CHEESY SRIRACHA CHICKEN DIP
This would be a Great Dip for the Football Season!!

Steps:
- 1. Preheat the oven to 350 degrees.
- 2. Beat the cream cheese with a mixer until smooth. (This should only take a minute or so.) Add the ranch dip and stir again.
- 3. Add the sriracha sauce, starting with just a couple teaspoons and tasting before adding more. Directions to make your own sriracha sauce follow this link: http://nomnompaleo.com/post/36060636540/paleo-sriracha
- 4. Add the chicken and about 2/3 of the shredded cheese. Stir to combine and then transfer to a small baking dish.
- 5. Sprinkle the remaining cheese and top.
- 6. Bake for 15-18 minutes, until bubbling and slightly browned around the edges. Let cool a few minutes before serving. Enjoy!

SUPER CHEESY SPICY CHICKEN DIP
Your favorite dip gets a smoky, spicy twist with chipotle chiles. Sharp white Cheddar and mozzarella make this classic cream cheese-and-chicken combination extra cheesy. This is a dip that will keep you going back for more.

- Heat the olive oil in a medium saucepan over medium heat. Add the onions, scallion whites, 1/2 teaspoon salt and a few grinds of black pepper. Cook, stirring occasionally, until the onions are softened and translucent, about 5 minutes.
- Meanwhile, shred the Cheddar on the large holes of a box grater. Cut the mozzarella into 1/4-inch to 1/2-inch cubes and set both cheeses aside.
- Once the onions have softened, add the chipotle chiles and adobo sauce to the saucepan and stir until the onions are evenly coated and the adobo sauce is heated through, about 1 minute. Add the milk and stir, scraping up any browned bits from the bottom of the saucepan. Add the hot sauce, cream cheese, Cheddar and mozzarella and cook, stirring continuously, until all the cheese has melted and the hot sauce has thoroughly combined, about 4 minutes. Gently fold in the chicken.
- Transfer the dip to a heatproof serving bowl and top with the reserved scallion greens and the crispy fried onions. Serve warm with tortilla chips.

- Preheat oven to 400 degrees. In a large, oven-proof skillet, heat oil over medium heat. Add onion and bell pepper and cook until vegetables are just tender, 3-5 minutes.
- Add cream cheese and stir until mostly melted. Stir in chicken, Monterrey Jack cheese, Sriracha sauce and honey. Cook and stir until cheeses are melted and everything is well combined. Stir in green onions. Season with salt and pepper, to taste.
- Top with cheddar cheese. Transfer skillet to oven and bake for 20-25 minutes, or until cheese is melted and golden and dip is hot and bubbly. Serve with bread, crackers, corn chips and vegetables.

- Preheat oven to 375°F. To prepare buffalo sauce, melt butter in a skillet. Turn off stove as soon as butter is melted and before it begins to bubble. Add in sriracha sauce and stir until sauce is uniform. In a separate pan, cook chicken cubes until done. Pour half of the sauce in with the chicken and coat chicken.
- In a 9-inch baking pie plate, spread softened cream cheese across the bottom until smooth. Add chicken on top. Add ranch dressing on top of chicken. Pour remaining hot sauce on top. Finally, top with shredded mozzarella.
- Bake about 15-20 minutes until completely heated and top cheese layer starts to blister. If you can't get the nice blister effect, turn oven up to 400°F for an additional few minutes until it does. Serve hot with tortilla chips.
