1 packet beefy onion soup mix (recommended: Lipton)
2 tablespoons ginger teriyaki marinade mix (recommended: McCormick Grill Mates)
1 (8-ounce) can pineapple rings, drained, juice reserved
Salt and freshly ground black pepper
1/3 cup mayonnaise
1 tablespoon wasabi paste
1 tablespoon soy sauce
4 whole-grain burger buns
Lettuce, tomato, onion, for serving

Steps:

  • Set up grill for direct cooking over high heat. Oil grate when ready to start cooking.
  • In a mixing bowl, stir to combine ground beef, soup mix, teriyaki marinade mix, and 1/4 cup reserved pineapple juice.
  • Form 4 patties slightly larger than bun. Gently press pineapple rings into tops of burgers.
  • Season burgers with salt and pepper and place on grill pineapple side down. Cook 8 minutes per side for medium.
  • Mix together mayonnaise, wasabi, and soy sauce.
  • Serve hot on toasted buns with lettuce, tomato, onions, and wasabi mayonnaise.
  • INDOORS: Follow instructions for preparing burgers. Preheat broiler. Place burgers pineapple side up on wire rack over foil lined baking sheet or broiler pan. Broil 6 inches from heat source for 4 to 5 minutes per side for medium.

2 tablespoons soy sauce
1 tablespoon sake
1 tablespoon mirin
1 teaspoon Worcestershire sauce

Steps:

  • Preheat grill to medium-high heat and lightly oil the grate.
  • Break up ground beef with the tip of a fork in a bowl. Drizzle in the soy sauce, sake, mirin, Worcestershire sauce, and sriracha sauce; crumble in brown sugar. Use tines of a fork to evenly distribute ingredients. Finish mixing with your hands (ideally your hands should be very cold for this). Shape into 4 equal-sized patties.
  • Grill until browned and cooked through turning once, 3 or 4 minutes per side. When burgers develop a slight dome shape and juices begin to come through the top surface, they are done. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 pound ground beef sirloin
1 pound ground pork
1/2 medium yellow onion, grated on the large holes of a box grater
2 tablespoons minced fresh garlic
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1/4 cup firmly-packed light brown sugar
1 ripe pineapple, peeled, quartered, cored and cut into 1/4-inch dice
1 dragon fruit, peeled and cut into 1/4-inch dice
1 bunch fresh cilantro, minced
1/4 cup soy sauce
2 tablespoons minced fresh ginger
6 hamburger buns

Steps:

  • Combine the ground beef, ground pork, onion, garlic and 1 tablespoon each salt and pepper in a large bowl; stir until well mixed. Form the mixture into 6 balls. Press 1 teaspoon butter into the center of each ball; wrap the meat around the butter to enclose it and form a patty. Place the patties on a plate and refrigerate for 1 hour.
  • Combine 1 tablespoon of the brown sugar, half of the pineapple and the dragon fruit and cilantro in a medium bowl. Toss until well mixed. Season with salt and pepper.
  • Preheat a grill pan or outdoor grill to medium-high.
  • Combine the soy sauce, ginger and the remaining pineapple and brown sugar in a large skillet. Bring to boil, then reduce the heat and maintain a gentle simmer. Remove the patties from the refrigerator and let stand at room temperature for 10 minutes.
  • Place the patties on the grill and cook, flipping halfway through, until no longer pink in the center, 6 to 8 minutes. As the patties finish cooking, transfer them to the simmering sauce and cook, rotating in the sauce, until they are well coated and have absorbed some of the sauce, about 1 minute.
  • Place each patty on a bun, top with some of the salsa and serve hot.

It may not be a traditionally Japanese combination, but that's not to say that teriyaki sauce doesn't go well with hamburgers. It does. Spectacularly so. But you can't just go to the store, buy a bottle of sauce, and start dousing your burger in it willy-nilly. There's technique at the heart of a good teriyaki-glazed burger-here's how to make it the right way.

1 1/2 pounds fresh ground beef chuck (about 80% lean)
Kosher salt
2 teaspoons shichimi togarashi (see note)
1 cup thinly sliced scallions
1 recipe Teriyaki Sauce (I strongly advise homemade over any store-bought brand)
4 soft hamburger buns
4 tablespoons mayonnaise, preferably Japanese-style
2 cups finely shredded green cabbage

Steps:

  • Form beef into 4 patties, about 1/2 inch wider than the burger buns, with a slight depression in the center to account for bulging as they cook. Season generously with salt and togarashi and refrigerate until ready to cook. Sprinkle scallions evenly over a large plate or a cutting board.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate. Place burgers directly over hot coals, cover with vents open, and cook, turning occasionally, until burgers are well charred and burgers' centers register 110°F on an instant-read thermometer for medium rare or 120°F for medium, 5 to 7 minutes total.
  • Brush burgers on both sides with teriyaki sauce and continue cooking, flipping and brushing occasionally, until they register 120°F for medium rare or 130°F for medium. Remove from grill and transfer to scallion-covered plate or cutting board. Brush with more sauce and flip burgers, brushing with sauce until well glazed and coated in scallions.
  • Toast burger buns over grill until well browned and crisp. Spread bottom and top buns with mayonnaise. Divide half of cabbage over bottom buns. Top with cooked burgers. Brush with more teriyaki sauce. Top with remaining cabbage, close buns, and serve.

