Steps:
- Process first 3 ingredients in food processor until blended. Stir in chiles.
- Shape into 4-inch oval on sheet of waxed paper to resemble pinecone. Insert nuts in rows to completely cover cream cheese mixture. Transfer to serving plate.
- Refrigerate 2 hours. Let stand at room temperature 15 min. before serving to soften slightly.

Steps:
- Start with a base of a breadstick
- Add two crackers and a few cubes of dill havarti cheese
- Layer in a skewer of olives and cornichons (skewers are my go-to for adding height variation)
- Place two thin slices of your favorite cheddar and a couple of folded salami slices (what I like to call salami flowers).
- Garnish with a sprig of rosemary (don't eat it raw, but do smell it as you go for another bite!)
- Finish with a sprinkling of salty almonds
THE HEAVYSET CHEESE BALL
Steps:
- Preheat oven to 300 degrees F.
- Place and spread all the almonds on a cookie sheet or in a shallow pan, pushing the almonds around until they turn color, about 20 minutes.
- Mix together the cream cheese and the mayonnaise. Add the bacon, salt and pepper, dill, and onion. Chill overnight.
- On a serving platter, make 2 pine cone shapes with the cheese. Begin to press the almonds at a slight angle into the cheese, starting at the narrow end of the pine cone shape.
- Do this in rows, continuing to overlap rows until all the cheese is covered. Garnish with fake sprigs, or real ones, or with rosemary.
- Serve at room temperature and spread on crackers.

I have been making this cheese spread for many years and it is always a big hit. It's a very fancy looking but easy spread for crackers. I like to serve it on a pedestal cake plate decorated with silk holly leaves or a big red bow at the top.

- In a 350 degree oven toast the almonds in a single layer on a cookie sheet.
- Meanwhile, combine the room temperature cheeses. Mound the cheese mixture onto the serving platter and shape into a pinecone shape with a spreading knife. Beginning at the bottom, pointed end of the pinecone begin placing the toasted almonds in rows, overlapping them slightly as you build the rows. The almonds should have the tapered end pointing downward. When it is done it will look like a huge pinecone. Decorate with silk leaves or a bow. Serve with an assortment of crackers and festive spreading knives.

I found this recipe in Kraft's 'What's Cooking' magazine. It is very impressive looking, so I decided I had to try it.

Steps:
- Mix cream cheese, shredded cheese, and Dijon mustard in a blender or food processor until well blended.
- Stir in green chilies.
- Place in freezer for 20 minutes so that it is easier to handle and shape.
- Remove from freezer and place on wax paper.
- Shape into what resembles a pinecone.
- Stick the almonds into the cheese ball in rows that completely cover the cheese ball.
- Cover and refrigerate for at least 2 hours.
- Let the cheese ball stand at room temperature for 15 minutes before serving.
- Serve with crackers.

- Add bacon, green onions, dill and white pepper - mix well and chill.

CHEESE PINE CONES
Originally this was printed on a Hellman's label and I've had it for years and years. It's a fancy way to spreading the holiday cheese! Easy and I've spread the leftovers (minus the nuts) on bread and grilled it in the toaster oven for a different breakfast treat. Very good.
