  • Heat a pot of filtered water to 200 to 205F. We use an electric kettle that shows us the exact temperature. You could also use a teapot on the stove — just heat to boiling, then let the water cool down for a few minutes.
  • Use a food scale to weigh out 34 grams of coffee, then grind it to a medium coarse grind (about the size of kosher or sea salt). We use an electric burr grinder to get a consistent grind.
  • When the water is heated, place the filter in your Chemex (see the video below for exact instructions). Pour in just a bit of water to wet the filter, then pour out the water into the sink. Place the ground coffee into the Chemex and shake it to level it out.
  • Place the Chemex on the food scale and tare it so the scale reads 0. Slowly pour in 70 grams of water in a circular motion. Then stop and wait for 1 minute: this allows the coffee to bloom (you may have to tap your scale once so that it doesn’t time out!).

  • Measure and Grind Beans. First, measure out 2 tablespoons (10 grams) of coffee beans for every 6 ounces of water. To make a 32-ounce Chemex, we'll use 10 tablespoons (50 grams) of coffee.
  • Measure and Heat the Water. Measure around 2 cups of filtered water and heat to 204 to 205 degrees Fahrenheit in your kettle. Alternatively, you can bring the water to a boil on the stove and let it sit for a few seconds.
  • Place Filter in the Chemex and Rinse. Open the paper filter and place it into your Chemex. Take your heated water and pour it over the filter to preheat and set the filter in place.
  • Bloom the Coffee. Place your ground coffee into the filter and pour over just enough of your heated water to saturate the grounds. Then let it sit and “bloom” for a few minutes.
  • Pour Over. Once the blooming process is complete, slowly pour the water in a circular motion over the grounds until the Chemex is three quarters of the way full.

THE RIGHT WAY TO BREW CHEMEX COFFEE | EPICURIOUS

From epicurious.com
Estimated Reading Time 2 mins
  • Start With a Medium Grind. Every coffee maker requires a different grind of coffee (use the wrong grind and your coffee might be too weak or too bitter), and the Chemex is no exception.
  • Measure Your Coffee. Enlist the help of a scale to ensure you're not using too much coffee in your brew—you're looking for 42g of ground coffee. Don't have a kitchen scale?
  • Master the Rinse-and-Bloom. Two simple but crucial steps at the beginning of the process—rinsing the filter and blooming the grounds—ensure your coffee is balanced and doesn't taste like paper.
  • Start Pouring Water Very Carefully... If you want to really brew by the book, place your Chemex on a scale and add hot water in weighted, timed measurements.
  • ... Or Don't. Or, just pour periodically. You're not blooming anymore, so you can pour water until it reaches the top of the carafe. Wait for the water to pass all the way through the filter, then add more.