1 egg
1/4 cup breadcrumbs or 1/4 cup crushed corn flakes
1/4 cup finely chopped green bell pepper

1/2 cup teriyaki sauce, divided (I used Lawry's with pineapple juice)
1/4 teaspoon garlic salt
1/4 teaspoon black pepper
4 slices monterey jack pepper cheese
4 pineapple rings
4 buns

Steps:

  • Mix by hand the turkey, egg, bread crumbs, bell pepper, onion, garlic salt, black pepper and 1/4 cup of teriyaki sauce until well incorporated.
  • Divide the mixture into 4 eaqual parts and form them into patties.
  • Grill the burgers basting with the extra teriyaki sauce, takes 15-20 minutes.
  • When the burgers are almost done top with the cheese and throw the pineapple rings on the grill.
  • Take them off when the cheese is melted and take the pineapples off when you have nice grill marks on both sides.
  • **We butter the buns and toast them on the grill or toaster oven and we use mayo**.

1/4 cup whole wheat panko bread crumbs
1 tablespoon minced fresh garlic (about 3 cloves)
1 tablespoon minced fresh ginger
1/2 teaspoon black pepper
1/4 cup chopped fresh cilantro
4 rings canned pineapple (reserve juice for teriyaki sauce below)
1 red onion (cut into 1/2-inch-thick slices)
Whole wheat hamburger buns (for serving)
1/4 cup reserved pineapple juice (from canned pineapple above)
1/2 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
1 teaspoon minced garlic (about 1 clove)
2 teaspoons minced fresh ginger
1 tablespoon cornstarch

Steps:

  • Prepare the teriyaki sauce: In a small saucepan over medium heat, combine the reserved 1/4 cup pineapple juice, soy sauce, rice vinegar, honey, garlic, and ginger. Cover and bring to a boil. Once boiling, remove the lid and cook for 1 minute, stirring constantly. While you wait for the sauce to boil, whisk the cornstarch and 1 tablespoon water together in a small bowl to create a slurry. Once the sauce is boiling, add the slurry, then stir to combine. Cook for 1 additional minute, until the sauce begins to thicken. Remove from heat.
  • In a large mixing bowl, combine the ground turkey, panko, garlic, ginger, black pepper, cilantro, and 3 tablespoons teriyaki sauce. Mix just until combined, and be careful not to compact the meat. Shape into four 3/4-inch-thick patties. Place in the refrigerator for 30 minutes.

Grill the rings of pineapple and red onion slices until caramelized and tender, about 3 minutes per side for the pineapple and 4 minutes for the red onion. Grill the burgers for 4 minutes on the first side, flip, then brush with sauce. Grill 4 minutes, then flip again and brush the other side with sauce. ½ of a medium onion, diced
¼ cup sugar
¼ cup soy sauce
¼ cup water
3 cloves garlic, smashed
1-inch knob of ginger, smashed
4 burger buns, toasted
Optional: American cheese, sliced tomatoes, and onions

Steps:

  • Mix together the ground beef and diced onions in a mixing bowl. Set aside.
  • Make the teriyaki sauce next. In a small pot, combine the sugar, soy sauce, water, garlic, and ginger. Warm over medium-low heat for 5 minutes until all the sugar is dissolved and the ginger and garlic has flavored the sauce. Remove from heat and let cool. Strain out the ginger and garlic.

3 Tbsp refined coconut oil
1 small red onion, minced
1.5 tsp fresh minced ginger
2 large cloves garlic, minced
2 Tbsp vegan bouillon powder
1 tsp ground black pepper
1 1/4 cup dry TVP (Textured Vegetable Protein)
1 cup beet puree
1/2 cup teriyaki sauce
2 Tbsp soy sauce
1 Tbsp chopped scallions
1/2 cup vital wheat gluten*
¼ cup vegan mayo
2 Tbsp teriyaki sauce
1 Tbsp sriracha
Sliced red onion
Pineapple slices
Lettuce

Steps:

