An easy, good-enough-for-company, chicken dish that can be frozen. Add elegance by serving on puff pastry shells. This recipe can easily be doubled or tripled.

4 ounces mushrooms, sliced (or use canned)
2/3 cup green pepper, chopped
1/2 cup butter
1/2 cup flour
1/4 teaspoon pepper
2 teaspoons chicken, boullion
2 cups milk
1 cup water
2 1/2 cups chicken, cooked and cut up (or use canned)
4 ounces diced pimentos, drained

Steps:

  • Melt butter in large skillet over medium heat. Sautee mushrooms and green pepper until peppers are crisp tender. Remove from heat.
  • Add flour and pepper - return to heat and simmer on low until bubbly, stirring constantly.
  • Add boullion, milk and water. Increase heat slightly and bring to a slow boil. Cook 1 minute, stirring constantly.
  • Stir in chicken and pimento. Heat through.
  • At this point, you can serve the ala King over baked puff pastry shells, toast, mashed potatoes, or rice.
  • OR allow to cool, then freeze for up to 1 month. To prepare when frozen, allow to thaw in refrigerator overnight, then heat thoroughly in microwave or stovetop. Enjoy!

4 ounces mushrooms, sliced
2/3 cup green pepper, chopped
1/2 cup butter or 1/2 cup margarine
1/2 cup flour
1/4 teaspoon black pepper
2 teaspoons chicken bouillon granules
2 cups milk
1 cup water
2 1/2 cups cooked chicken, cut up
4 ounces pimientos, drained
rolls or toast

Steps:

  • In a large skillet over med-high heat, cook mushrooms and green pepper in butter until peppers are crisp-tender; Remove from heat.
  • Lightly spoon flour into a measuring cup, level off, and put into skillet.
  • Stir in flour and pepper. Return to low heat until mixture is smooth and bubbly, stirring constantly.
  • Stir in bouillon granules, milk, and water. Bring to a boil and stir 1 minute.
  • Stir in chicken pieces and pimento. Cook until thoroughly heated.
  • Freeze in a quart-sized freezer bag or serve immediately over puff pastry shells, biscuits, rolls, or toast.

This easy Chicken a la King recipe is made from tender chicken chunks, red peppers and mushrooms in a creamy sauce. It's on the table in 30 minutes - start to finish. Perfect for those days when you don't have much time to spend in the kitchen

1 cup Red Bell Pepper (diced)
1 cup Onion (diced)
1 cup Mushrooms (diced or quartered depending on size)
½ cup Frozen peas
3 cups Cooked chicken (shredded)
2 Tablespoons Butter
2 cups Milk
2 - 3 Tablespoons Cornflour
150 ml Single Cream
2 Tablespoons Olive Oil
Salt and pepper to taste

Steps:

  • Heat the olive oil in a saucepan.
  • Add the onions and red pepper and saute gently until soft. (About 5 minutes)
  • Add the mushrooms and cook for a further 5 minutes, or until the mushrooms have softened.
  • Add the butter and let it melt, then stir in the cornflour.
  • Pour in the milk and bring to the boil. Then turn down the heat and stir until the mixture thickens.
  • Add the peas and chicken and simmer for 5 minutes.
  • Stir in the cream and allow to heat through.
  • Season with salt and pepper (optional)
  • Serve on a bed of rice with a leafy green salad on the side

1 1/2 lbs boneless skinless chicken breasts
1 (10 3/4 ounce) can condensed cream of chicken soup or 1 (10 3/4 ounce) can cream of mushroom soup
3 tablespoons flour
1/4 teaspoon pepper
1 (10 ounce) package frozen peas and pearl onions, thawed and well drained
2 tablespoons pimiento, chopped and drained
1/2 teaspoon paprika
1/2 teaspoon celery salt, optional
1 dash cayenne pepper

Steps:

  • Cut chicken into bite size pieces.
  • Place in slow cooker.
  • Using a medium bowl, stir soup, flour and pepper until blended.
  • Pour over chicken but DO NOT STIR.
  • Cover and cook on Medium for 2 and 1/2 hours or on LOW for 5 to 5 and 1/2 hours or until chicken is very tender.
  • Stir in peas and onions, pimiento, paprika celery salt, if desired and cayenne pepper.
  • Cover and cook for 20 to 30 minutes or until vegetables are tender.
  • Serve over rice or in patty shells.
  • Serve with fresh fruit.

4 individually frozen biscuits
1-3/4 cups sliced fresh mushrooms
1/4 cup chopped onion
1/4 cup chopped celery
1/3 cup butter, cubed
1/4 cup all-purpose flour
1/8 to 1/4 teaspoon salt
1 cup chicken broth
1 cup whole milk
2 cups cubed cooked chicken
2 tablespoons diced pimientos

Steps:

  • Bake biscuits according to package directions. Meanwhile, in a large skillet, saute the mushrooms, onion and celery in butter until crisp-tender. Stir in flour and salt until blended. Gradually stir in broth and milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Add chicken and pimientos; heat through. Serve with biscuits.

1 small onion, diced (approx. 1 cup)
1/2 lb carrot, peeled & thinly sliced (approx. 4 large carrots)

1 tablespoon Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic salt
1 teaspoon McCormick's Montreal Brand steak seasoning
8 cups chicken stock (not needed until day of cooking)
1/2 cup uncooked pasta, . we like ditallini (not needed until day of cooking)

Steps:

  • Label a 1-gallon freezer bag.
  • Add all ingredients except chicken broth/stock and pasta.
  • Remove air from bag, seal & lay flat in freezer.
  • To prep: Thaw overnight in refrigerator.
  • Add contents of freezer bag, broth/stock, and cook 6-8 hours on low.
  • Add pasta for the last 30-60 minutes of cooking time.

  • Cut up chicken breasts into bite sized pieces. Mix flour and cream of chicken soup together along with the pepper. Cook on high for 2.5 hours or low for 5 hours. Add 2 cans of peas and paprika. Stir well. Add in flour or instant mashed potatoes to thicken. (We used the potatoes with great results.) Let cook for another 30 minutes. Enjoy! We topped ours with cheese....just because we can.
  • If chicken is already thawed when you bought it, cut it into bite sized pieces. If it's not, you can wait and cut it up with scissors in the slow cooker after it's cooked. Mix flour, pepper and cream soup together. Place chicken and soup mixture into gallon size freezer safe bag. Label, Lay Flat & Freeze. On cooking day, follow instructions in recipe above.
