CHEESY SMOKED SAUSAGE CASSEROLE
My version of my grandmother's layered elbow, smoked sausage, stewed tomato, and cheese casserole.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
- Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
- Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

THREE-CHEESE KIELBASA BAKE
I always have some type of smoked sausage in my fridge, because it lets me get supper on the table in a hurry during the week. This recipe was in a Taste of Home booklet called "No Fuss Freezer Meals", and makes two very large casseroles. We always add way more garlic than the recipe calls for, and use a spicy chipotle sausage.

- Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir for 5 minutes or until crisp-tender.
- Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain macaroni.
- In each of two greased 13 x 9 x 2 baking dishes, layer a fourth of the macaroni and meat sauce. Combine egg and ricotta cheese; spoon a fourth over sauce. Sprinkle with a fourth of the cheddar and mozzarella. Repeat layers. Top with green onions.
- Cool one casserole; cover and freeze for up to 2 months. Cover and bake the remaining casserole at 350 for 15 minutes. Uncover; bake 15 minutes longer or until the cheese is melted to your liking.
- To use frozen casserole, thaw in the refrigerator for 24 hours. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 for 35 to 40 minutes or until heated through.

LOW CARB CHEESY SMOKED SAUSAGE CASSEROLE
I'm pretty much on a low-carb for life diet and have been for several years so I'm always looking for new recipes and new ideas for something tasty AND that fits within my personal dietary guidlines. This recipe turned out really good and has unlimited options (i.e. beef sausage, hot dogs, chopped ham, chopped up spam or throw in your favorite veggie..) so feel free to get creative with it!!

Steps:
- Cut smoked sausage in half, lengthwise, and then chop in 1/2 again.
- (If uncooked, first cook according to package directions until SLIGHTLY browned.).
- Put cooked cauliflower into 2 quart casserole dish. Add cooked meat and mix.
- Melt all remaining ingredients (using 1/2 of the shredded chedder cheese) except for paprika in a saucepan over medium heat until warm, melted and smooth. (Use a wisk and stir constantly.).
- Pour cheese sauce over cauliflower and meat.
- Sprinkle remaining shredded cheddar cheese on top, and then sprinkle paprika evenly over the top.
- Bake in preheated 350 degree oven for 35-45 minutes (watch-just until golden brown on top).
CAULIFLOWER-CRUSTED QUICHE WITH HILLSHIRE FARM® SMOKED SAUSAGE

- Preheat oven to 375 degrees F. Grease a 9-inch deep-dish pie plate; set aside.
- Place cauliflower in a food processor in batches. Cover and pulse each batch until crumbly and mixture resembles the texture of rice.
- In a very large skillet, heat 1 tablespoon of the oil over medium-high heat. Add the cauliflower and cook, stirring occasionally, about 4 minutes, or until cauliflower is tender and starting to brown.
- In a medium bowl, combine the cauliflower, 1 egg, 1/2 cup of the cheese, the panko, and 2 tablespoons chives. Press mixture onto the bottom and up the sides of the prepared pie plate.
- In the same skillet, heat remaining 1 tablespoon of oil over medium heat. Add sweet pepper and cook for 2 minutes, or until it begins to soften. Add sausage and onion and cook for 5 minutes, stirring occasionally, until onion softens and sausage begins to brown. Spoon sausage mixture and remaining 1/2 cup cheese into cauliflower crust.
- In a medium bowl, whisk together remaining 4 eggs, whipping cream, and flour. Pour over sausage mixture in crust.
- Bake, uncovered, for 30 to 40 minutes or until a knife inserted near center comes out clean. Let stand on a wire rack for 10 minutes before serving. Sprinkle with additional chives, if desired.

So, I combined that with the smoked sausage, a few extras, and a cheese sauce and this is what I came up with. :)If you wanted to, you can cook about 1/8th. to 1/4th cup of finely chopped onion with the sausage. And to make this a One- Dish meal, just add some frozen peas. CHEESY FANCY CAULIFLOWER BAKE
This sounds like a weird combination of ingredients, but it's really good. I adapted this from a higher-fat recipe I found on the internet. It's still not low fat, but at least better for you than the original. Delicious left over too! Leftovers can be put into a baked potato for another main dish meal, or stir cooked rice and smoked sausage or cooked chicken or ham into it and re-bake it for another casserole. It freezes well for use later on in a potato, or as a soup if you puree it. You can use real mayo, miracle whip, or the store brand equivalent. Also velveeta (4-6 ounces) works as well as cheddar. 18 saltines is about 1/2 a sleeve of saltines from the box. You don't have to really measure them exactly. You can also use other crackers that you have such as cheese-its, or ritz types that are a little stale.

- Prepare the cauliflower by steaming it for about 10 minutes until it's slightly tender, but not squashy. You can either cut it into pieces or leave it whole as you desire. Whole makes a dramatic presentation, cut is good for easy serving.
- While the cauliflower is cooking, crush the crackers and put into a bowl with the softened margarine. Stir with a fork until it all goes together and the crackers are coated, set aside.
- In a medium saucepan, bring the miracle whip, salt, pepper, mustard,and milk to a boil over medium heat, stirring with a wire whisk. Boil for one minute, then add the cheese. Stir until the cheese is melted and the sauce is smooth.
- Put the cauliflower in a 9x13 baking dish, pour the cheese sauce over the top.
- Sprinkle the cracker/butter mixture over the top, and then place the pan in the oven broiler for a few minutes until the topping is browned. Do not step away from the oven because this browns very quickly!
