Categories     Appetizer

Time 1h

Number Of Ingredients 14

3 sheets Puff Pastry (thawed)
16 ounces Frozen Spinach (thawed)
2 Tablespoons Butter
2 Tablespoons Shallot (finely diced)
1 clove Garlic (finely diced)
1 pinch Nutmeg
2 Tablespoons Flour
1.5 cups Heavy Cream (or Whole Milk)
½ cup White cheddar cheese (shredded)
¼ cup Parmesan (shredded)
Salt ( to taste)
6 strips Cooked bacon (divided)
1 egg
1 Tablespoon Water

Steps:

  • Preheat oven to 400°F. Squeeze out any excess liquid from thawed spinach until it is as dry as possible. In a skillet over medium heat, melt butter, then add diced shallots and garlic and cook 2-3 minutes, until shallots become translucent. Sprinkle flour into the skillet, whisking for 1-2 minutes until it lightly browns.
  • Add nutmeg, then slowly add heavy cream, whisking continuously, until the sauce begins to thicken, about 3-5 minutes.
  • Stir in white cheddar cheese and Parmesan cheese.
  • Dice cooked bacon strips and add to the cheese sauce, reserving 2 strips to top the pastries later. Stir until the cheese melts completely, then salt to taste.
  • Add spinach to the mixture and stir to combine.
  • Finally, remove from the heat and begin preparing your puff pastry. On a lightly floured surface, unfold the thawed puff pastry and roll each into a 12-inch square sheet.
  • Cut each pastry sheet into 9 even squares. Place into greased muffin cups, pressing gently on the bottoms and up the sides, so the corners point up.
  • Fill each cup with 2 Tablespoons of the creamed spinach mixture.
  • Top with remaining chopped bacon.
  • In a small bowl, mix egg and water to create an egg wash. Brush the egg wash over the top of the puff pastry, then add to the oven.
  • Bake 15-18 minutes, or until golden brown on top. Serve, and enjoy!

CHEESY SPINACH PUFF PASTRY BITES

Cheesy Spinach Puff Pastry Bites image

When I travel home to be with my nieces and nephews, my brother always wants me to cook new things for the kids. What I've done in this recipe is take the crowd-pleasing creamy spinach dip that I make and pair it with puff pastry. Because what kid (or adult!) doesn't love puff pastry?

Provided by Stuart O'Keeffe

Categories     appetizer

Time 1h10m

Yield 9 bites

Number Of Ingredients 13

4 slices bacon, diced
1/2 medium onion, minced
4 cloves garlic, minced
4 cups lightly packed spinach leaves
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 large eggs
1/2 cup (4 ounces) cream cheese, at room temperature
1/2 cup grated Parmesan
1/2 cup crumbled feta
1 tablespoon chopped chives
All-purpose flour, for dusting
1 package (2 sheets) thawed frozen puff pastry, left at room temperature for 30 minutes

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Heat a large nonstick skillet over medium-high heat. Add the bacon and cook until crisp, 5 to 7 minutes. Transfer the bacon to a paper towel-lined plate with a slotted spoon, leaving the bacon fat in the pan. Set the bacon aside.
  • Return the skillet to medium-high heat and add the onion. Cook, stirring occasionally, 1 minute. Stir in the garlic. Add the spinach and cook until the spinach is wilted, 2 to 3 minutes. Stir in the salt and pepper and set aside.
  • Stir 1 egg, the cream cheese, Parmesan, feta and chives together in a large bowl. Stir in the spinach mixture and the bacon. Set aside.
  • Dust a work surface with flour and roll out the pastry with a rolling pin to smooth out any creases. Cut into 4-inch pieces; you should get about 9 squares. Place the squares on the prepared baking sheet.
  • In a small bowl, beat the remaining egg together with a splash of water. Using a pastry brush, brush two adjacent sides of each square with the egg wash. Place a heaping tablespoon of filling into the center of the square. Fold the dough over the filling, forming a triangle, and crimp the edges together. Place the bites in the fridge for 10 to 15 minutes. Remove from the fridge and brush the tops with the remaining egg wash. Bake until golden brown and puffed, 15 to 20 minutes. Let cool 5 to 10 minutes before eating.

CHEESY SPINACH PUFFS

Cheesy Spinach Puffs image

Moist, spinach-studded, cheese and egg puffs get toasty, crispy bits around the edges and taste great alone, but really sing when dunked in warm marinara or pizza sauce. This is a favourite movie-night snack at our house and has won over even the most ardent anti-green vegetable protesters in our family. The smaller you chop the spinach after squeezing it dry, the easier it is to get it past picky eaters.

Provided by Rebecca Lindamood

Categories     Appetizer     Breakfast

Time 35m

Number Of Ingredients 11

4 tablespoons unsalted butter
1 large onion (peeled and finely chopped or grated on a cheese grater)
2 garlic cloves (peeled and minced or pressed)
3 eggs
1 cup ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan (Romano or Asiago cheese)
½ cup Italian style breadcrumbs
1 pound frozen chopped spinach
½ teaspoon salt
Optional: warm marinara or pizza sauce or Ranch dressing for dipping

Steps:

  • Preheat the oven to 350°F. Generously -and I DO MEAN GENEROUSLY- spray 48 mini-muffin wells with non-stick cooking spray. Eggs are culinary glue. If you don't grease the tar out of those mini-muffin wells, they will stick!
  • Melt the butter over low heat in a small saucepan or frying pan. Stir in the grated or finely chopped onion and cook on low, stirring frequently, until the onions are very tender, about 5 minutes. Stir in the garlic and cook for an additional minute. Remove the pan from the burner and set aside.
  • Put the squeezed-dry spinach on a cutting board and chop a few times with a knife to separate the spinach and make the pieces smaller.
  • In a mixing bowl, beat the eggs with a whisk. Whisk in the ricotta cheese until smooth. Switch to a wooden spoon, add the remaining ingredients -including the cooked onion mixture and the chopped spinach- and mix until evenly combined.
  • Divide the mixture between the mini-muffin cups. Bake the puffs until set in the center and lightly browned around the outside edge (begin checking at 20 minutes.)
  • Let them rest in the pans for about 3 minutes before trying to remove. If any of them stick, run a butterknife around the edge to loosen them.
  • Serve warm or room temperature with marinara or pizza sauce.

  • Squeeze out as much water from the thawed spinach as possible, too much water will make soggy puffs. Mix the spinach with the feta, onion, garlic, olive oil, and dill (if using). Season to taste with salt and pepper. In a small bowl beat the egg to blend before gently stirring into the spinach mixture.
  • Cut the puff pastry into 3 equal strips. Reserve 1 strip for some other use (such as Nutella Palmiers). Cut each remaining strip into 3 squares for a total of 6. Place a square in each muffin cup, pressing into the bottom and up the sides, leaving the corners pointing up. Divide the filling evenly among the pastry cups. Fold pastry over filling, pressing the corners together to meet in the center. The pastry cups can be covered and refrigerated up to 3 hours ahead of time.
  • Beat the remaining egg to blend in a small bowl. Brush the pastry with the egg wash. Bake until the pastry is golden brown and puffed, about 25 minutes. Transfer the muffin tin to a wire rack to let the puffs cool in the tin for 10 minutes. Run a sharp paring knife around the edges of the puffs to loosen before turning the puffs onto the rack to cool slightly before serving.
