Easy Apple and Pear Crisp image

Ditch the dough and get your ice cream ready for this Easy Apple and Pear Crisp topped with a DIY cinnamon-oat topping.

Unsalted butter, for greasing skillet
3 cups small diced and peeled apples (any variety)
3 cups small diced and peeled pears
2 Tablespoons all-purpose flour
2 Tablespoons white sugar
1 Tablespoon fresh lemon juice
1 cup old-fashioned oats
1 cup all-purpose flour
3/4 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup unsalted butter, melted

Steps:

  • Preheat the oven to 350°F. Grease a 10-inch skillet or pie plate with butter.
  • In a large bowl, stir together the apples, pears, flour, sugar and lemon juice.
  • Pour the fruit filling into the prepared pie plate.
  • In a medium bowl, stir together the oats, flour, brown sugar, cinnamon and salt.
  • Stir in the melted butter until combined.
  • Using your fingers, clump together the topping and sprinkle it on the fruit.
  • Place the pie plate atop a baking sheet and bake the crisp until the fruit is bubbling and the topping is golden brown, 40 to 50 minutes.

2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

1/4 cup cranberries, fresh or dried
2 tablespoons sugar
1/3 cup all-purpose flour
1/3 cup rolled oats, uncooked
1/4 cup dark brown sugar
1 tablespoon granulated sugar
1/4 teaspoon cinnamon
Pinch nutmeg and salt
1/2 cup or 1 stick unsalted butter, melted
Heavy whipping cream or ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel, core, and thickly slice the pears. Toss them with the 2 tablespoons sugar and the cranberries and turn them into a deep, buttered 2-quart baking dish. The fruit should be at least 2 1/2-inches deep in the pan; add more fruit, if necessary.
  • For the topping, in a bowl, stir together the flour, oats, sugars, cinnamon, nutmeg, and salt. Drizzle in the melted butter tossing the ingredients with a fork to blend. Be careful not to over mix because you want a loose crumbly mixture, not a bound-together ball of topping. Sprinkle the topping over the pears.

PEAR CRISP WITH HAND-CHURNED VANILLA ICE CREAM

When I was a brownie in summer camp at Camp Sacajewea we would make hand cranked vanilla or peanut better ice cream on those hot August days, taking turns turning the crank. I can still remember the slightly icy quality of it. Maureen Shay's mother was my troop leader so I suspect she was the instigator of this long love affair I've been having with homemade ice cream. No fancy vanilla bean used here like in my normal ice creams. Vanilla extract is what the Brownies pantry stocked. My aunt Jimmy (her real name was Sylvia) brought apple crisp into the family's repertoire. In the recipe file her name adorns the top of the card. I, of course, needed to make it my own by using pears and making it a bit lighter and more flavorful with the apple juice concentrate.

2 cups whole milk
2 cups heavy cream
6 egg yolks
3/4 cup sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 cup dark brown sugar

1 pinch ground nutmeg
4 tablespoons butter, cut up
6 ripe pears, peeled, cored and sliced

Steps:

  • Ice Cream: Heat the milk and cream until scalded then turn off the heat. In a bowl whisk together the yolks and sugar; then temper the yolks with the hot cream mixture. Return to the heat and cook carefully stirring constantly until thickened and is 180 degrees F. Immediately pour the custard through a fine strainer into a bowl in an ice bath. Chill. Whisk in the vanilla extract. Turn in a hand crank ice cream machine with ice and rock or kosher salt and keep frozen.
  • Make the Crisp: Preheat the oven to 400 degrees F.
  • In a bowl, stir together the flour, sugars, cinnamon, and nutmeg. Using a pastry blender or the paddle attachment of an electric mixer, mix in the butter to make a crumbly, sandy mixture.
  • Peel, core, and thickly slice the pears and put them in a deep, buttered 2-quart baking dish. (The pears should be at least 2 1/2 inches deep in the pan; add more if necessary.) Drizzle the apple juice concentrate over the fruit and sprinkle the topping over the pears. Bake for 30 minutes, until pears are tender and topping is lightly browned.

You might think that a pastry chef would never recommend buying pie crusts but hey, its much better to make a pie with a pre-made crust than not to make a pie at all! For the best flavor, always look for the ones made with at least some butter, rather than all shortening. You can place the crust in a glass pie dish. That way you can check the bottom crust as it bakes and make sure it's getting nice and golden which to my mind is the most important step in pie-making. Nothing ruins a delicious pie like this classic combination of autumn fruits and warm spices faster than an undercooked, soggy bottom crust. You can mix the topping and keep it refrigerated for up to 7 days.

1/4 cup light brown sugar

Steps:

  • Make the topping: In a medium bowl, mix the flour, brown sugar, and cinnamon. Add the butter and, using your fingertips, pinch the ingredients together into a sandy, crumbly mixture. Do not over mix; as soon as the mixture is sandy, cover and refrigerate until ready to use.
  • Heat the oven to 375 degrees F. If using a refrigerated crust, use it to line a glass pie dish. If using a frozen crust, let thaw at room temperature and gently remove the crust from the aluminum liner. Transfer to a glass pie dish.
  • In a medium bowl, toss the apples, pears, sugar, cornstarch, cinnamon, and butter together. Place the filling in the pie crust. Sprinkle the streusel topping on top and place the pie on a sheet pan to catch any juices. Bake for 40 to 50 minutes, until the crust is golden brown and the juices are bubbling. Check the pie after 30 minutes; if the streusel topping is already brown, cover lightly with foil.
  • Let cool at least 30 minutes before serving. Serve warm or at room temperature.
