4 cans (14-1/2 ounces each) diced tomatoes
4 large tomatoes, chopped
2 cups frozen corn, thawed
1 can (15 ounces) black beans, rinsed and drained
1 medium sweet onion, finely chopped
1/3 cup lime juice
1/4 cup minced fresh cilantro
2 tablespoons cider vinegar
2 tablespoons hot pepper sauce
1 garlic clove, minced
1 tablespoon coriander seeds, crushed
1 tablespoon ground cumin
1 teaspoon salt
1 teaspoon coarsely ground pepper
Chopped jalapeno pepper, optional
corn chips or tortilla chips

Steps:

  • Place two undrained cans of tomatoes in a large bowl; drain the two remaining cans and add tomatoes to the bowl. , Stir in the chopped fresh tomatoes, corn, beans, onion, lime juice, cilantro, vinegar, pepper sauce, garlic and seasonings. Stir in jalapeno if desired. Cover and refrigerate until serving. Serve with chips.

1 bunch green onion, roughly chopped
1 bunch cilantro, large stems removed
3 jalapeno peppers, seeded

Steps:

  • chop ingredients in food processor with about 3 cups of the tomatoes.
  • place mixture in large bowl, mix in remaining tomatoes, (may chop if finer texture desired).

20 cups tomatoes, chopped
8 cups onions, chopped
3 green peppers, chopped
7 banana peppers, chopped
5 cloves garlic, chopped
1 1/4 cups sugar
4 teaspoons chili powder
5 tablespoons salt
2 1/2 cups white vinegar
4 teaspoons cayenne pepper
1 1/2 cups cornstarch

Steps:

  • Combine all but the corn starch in a large kettle.
  • Cook on low 20 minutes.
  • Stir in corn starch.
  • Stir and cook another 2-3 minutes.
  • Pack in pint jars and refrigerate or process in water bath, or freeze if desired.

1 (28 ounce) can Roma tomatoes, drained
4 small Roma tomatoes, quartered
1 cup chopped white onion
1 clove garlic, smashed
1 small bunch fresh cilantro, stems removed
1 serrano pepper, seeded and chopped
1 medium jalapeno pepper, seeded and chopped
1 tablespoon freshly squeezed lime juice
1 ½ teaspoons kosher salt
¼ teaspoon ground cumin

Steps:

  • Combine canned and fresh tomatoes, onion, and garlic in a food processor; pulse 5 times to chop. Add cilantro, serrano and jalapeno peppers, lime juice, salt, and cumin and process for 10 seconds. Pulse further to desired consistency. Check and adjust seasoning as desired.