  • MAKE THE BEET PUREE: First, make your beet puree by dumping the whole can (water + all) into a blender or food processor. Fill the empty can to the brim with water and pour that in too. Then, blend on high until no chunks of beets remain. Measure out 1 cup from this mixture and set it aside to use in your burger.
  • SAUTE THE VEGGIES: Next, melt the refined coconut oil in a large deep saute pan on medium heat. Add the minced red onion, garlic, and ginger and stir to coat. Then, add the bouillon powder and black pepper and stir again to make sure everything is coated. Saute for 3-5 minutes until the mixture is nice and fragrant.
  • REHYDRATE THE TVP: Then, turn the heat to low and add the TVP, 1 cup of the beet puree, teriyaki sauce, soy sauce and scallions. Stir, cover, and allow the mixture to cook for 10 minutes, stopping once halfway through to stir. When you stir, be sure to scrape the bottom, so no TVP pieces burn.
  • ADD THE GLUTEN: Remove the pan from heat and transfer the mixture to a large mixing bowl. Then, stir in your vital wheat gluten, + allow the mixture to cool down for about 10 minutes. . When the mixture is cool enough to touch, get in there with your hands and start kneading the mixture for about 2 minutes. This will activate the gluten and make the burgers super meaty!
  • FORM THE BURGERS: Measure out 1/2 cup of the mixture and use clean, dry hands to form your patties. Start by rolling the mixture into a ball and squeezing tightly to make sure the mixture is as compact as possible. Then, gently flatten your burger ball into a patty and finish by fixing any cracks that form around the edges.
  • TO BAKE: Bake these vegan teriyaki burgers on a lightly oiled baking sheet at 400F for 10 minutes, then carefully flip each burger and bake another 10-15 minutes.
  • TO PAN FRY: Pan-fry your burgers, 2 at a time, in 1 Tbsp refined coconut oil on medium - medium high heat for 3-4 minutes on each side.
  • TO AIR FRY: We have a small basket air fryer, so we air fry them 2 at a time. Lightly spray the air fryer basket with oil (optional) and air fry at 400F for about 15 minutes.
  • FINISHING TOUCHES: Make the spicy teriyaki mayo by mixing together all the ingredients in a small bowl until combined. To cook your pineapple slices, pan-fry them in a non-stick pan over medium high heat until lightly browned on each side.
  • FOR SERVING: Serve these vegan teriyaki burgers on a bun topped with the pineapple slice, sliced red onion, lettuce, and a slathering of spicy teriyaki mayo next to a big pile of sweet potato fries. Leftovers can be stored in the fridge for a week or the freezer for up to 8 weeks.

1/4 cup unsweetened pineapple juice
2 tablespoons brown sugar
2 tablespoons teriyaki sauce
1/4 teaspoon salt
1/4 teaspoon garlic pepper seasoning
1 salmon fillet, skin removed and cubed (1 pound)
1/2 cup soft breadcrumbs
6 teaspoons fat-free mayonnaise
4 hamburger buns
4 lettuce leaves
1 tomatoes, sliced
red onion, slices

Steps:

  • In a large resealable bag, combine the first 5 ingredients; add salmon. Seal bag and turn to coat; refrigerate 1 hour.
  • Drain and discard marinade. Place salmon in a food processor. Add bread crumbs; cover and process until blended. Shape into 4 patties; cover and refrigerate 1 hour.
  • Coat grill rack with non-stick spray before starting the grill. Grill patties, uncovered, over medium heat for 6-7 minutes. Turn and grill 3-5 minutes or until meat thermometer reads 140 degrees.
  • Spread 1 1/2 tsp of mayonnaise on each bun. Serve patties on buns with lettuce, tomato, and onion.

Mix soy sauce, pineapple juice, brown sugar, and grated ginger in a small saucepan over medium-low heat. Bring to a boil and then lower the heat and simmer until the sauce reduces, about 15 to 18 minutes. Whisk together the cornstarch-water mixture again and pour into the pan. Stir and continue to simmer until sauce thickens, another 2-3 minutes. Remove from heat and set aside to cool.
  • BURGERS: In a large mixing bowl, add the (cold straight from the fridge) beef, garlic, ginger, and soy sauce. Mix the meat just a few times (no longer than for 30-40 seconds) until ingredients are incorporated. Be careful to not overwork or overhandle the meat.
  • SHAPE: Line a large sheet pan with two layers of parchment paper. Shape the burger patties on the tray instead of with your hands (this helps keep them from being over handled while also providing leverage to get the patties firm). Divide the meat into 3 equal parts. Gently form each portion into a patty that is about 4 to 4 and 1/2 inches across and with 1-inch sides. Make a shallow depression in the middle (see pictures in the post). The depression keeps the patty from shrinking too or puffing up too much. Cover with plastic wrap and refrigerate until the grill is completely heated.
