PEANUT BUTTER-CHOCOLATE NO-BAKE COOKIES
What could be better than an indulgent dessert made from ingredients you have sitting in your pantry and that never needs to go into the oven? These cookies take just minutes of work; most of the time is spent waiting for them to harden into the rich, nutty, chocolaty delights that they are.

Steps:
- If using a flimsy silicone mold, place mold onto a stiff baking sheet (for ease of transferring to and from refrigerator).
- In a small microwave safe bowl, heat melting wafers in 30 second increments, stirring every 30 seconds, until wafers are melted and smooth.
- Add a spoonful of melted chocolate to each frog mold. Or, use a pastry bag/plastic baggie to pipe the chocolate into the mold. If needed, add a second coat to the sides of your mold, filling in any holes or thin areas. Transfer to refrigerator for 10 minutes to harden.
- Meanwhile, add peanut butter and confectioner's sugar to a bowl. Stir until combined - mixture will be thick, like a dough. Add more sugar as desired for a sweeter filling.
- Remove mold from refrigerator. Distribute peanut butter filling evenly between your frogs, gently patting down into an even layer. Leave about ⅛" of space at the top of your mold to fill in with chocolate.
- Top each frog with remaining chocolate (reheat as needed in the microwave if chocolate has solidified) and spread into an even layer. Return tray to the refrigerator and allow to chill for 20 minutes.
- Remove frogs from molds. Store in a sealed container at room temperature.

- Gather Your Supplies. To make eight raspberry cream chocolate frogs, you'll need: 1 1/2 bars of chocolate. 10 raspberries. 4 tbsp coconut cream (from a can of full-fat coconut milk)
- Melt the Chocolate. Melt 1/2 of a bar of chocolate in your microwave in 30 second intervals, stirring in between. Make sure you're using a microwavable container.
- Pour Chocolate Into Mold. Pour a tablespoon of melted chocolate into each frog mold. Use a clean, un-used paintbrush (a cheap one works just fine) to make sure chocolate gets into all the nooks and crannies and up the sides of the mold.
- Filling Option 1: Raspberry Cream. Open up a can of full-fat coconut milk and spoon 4 tablespoons of the coconut cream that has risen to the top into a bowl.
- Filling Option 2: Peanut Butter. For a filling similar to Reese's peanut butter cups, mix together 1/4 cup of powdered sugar and 1/3 cup peanut butter in a bowl until it resembles the second photo above.
- Top Off With Chocolate. Melt approximately one bar of chocolate in the microwave in 30-second increments (or in a double boiler, your choice) and pour about a tablespoon and a half over whatever inside mixture you've been working with.
- Remove From the Freezer. The chocolate frogs should come right out the the mold when you turn it over, but if they don't, tap the bottom slightly until they do.
- Finished! These chocolate frogs are a great dessert for a Harry Potter themed party or a Halloween shindig. Each version is quite sweet, but the perfect treat in moderation.
