Enjoy this cheesy Mexican lasagna that's made with sausage, beef and beans - a hearty dinner. Use 2 cups thawed Make-Ahead Seasoned Ground Beef and Sausage to save time in the kitchen.

1/2 lb bulk spicy pork sausage
1/2 lb ground beef round
1 can (15 oz) ranch-style pinto beans, drained
1 can (10 oz) diced tomatoes with green chiles, drained
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (10 3/4 oz) condensed cream of celery soup
1 can (10 3/4 oz) condensed cream of mushroom soup
1 can (10 oz) Old El Paso™ enchilada sauce
9 soft corn tortillas (6 inch)
2 cups shredded sharp Cheddar cheese (8 oz)
2 cups shredded Monterey Jack or pepper Jack cheese (8 oz)
1 medium tomato, chopped (3/4 cup)
4 medium green onions, chopped (1/4 cup)
1 medium avocado, chopped
Sour cream, if desired
Fresh cilantro leaves, if desired

Steps:

  • Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 12-inch nonstick skillet, cook sausage and beef over medium-high heat 5 to 7 minutes, stirring often, until thoroughly cooked; drain. Stir in beans, diced tomatoes, garlic powder, cumin, salt and pepper. Cook 2 minutes or until thoroughly heated.
  • In 2-quart saucepan, stir together soups and enchilada sauce. Cook over medium heat 3 minutes, stirring constantly, until thoroughly heated.
  • Spoon one-third of the sauce into baking dish; top with 3 of the tortillas. Spoon half of the meat mixture over tortillas; top with another one-third of the sauce and 1 cup of the Cheddar cheese. Top with 3 tortillas. Repeat layers with remaining meat mixture, sauce, Cheddar cheese and tortillas. Sprinkle with 1 cup of the Monterey Jack cheese.
  • Cover loosely with foil. Bake 20 minutes. Uncover; sprinkle with remaining 1 cup Monterey Jack cheese. Bake 10 minutes longer. Let stand 10 minutes before serving. Top with tomato, onions, avocado and dollop of sour cream. Garnish with cilantro.

2 green pepper s, chopped
1 large onion, chopped
4 tsp. chili powder
2-1/2 cups chunky red salsa
2 pkg. (10 oz. each) frozen corn
6 high-fiber whole wheat tortilla s (8 inch)
1 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1-1/2 cups KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided

Steps:

  • Heat oven to 375ºF.
  • Brown meat with peppers and onions in large skillet on medium-high heat. Stir in chili powder; cook 1 min. Add salsa and corn; mix well. Simmer 5 min.
  • Spread 2 cups meat sauce onto bottom of 13x9-inch baking dish; top with layers of 2 tortillas, 1 cup meat sauce, sour cream and 1/2 cup cheese. Cover with 2 tortillas, 2 cups meat sauce and 1/2 cup cheese; top with remaining tortillas and meat sauce. Cover.
  • Bake 30 min. or until casserole is heated through. Top with remaining cheese; bake, uncovered, 5 min. or until melted.

1 (8 ounce) container fat-free sour cream
1 (4.5 ounce) can chopped green chilies
½ cup low-fat milk
2 ½ cups cooked, shredded chicken breast meat
8 (6 inch) yellow corn tortillas, torn into bite-size pieces
1 teaspoon taco seasoning mix, or more to taste
1 large tomato, chopped
1 ½ cups shredded Mexican-style cheese blend, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Stir condensed soup, sour cream, green chilies, and milk together in a large bowl. Add chicken, tortilla pieces, and taco seasoning; stir. Mix tomato and 1 cup Mexican-style cheese blend into chicken mixture.
  • Spread chicken mixture out into the prepared baking dish and cover the dish with aluminum foil.
  • Bake casserole in the preheated oven for 40 minutes. Discard aluminum foil. Sprinkle remaining cheese over the top of the casserole and continue baking until cheese melts and casserole is bubbling, 5 to 10 minutes more. Let rest for 5 minutes.

I'm a big fan of spicy food, and this is a quick recipe I enjoy making when I'm in a hurry. It is a versatile recipe that can be modified to suit your taste -- it can be made spicier by adding some extra hot peppers or cayenne pepper, you could add some black beans to the mixture, and so on. Any leftovers also reheat wonderfully in the microwave the next day.

1 cup chopped onion
3/4 cup chopped green bell pepper
1 -2 garlic clove, minced
1 tablespoon butter
1/4 teaspoon chili powder
1/3 teaspoon cumin
14 ounces chicken broth
10 3/4 ounces cream of mushroom soup
14 1/2 ounces diced tomatoes and green chilies
1/2 teaspoon salt
1/2 teaspoon black pepper
11 ounces 6-inch corn tortillas, torn
4 cups shredded jalapeno jack cheese
1 1/2 lbs boneless skinless chicken breasts, cooked and shredded

Steps:

  • Preheat oven to 350 degrees. In a small skillet over medium heat cook onion and bell pepper in butter until tender. Add garlic clove(s) and cook for an additional 2 minutes. Add chili powder and cumin and stir to combine. Remove from heat and set aside.
  • In a blender container combine chicken broth, mushroom soup, undrained tomatoes and 1 tablespoon of the cooked vegetable mixture. Cover and blend on low speed until smooth.
  • In 3-quart rectangular baking dish, layer half of soup mixture, half of torn tortillas, half of chicken, half of remaining cooked vegetable mixture, and half of cheese. Repeat layers.
  • Bake, uncovered, about 45 minutes or until heated through and lightly browned. Let stand 5-10 minutes before serving.

This goes together quickly and then bakes for about an hour. This recipe can be taylored to your own tastes quite simply. You can vary the flavors by using different chili powders, beans, cheese blends or Dorito flavors. It's easy to control the heat level by which Ro-tel you use. If you don't like it hot replace the jalapenos with mild green chilies.

6 fajita-size flour tortillas
1 (15 ounce) can refried beans
1 lb ground beef
1 cup onion, chopped
1 teaspoon dried chipotle powder or 1 teaspoon dried ancho chile powder
1/2 teaspoon ground cumin
1 (15 ounce) can Ro-Tel tomatoes
1 (4 ounce) can jalapeno peppers, diced
1 (8 ounce) package mexican cheese, shredded
1 (15 ounce) can kidney beans or 1 (15 ounce) can black beans, drained
1 cup Bisquick
1/2 cup milk
1 egg, beaten
1 (4 ounce) can green chilies, diced
1 (1 ounce) bag nacho cheese flavor Doritos, crushed (about 10 chips)

Steps:

  • Brown ground beef and onions; add chili powder, cumin, tomatoes and jalapenos. Heat through.
  • Meanwhile line bottom and sides of a 13 x 9" pan with tortillas. Line bottom with refried beans.
  • Add ½ of ground beef mixture. Cover with ½ of the cheese. Top with beans. Add the rest of the ground beef mixture. Top with the rest of the cheese.
  • Mix Bisquick, milk and egg together; add chilies. Pour over casserole; top with crushed Doritos.
  • Bake in 350° oven for 50 - 60 minutes until top is browned and toothpick inserted in crust comes out dry. Let stand for 10 minutes before cutting.
