1 cup all-purpose flour
2-1/2 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon cream of tartar
1/4 cup shortening
1/2 cup 2% milk

Steps:

  • In a small bowl, combine dry ingredients. Cut in shortening until mixture resembles coarse crumbs. Stir in milk just until moistened. Turn onto a lightly floured surface; knead 8-10 times. , Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. , Place on a greased baking sheet. Bake at 450° for 10-12 minutes or until golden brown. Serve warm.

1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon coarse salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into small pieces
3/4 cup milk (see headnote)

Steps:

  • Preheat the oven to 450 degrees. Butter or line a baking sheet.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Using a fork or 2 table knives, combine the butter and flour mixture until it resembles a coarse meal. Slowly add the milk, stirring with a fork, to the desired consistency.
  • For softer biscuits, drop 2 tablespoons of the dough onto the lined baking sheet. For firmer biscuits, turn the dough out onto a clean, lightly floured surface and gently knead just to bring the dough together. Carefully roll out the dough about 3/4 inch thick. Using a biscuit cutter or sturdy glass, cut about 12 biscuits, rerolling any scraps. Place on the lined baking sheet. (The biscuits can be frozen at this point. Freeze on the baking sheet, then remove to a resealable container or plastic bag for easier storage.) Bake the biscuits for 13 to 15 minutes (add 3 to 4 additional minutes for frozen ones), until golden brown. Cool slightly and serve warm.

1/4 cup cold butter, (plus more for brushing, optional)
3/4 cup buttermilk, cold (plus more for brushing, optional)

Steps:

  • Preheat oven to 450F (Give it enough time to get there, you want it hot)
  • Put the flour and cold butter in a food processor. You can also do this by hand. Pulse the machine 20-25 times until the butter is incorporated and the mixture is crumbly.
  • Remove the contents to a large bowl and stir in the buttermilk just until everything is moistened.
  • Turn the dough out onto a lightly floured surface and bring it together gently with your hands, but don't over work the dough. Pat or roll it out to about 1 1/2 inch inch thick. Cut out 8 biscuits with a 2 1/2" biscuit cutter, reforming the dough if necessary.
  • Place on a baking sheet, in cast iron skillet, or a biscuit baker, and brush lightly with buttermilk, if desired. Bake for 10 minutes or until golden and risen.
  • If you like, brush the hot biscuits immediately with melted butter, and enjoy.

I fell in love with scones a long time ago on my first trip to England. Since there are only two of us, I played with recipes until I found what worked to make two nice size ones. They are tender and moist with a hint of sweetness. Perfect for breakfast!

1 c self rising flour
small pinch salt
2 Tbsp sugar
2 Tbsp vegetable shortening
1/2 c cream, approximate plus a little for brushing on top
dash(es) almond extract, or vanilla if you prefer

Steps:

  • 1. Preheat oven to 425. Line your baking pan with parchment paper. Use a light colored pan, a dark baking sheet will make your scones dark on the bottom.
  • 2. Mix dry ingredients
  • 3. Cut in shortening, I use a fork
  • 4. Mix almond extract into 1/2 c cream
  • 5. Pour most of cream into flour mixture. Stir gently. You want the dough to just come together, not crumbly and not sticky. Add the rest of the cream if needed. I usually use it all. You may even need a little more. It all depends on your flour, environment, etc.
  • 6. Put on floured surface and form into a rectangle about 3 x 6. Just press it together, don't knead. I usually cut this in half for 2 square scones. You could cut it into 3 triangles if you want to be traditional. Place on the baking sheet.
  • 7. Brush the tops with a little cream and sprinkle with the coarse decorating sugar.
  • 8. Place in the freezer for 15 minutes. Yes, DO IT!
  • 9. Bake for 12 to 15 minutes until lightly browned. Let cool slightly before serving.
  • 10. These are best served with clotted cream, also called Devon Cream, and fruit jam. We Love Strawberry. Devon cream can be found in the dairy section of specialty stores like Fresh Market. Some supermarkets may have it but it's hard to find here.

