Steps:

  • Bring first 3 ingredients to boil in saucepan. Place remaining ingredients in slow cooker. Add broth mixture; cover with lid.
  • Cook on LOW 8 to 10 hours (or on HIGH 4 to 5 hours); stir.
  • Discard bay leaves. Ladle 1 cup soup into shallow bowl; use fork to mash vegetables in bowl. Pour into soup in slow cooker; mix well.

4 sprigs thyme
1 pound green split peas, picked over and rinsed
1 large leek, white and light green part only, halved lengthwise and thinly sliced crosswise
2 stalks celery, chopped
2 carrots, chopped
Kosher salt and freshly ground pepper
1 smoked turkey leg (1 to 1 1/2 pounds)
1/4 cup nonfat plain yogurt
1/2 cup frozen peas, thawed
Crusty multigrain bread, for serving (optional)

Steps:

  • Tie the parsley stems and thyme together with kitchen string and place in a 6-quart slow cooker. Add the split peas, leek, celery, carrots, 1 teaspoon salt and 1/2 teaspoon pepper; stir to combine. Add the turkey leg and 7 cups water. Cover and cook on low until the split peas and meat are tender, 6 to 8 hours.
  • Discard the herb bundle. Discard the skin and bones from the turkey leg and shred the meat. Vigorously stir the soup to break up the peas and make the soup smoother. Thin with water, if desired. Stir in the chopped parsley and about three-quarters of the turkey meat; season with salt and pepper.
  • Ladle the soup into bowls. Thin the yogurt with a little water, then spoon onto the soup. Top with the thawed peas and the remaining turkey. Serve with bread, if desired.

It's a great soup for a cold day when I know I won't have time to cook dinner. I usually make a batch and freeze what we don't eat. It tastes the same when reheated after the freezer, but the texture does change slightly. Lasts a few days in the fridge as well.

2 medium potatoes, peeled & diced (2 cups)

Steps:

  • 1. Combine all ingredients in a large crock pot. Season with garlic powder, salt, and pepper to taste.
  • 2. Cover and cook on low heat setting for 12 hours. An hour before soup is done, remove ham shanks or ham hocks to a chopping board. Discard bones, skin and fat. Shred meat and return to the crock pot.
  • 3. Before serving, mash any remaining potato chunks with a potato masher. Stir and adjust seasonings, to taste.

1/4-1/2 teaspoon fresh ground black pepper
1 large carrot, cut in 1/4-inch coins
1 tablespoon butter

2 -3 slices pepper bacon, cooked and crumbled, 2-3 slices tempeh bacon, cooked and crumbled or 1 ham bone
2 tablespoons fresh parsley, minced or 1 teaspoon dried parsley

Steps:

  • Place split peas in crock pot. Pour enough stock or water to crock pot to fill 2/3 full.
  • In small skillet fry the bacon until crisp. Set aside to drain on paper towel.
  • Pour off most of the bacon fat and lightly saute the onion, potato, leek, garlic and celery until softened, about 3 minutes.
  • Add to crock pot.
  • Add the remaining ingredients to the crock pot. (If using dried herbs, add them now. If using fresh herbs, they are to be stirred in 5 minutes before serving the soup.) Stir in the crumbled bacon.
  • Cook on low 4-5 hours or until split peas and potatoes are tender. Mash lightly with potato masher to puree the soup. Or use a hand held immersion blender to puree the soup.
  • Cool soup then transfer to container and refrigerate.
  • Heat soup up the next day until warm, being careful not to burn. The soup will be thick; add more stock or water to thin if desired. If using fresh herbs, don't forget to stir them in now.
  • Adjust seasonings if necessary and season to taste with salt and black pepper.
  • Sit. Relax. Lick the bowl clean.

This recipe for crockpot split pea soup cooks to perfection in your slow cooker.

2 cups cubed, fully cooked ham
1 1/2 cups dry split peas, sorted
1 large onion, chopped
3 cloves garlic, minced
4 stalks celery, chopped
1/2 cup chopped celery leaves
3 large carrots, peeled, sliced
2 tablespoons minced fresh parsley
1 teaspoon dried thyme leaves
1/4 teaspoon freshly ground black pepper
1/2 teaspoon salt
4 cups chicken broth
2 cups water

Steps:

  • Spray a 4 to 6 quart slow cooker with nonstick cooking spray.
  • Combine ham, split peas, onion, garlic, celery, celery leaves, carrots, parsley, thyme, pepper, salt, chicken broth, and water in the prepared crock pot and stir to combine.
  • Cover the slow cooker and cook on low for 10 to 12 hours or on high for 4 to 5 hours. Just before serving use a potato masher to mash some of the peas in the soup for a thicker consistency if desired. Note: Split peas should soften just fine in this amount of cooking time. They do not need presoaking. If your split peas are hard after this length of cooking time, there is something wrong with the peas or with your water. If the peas are very old and dried out, they won't soften. And if the water you use for making the soup is hard with lots of dissolved minerals that can stop the peas from softening. Use bottled water if that is the case.

  • Dump the split peas in your slow cooker and nestle the ham hock into the split peas. Pile in the onions, carrots, celery, and garlic and then tuck in the bay leaves. Season with pepper and pour the water over the top.
  • Set your slow cooker to low and walk away for about 10 hours. When the soup is done, it will be thick and creamy and the split peas should be soft and broken down. If the split peas still seem pretty firm, crank your slow cooker to high and check it every hour or so until the peas soften.
  • Fish out the bay leaves and discard them. Remove the ham hock and place it on a plate until it’s cool enough to handle. Discard the skin, bones, and any cartilage. Shred the ham.
  • If desired, use an immersion blender to purée the soup to the desired consistency. Stir in the shredded ham, thyme, frozen peas, and vinegar. Continue to cook on low until the frozen peas are heated through, about 15 minutes. Taste and add up to 1 teaspoon salt, depending on how salty your ham hock. (Don’t be shy with the salt. It really brings out the flavor of the soup. Trust us.)
