6 to 8 medium (4) cups carrots, sliced 1/4 inch
4 slices bacon , cut into 1/2-inch pieces
1/4 cup finely chopped celery
1 tablespoon chopped onion
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon dry mustard
1 cup milk
6 (3/4-ounce) slices Land O Lakes® Deli American quartered
Topping
1 cup seasoned croutons, crushed

Steps:

  • Heat oven to 350°F.
  • Place carrots into 2-quart saucepan; add enough water to cover. Cook over medium heat 8-10 minutes or until just tender. Drain. Place cooked carrots into ungreased 8-inch square baking dish.
  • Cook bacon in 2-quart saucepan over medium heat until cooked but not crisp; add celery and onion. Continue cooking, stirring occasionally, 3-4 minutes or until celery is crisply tender.
  • Stir in flour, salt and dry mustard. Continue cooking, stirring occasionally, 1 minute or until bubbly. Stir in milk with whisk. Continue cooking, stirring occasionally, 4-5 minutes or until mixture thickens and comes to a full boil. Continue boiling 1 minute. Remove from heat; stir in cheese until melted.
  • Pour sauce over carrots. Sprinkle crushed croutons over carrots. Bake 35-40 minutes or until bubbly in center and bread cubes are lightly browned.

Steps:

  • Preheat oven to 375˚F (190˚C).
  • On a cutting board, use a vegetable peeler to peel the carrot into ribbons.
  • In a small bowl, mix carrot ribbons with olive oil, salt, and pepper. Toss until well coated.
  • Transfer carrot ribbons to a baking sheet.
  • Bake for 10-15 minutes flipping halfway through. If carrots need more crisping, turn oven down to 300˚F (150˚C) and bake for additional 5 minutes, or until desired crispiness is reached.

6 slices swiss cheese, divided
4 tablespoons butter
1 cup onion, minced
3 tablespoons all-purpose flour

1 teaspoon chili powder
2 cups milk
1 cup fresh breadcrumb
5 slices bacon, cooked and crumbled
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • Bring a large saucepan of water to a boil.
  • Add carrots and cook for 5-7 minutes, or until carrots are crisp-tender.
  • Plunge into ice water to stop cooking.
  • Layer half of carrots in a 2-quart baking dish.
  • Cover with 3 slices Swiss cheese.
  • Repeat with remaining carrots and cheese slices.
  • In medium saucepan, melt butter over medium heat.
  • Add onion and cook for 2 minutes, or until soft.

1/4 cup maple syrup
2 teaspoons red pepper flakes
1/2 orange, juiced
1 pound regular uncured bacon (not thick cut)
1/4 cup finely shredded Cheddar

Steps:

  • Preheat the oven to 375 degrees F and fit a baking sheet with a wire rack.
  • In a small saucepot, mix the maple syrup, red pepper flakes, orange juice and 1/4 cup water. Bring to a boil, then remove from the heat.
  • Line up the bacon slices on the wire rack and brush with the hot maple syrup mixture. Sprinkle some cheese on each piece of bacon. With a skewer in hand, fold the end of a piece of bacon in half lengthwise and press the skewer through the end. Do this to 4 pieces of bacon, spreading them out evenly across the skewer, and place the skewer on the baking sheet. Twist the bacon pieces into long spirals so as to create straws. Take another skewer and skewer the bottom of each piece of bacon to keep the bacon twisted. Do this to all the bacon.
  • Bake until the bacon browns, about 35 minutes. Let cool slightly on the rack; the bacon will get crunchy as it sits. Serve immediately.

2 large, fat carrots , peeled
2 tablespoons soy sauce
2 tablespoons canola oil
1 1/2 tablespoons tahini
1 tablespoon maple syrup
3/4 teaspoon smoked paprika
1/4 teaspoon freshly ground pepper
1/4 teaspoon liquid smoke, optional

Steps:

  • Gather the ingredients.
  • Preheat the oven to 300 F and line a large baking sheet with parchment paper. Run a y-peeler over the carrots from top to bottom with a good amount of pressure to make long, thin strips. Continue until you have have peeled both carrots as much as possible.
  • In a medium bowl, combine the soy sauce, oil, tahini, maple syrup, paprika, pepper, and liquid smoke, if using. Whisk together until well mixed.
  • Add the carrot strips to the marinade, then toss to coat. Let sit for 30 minutes at room temperature.
  • Remove the carrot strips from the marinade and place on the prepared baking sheet in a single layer, leaving a little space between each. Brush the tops with some of the excess marinade left in the bowl.
  • Bake the carrot bacon for about 20 to 25 minutes or until browned, but not burned. Keep a close eye on the strips in the last 5 minutes.
  • Let cool for a few minutes to crisp up before serving. If the "bacon" isn't as crispy as you'd like, you can return it to the oven for a few more minutes. Enjoy!

1 sheet ready-rolled puff pastry
3 tbsp soft cheese
1 tsp Dijon mustard (optional)
6 rashers dry-cured smoked bacon
100g mature cheddar, gruyère or Swiss cheese, grated
1 egg, beaten

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unravel the pastry on the sheet of baking parchment it comes with, and cut into six squares. Mix the soft cheese with the mustard, if using, and a good grinding of black pepper. Divide between the middles of the pastry squares, and smooth over in a diagonal line from one corner to the opposite side.
  • Lay a bacon rasher over the soft cheese, then scatter over the cheese. Brush the two exposed corners of pastry with beaten egg, and fold over the top of the filling to join together. Brush the tops with more egg, then slide the baking parchment on to a baking sheet and bake for 15-20 mins until the cheese has melted and the pastry is golden.
  • Transfer to a cooling rack for 5-10 mins before serving warm. Will keep chilled in an airtight container for two-three days.

1/2 cup butter
1/2 cup medium onion
1/4 cup flour
1 teaspoon salt

2 pounds baby carrots or 12 large carrots, sliced into bite sized pieces
1 cup plain bread crumbs or ritz crackers

Steps:

  • Preheat oven to 350*F Grease a 9 x 13 casserole dish and set aside. Steam carrots until 1/2 way cooked. You want them to be soft enough to bite but still with a bit of a crunch. They'll finish cooking in the oven. As carrots are steaming, in a saucepan combine butter and onion. Cook until onions are soft and translucent. Add flour, salt, mustard and pepper and mix well to create a paste. Slowly add 1/4 cup of milk at a time whisking continually until all the milk has been added to pan. You are making a basic roux. The mixture will thicken quite a bit at first but slowly thin out. If you add all the milk at once you'll have a clumpy mess, so only add 1/4 cup at a time, whisking well. Cook for 5 minutes then turn off burner and add cheese. Mix well until cheese is melted and combined. When carrots are cooked half way, place carrots on the bottom of the casserole dish. Pour cheese mixture on top of carrots ensuring to cover carrots completely. Sprinkle bread crumbs or crushed Ritz crackers on top of sauce and bake for 25 minutes. Remove from oven and serve immediately.