  • In a small bowl, whisk together the flour, salt, baking soda, and baking powder.

When all of the pieces of fat are the size of rice and are coated in flour, pour in the buttermilk. 2 cups of heavy whipping cream
2 cups Self-rising white flour

Steps:

  • Preheat your oven to 400 degrees. Combine 2 cups of flour and 2 cups of heavy whipping cream. Stir until mixed. Scoop out onto the floured countertop and knead 10-12 times. Sprinkle with flour so the dough is not sticky, as needed. Then roll out the biscuit dough 1/2 inch thick with a floured rolling pin. Cut out the biscuits and place them on a greased cookie sheet. Bake for 15-20 minutes or until light golden brown. Serve with butter, jam, or honey. Enjoy. They will melt in your melt, I promise.
  • If you only have Bread FLOUR: You can use bread flour but you will have to add 1-1/2 teaspoons of baking powder and 1/4 teaspoon of salt to EACH CUP of flour. This recipe calls for 2 cups of flour so you would add 3 teaspoons of baking powder and 1/2 teaspoon of salt to the recipe.

1 ½ cups heavy cream ((don't substitute milk, heavy cream is a must!))

  • Keep cream in the fridge until you're ready to use it.
  • Add flour and salt to a medium bowl. Pour in cold cream and stir with a heavy wooden spoon until mixed. Preheat oven to 475 degrees.
  • Dump bowl onto a counter and scrape out any remaining dough or flour. Pat into a rectangle about 2" thick. Fold in thirds, turn 1/4 and fold again, continuing 3 times.

And some time that's just way too much for two ( or 4 ) people.While I was looking through my treasured 1996 Taste of Home Annual Recipes, I discovered this recipe that was sent into them by Sylvia McCoy of Lees Summit, Missouri. While making this recipe, I did make a couple of changes on the way that they were made. These biscuits rival any restaurant or fast food joint. They're so tender, fluffy, and buttery. They're the best biscuits I've ever made at home!

Number Of Ingredients 6

4 cups self-rising flour (plus more for dusting)
2 tablespoons baking powder ((see blog post above for more details; use double-acting, aluminum-free baking powder))
1 teaspoon baking soda
3/4 pound (3 sticks) SALTED butter (cold, cut into 1/2-inch cubes)
2 large eggs (beaten PLUS 1 large egg for brushing)
1 1/2 cups buttermilk (plus more as needed and for brushing)

Steps:

  • In a large bowl, whisk together flour, baking powder, and baking soda.
  • Add the butter and using a pastry blender, cut the butter into the flour until pea-like crumbs form.
  • Stir in the beaten eggs with a wooden spoon until just combined. Then pour in the buttermilk until the dough comes together into a sticky mass. You may need more buttermilk if it's still too dry and there is flour still at the bottom of your bowl. I ended up having to add in 1/2 cup more. DO NOT add 1/2 cup more all at the same time. Do 1 tablespoon at a time until the right consistency is reached.
  • Cover the bowl and refrigerate for at least 30 minutes.
  • When ready, preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Dust a little flour onto your work surface then put the dough onto the work surface and use your hands (flour them) to press into a round, roughly 14 inch diameter and 1/2 inch thick. See photos in the blog post.
  • Use a floured 2 3/4-inch round biscuit cutter to cut out about 20 biscuits. Reform the scraps of dough into a circle again to cut more.
  • Transfer biscuits to prepared baking sheet and arrange them so they are touching each other. See photos in the blog post.
  • In a small dish, beat together remaining egg and buttermilk then brush on top of the biscuits.
  • Bake for 15-20 minutes, or until the tops are golden brown.
  • Let cool slightly before devouring! They're best eaten out of the oven, day of.
  • Serve with your favorite sausage gravy, jam, or clotted cream.
