginger and stir to coat. Then, add the bouillon powder and black pepper and stir again to make sure everything is coated. Saute for 3-5 minutes until the mixture is nice and fragrant.
- REHYDRATE THE TVP: Then, turn the heat to low and add the TVP, 1 cup of the beet puree, teriyaki sauce, soy sauce and scallions. Stir, cover, and allow the mixture to cook for 10 minutes, stopping once halfway through to stir. When you stir, be sure to scrape the bottom, so no TVP pieces burn.
- ADD THE GLUTEN: Remove the pan from heat and transfer the mixture to a large mixing bowl. Then, stir in your vital wheat gluten, + allow the mixture to cool down for about 10 minutes. . When the mixture is cool enough to touch, get in there with your hands and start kneading the mixture for about 2 minutes. This will activate the gluten and make the burgers super meaty!
- FORM THE BURGERS: Measure out 1/2 cup of the mixture and use clean, dry hands to form your patties. Start by rolling the mixture into a ball and squeezing tightly to make sure the mixture is as compact as possible. Then, gently flatten your burger ball into a patty and finish by fixing any cracks that form around the edges.
- TO BAKE: Bake these vegan teriyaki burgers on a lightly oiled baking sheet at 400F for 10 minutes, then carefully flip each burger and bake another 10-15 minutes.
- TO PAN FRY: Pan-fry your burgers, 2 at a time, in 1 Tbsp refined coconut oil on medium - medium high heat for 3-4 minutes on each side.
- TO AIR FRY: We have a small basket air fryer, so we air fry them 2 at a time. Lightly spray the air fryer basket with oil (optional) and air fry at 400F for about 15 minutes.
