Quesadillas can be assembled in advance and fried quickly before serving.

Number Of Ingredients 5

6 ten-inch flour tortillas
8 ounces extra-sharp cheddar, grated
8 ounces Monterey Jack, grated
3 tablespoons unsalted butter
1 jar store-bought salsa (optional)

Steps:

  • Lay out 3 tortillas on a cutting board. Combine the cheddar and Monterey Jack in a small bowl. Spread a third of the cheese on each tortilla, leaving a 1-inch edge. Place the remaining 3 tortillas on top.
  • Melt 1/2 tablespoon butter in a 12-inch omelet pan set over medium heat, and add one filled tortilla. Cook until golden brown, 2 to 3 minutes. Flip with a spatula, and add another 1/2 tablespoon butter. Cook until browned and cheese is melted, 1 to 2 minutes more. Transfer to a cutting board. Repeat with remaining tortillas.
  • Cut cooked tortillas into eighths; serve immediately with salsa, if desired.

1/2 lb Italian sausage or 1/2 lb garlic sausage
1 medium onion, chopped
2 cloves garlic, minced
1 red pepper
1 cup medium salsa
1 cup corn kernel (frozen or drained canned)
1/3 cup chopped cilantro (optional)
2 (10 ounce) packages frozen chopped spinach, thawed
3 tablespoons grated parmesan cheese
1/2 teaspoon ground black pepper
2 cups shredded mozzarella cheese
10 large flour tortillas
2 cups shredded medium cheddar

Steps:

  • Remove sausage from casings and crumble into medium skillet; add onion and garlic; cook over medium heat stirring occasionally until meat is no longer pink.
  • Slice 3 thin rings from bottom of red pepper, set aside to garnish; chop remainder of pepper and stir into sausage.
  • Add salsa, corn and cilantro; set aside.
  • Squeeze excess moisture from spinach; toss with parmesan cheese, pepper and mozzarella cheese.
  • Place one tortilla on lightly greased pizza pan or baking sheet; spread generously 2/3 cup sausage mixture and top with 1/3 cup cheddar cheese; cover with another tortilla.
  • Distribute generously 1 cup spinach mixture on tortilla; repeat layers ending with a tortilla.
  • Press down lightly.
  • Cover loosely with foil; bake in 375 degree oven for 40 minutes.
  • Uncover and sprinkle with remaining 1/3 cup (75 mL) cheddar cheese and red pepper rings; continue to bake for 10 minutes or until heated through and cheese is melted.
  • Let stand 10 minutes before cutting into wedges.
  • Serve with additional salsa, sour cream or guacamole.
  • Note; Make fillings ahead of time and refrigerate; assemble and bake just before serving.
  • Bake for a few minutes extra if cold.

2 medium flour tortillas
2/3 cup shredded cheese ((Oaxaca, Chihuahua, Mozzarella, or Monterey Jack are best))
salt, (to taste)
sour cream (or Mexican crema)
guacamole
pico de gallo (or your favorite chunky salsa)

Steps:

  • Heat a large nonstick skillet or comal over low-medium heat. Heat the tortillas slightly, flipping them over every 10 seconds, until they're easily foldable and pliable.
  • Evenly divide the cheese and sprinkle it onto one half of each tortilla. Generously season with salt.
  • Fold the tortillas over the cheese to create a half-moon shape.
  • Cook the quesadillas for 1-2 minutes, or until one side of the quesadilla is golden-brown. You may have to press down lightly on the tops of the quesadillas with a spatula to prevent the tortillas from opening up.
  • Flip over and cook for another 1-2 minutes, until golden-brown and the cheese has fully melted.
  • Serve immediately as is, or cut them in half and serve with sour cream, pico and your favorite salsa.

1 tablespoon butter
4 flour tortillas (8 inches)
2 ounces cream cheese, softened
1/4 cup shredded sharp cheddar cheese
1/4 cup shredded Monterey Jack cheese
2 tablespoons thinly sliced green onion
1 tablespoon minced fresh cilantro
2 teaspoons chopped ripe olives
1/4 cup salsa
Sour cream, optional

Steps:

  • Spread butter over one side of each tortilla. Spread cream cheese over unbuttered side on half the tortillas. Sprinkle with cheeses, onion, cilantro and olives. Top with remaining tortillas, buttered side up., Cook on a griddle over medium heat for 1-2 minutes on each side or until cheese is melted. Cut into wedges. Serve with salsa and sour cream if desired.

Yummy vegetarian dinner that everyone in my family enjoys. You can use more tortillas or less cheese if you want, but this is how my family likes it. We don't own a springform pan, so I just make it in a casserole dish.

2 onions, chopped
2 (19 ounce) cans black beans
1 3/4 cups shredded cheddar cheese
4 (10 inch) tortillas
1 1/2 cups chunky salsa
1 teaspoon vegetable oil
1/2 cup water
1/4 teaspoon black pepper

Steps:

  • In a skillet heat oil over medium heat.
  • Cook onions until softened (about 5 min).
  • Drain and rinse beans, add to pan. Add water and pepper; cover and cook over low heat about 5 minutes or until beans are heated through and water is absorbed.
  • Let cool slightly.
  • Set 1/4 cup of the cheese aside.
  • Place 1 of the tortillas in a 10" springform pan. Spread with 1/3 of the black bean mixture, 1/3 the salsa and 1/3 the cheese.
  • Repeat layers twice. Cut the remaining tortilla into 8 wedges and arrange in original round shape on top. brush with oil and sprinkle with reserved cheese.
  • Bake in 400°F oven for 20 - 25 minutes or until crisp and golden, cheese is melted and beans are heated through. Let cool slightly before cutting.

1-1/3 cups finely crushed multigrain crackers
1/4 cup butter, melted
2 cups shredded sharp cheddar cheese
1 small zucchini, finely chopped
1/2 cup sliced fresh mushrooms
1/3 cup finely chopped red onion
1/4 cup finely chopped sweet red pepper
1 tablespoon olive oil
1 carton (8 ounces) spreadable garlic and herb cream cheese
4 large eggs, lightly beaten
2 tablespoons crumbled cooked bacon
2 tablespoons grated Parmesan cheese

Steps:

  • In a small bowl, combine cracker crumbs and butter. Press onto the bottom of a greased 9-in. springform pan. Sprinkle with cheddar cheese. In a large skillet, saute the zucchini, mushrooms, onion and red pepper in oil until tender. Spoon over cheese. , In a large bowl, beat cream cheese until smooth. Add eggs; beat on low speed just until combined. Stir in bacon. Pour over vegetable mixture. Sprinkle with Parmesan cheese. , Place pan on a baking sheet. Bake at 375° for 30-35 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; remove sides of pan. Serve warm or chilled. Refrigerate leftovers.
