1 pound Bob Evans Italian Roll Sausage
1 jar pasta sauce (26 oz)
1 can tomato sauce (15 oz)
1 package oven ready lasagna noodles (8 oz)
1 container ricotta cheese (15 oz)
1 teaspoon Italian seasoning
4 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese

Steps:

  • In a skillet, crumble and cook sausage over medium heat until brown. Remove from heat and stir in pasta sauce and tomato sauce. In small bowl, combine ricotta cheese and Italian seasoning. Preheat oven to 375F. Spread 1 cup sauce into bottom of a 9 x 13 inch baking dish. Top with 3 noodles. Cover noodles with 1/3 of ricotta cheese mixture, 1 cup of mozzarella and 1 cup sauce. Repeat layers two more times. Add last 3 noodles. Top lasagna with remaining sauce and with remaining mozzarella cheese. Sprinkle Parmesan over mozzarella. Cover and bake 45 to 50 minutes or until noodles are tender. Uncover and bake an additional 5 minutes to melt cheese.

1 jar 24-26 oz pasta sauce, or use quick tomato sauce (recipe in intro).
2 24 oz bags frozen large or jumbo cheese ravioli, partially thawed.
1 lb sweet Italian sausage, cooked, drained and crumbled.
1 16 oz package frozen, chopped spinach, thawed and squeezed dry.
8 oz shredded mozzarella
1/2 c grated parmesan

Steps:

  • Preheat the oven to 350. Spoon one third of pasta sauce into a 9 x 13 baking dish. Place half of ravioli on top of sauce in one layer, squeezing to fit as necessary. Sprinkle with all of cooked sausage, all of spinach, and half of mozzarella. Layer on remaining ravioli. Top with remaining sauce, remaining mozarella, and parmesan. Cover with foil and bake for 20 minutes. Uncover and bake until bubbling, 5-10 minutes more.

1 medium onion, chopped (1/2 cup)
1 clove garlic, crushed
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
1 teaspoon sugar
2 cups Muir Glen™ organic diced tomatoes (from 28-oz can), undrained
1 can (15 oz) Muir Glen™ organic tomato sauce
12 uncooked lasagna noodles (12 oz)
1 container (15 oz) ricotta cheese or small-curd cottage cheese (2 cups)
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh oregano leaves or 1 1/2 teaspoons dried oregano leaves
2 cups shredded mozzarella cheese (8 oz)
1/4 cup grated Parmesan cheese

Steps:

  • In 10-inch skillet, cook sausage, onion and garlic over medium heat, stirring occasionally, until sausage is no longer pink; drain.
  • Stir in 2 tablespoons of the parsley, the basil, sugar, tomatoes and tomato sauce. Heat to boiling, stirring occasionally. Reduce heat to low; simmer uncovered about 45 minutes or until slightly thickened.
  • Heat oven to 350°F. Cook and drain noodles as directed on package.
  • In medium bowl, mix ricotta cheese, 1/4 cup Parmesan cheese, remaining 1 tablespoon parsley and the oregano.
  • Spread 1 cup of the sauce mixture in ungreased 13x9-inch (3-quart) glass baking dish. Top with 4 noodles. Spread 1 cup of the cheese mixture over noodles; spread with 1 cup of the sauce mixture. Sprinkle with 2/3 cup of the mozzarella cheese. Repeat with 4 noodles, the remaining cheese mixture, 1 cup of the sauce mixture and 2/3 cup of the mozzarella cheese. Top with remaining noodles and sauce mixture. Sprinkle with remaining mozzarella cheese and 1/4 cup Parmesan cheese.
  • Cover; bake 30 minutes. Uncover; bake about 15 minutes longer or until hot and bubbly. Let stand 15 minutes before cutting.

1/4 cup chopped onion
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained

1 (30 ounce) package frozen cheese ravioli
1 (26 ounce) jar spaghetti sauce
1 (16 ounce) package pork sausage (in the roll shaped package, not links)
1 1/2 lbs ground beef
1/2 lb sandwich pepperoni (from grocery store deli)
2 medium onions, roughly chopped
2 teaspoons garlic powder
3 cups mozzarella cheese (1-1/2 bags pre-shredded)

Steps:

  • In a large frying pan, cook the sausage and ground beef together with the chopped onions until no longer pink and drain all grease.
  • Cook ravioli according to package directions (only for about 3 minutes or so I think) Drain and rinse in cold water.
  • In a 13x9 baking dish, spread a small amount of sauce (just enough to cover bottom) and layer enough ravioli to cover.
  • Stack the slices of pepperoni and cut them into narrow strips and spread half of it over the ravioli.
  • Now spread all the meat over that and pour the remaining sauce on top of it.
  • Sprinkle with 1-1/2 cups mozzerella cheese, then layer the remaining ravioli and cheese and sprinkle all of the garlic powder on it.
  • Spread the remaining half of pepperoni strips on top of cheese.
  • Cover with foil and bake at 375* for about 20-25 minutes.
  • Remove foil and bake uncovered another 10 minutes or until cheese and pepperoni are golden.
  • Serve with no yeast Beer Bread (recipe# 73440).

This is a recipe that I have tweeked up a bit from my mom's. It makes for a flavorful explosion. This recipe is set for a large family , dinner party or just really good eaters, but you can always warm left overs or cut it down to your needs. This is a multi-task recipe but well worth the work. The prep and cook time does not include cooling time.

1 lb ground beef
1 lb hot Italian sausage (ground)
1 lb mozzarella cheese (shredded)
1 lb ricotta cheese
1 tablespoon dried parsley flakes
2 lbs lasagna noodles
2 (28 ounce) jars spaghetti sauce (I use Ragu Old World Style "Traditional")

Steps:

  • Cook noodles until tender but not well done. Drain and rinse to help prevent from sticking together. Meanwhile, cook ground italian sausage in a large, deep skillet or pan until no longer pink. Rope or link style italian sausage is okay, just cut the casing off before cooking. Add the ground beef to the skillet. Cook untill all meat is starting to brown. Also meanwhile, combine the cheeses and parsley in a large bowl. Mix well.
  • Use a large baking pan (I use a 13" wide x 18" long x 3" deep) Spread a layer of sauce across the bottom of the pan, slightly more than just enough to cover the entire surface. Place a layer of noodles on top of the sauce, overlapping the edges just a bit. Spoon some of the cheese mixture (about 1/4) on top of the noodles (in even globs). Sprinkle with 1/4 of the meat mixture. Spoon some sauce on top. Then another layer noodle -- cheese -- meat -- sauce -- noodle -- cheese -- meat -- sauce -- noodle -- cheese -- meat -- sauce. Then top with another layer of noodle and sauce spread evenly on top. Remember to slightly overlap the noodles in each layer. (You may have some left over noodles and sauce which is great to spread a little sauce on a noodle and roll up as a snack for an impatient child.)
  • Cover tightly with foil. Cook in a preheated oven at 325 degrees on center rack for 1 hour. Let cool at least 20 minutes before cutting to help prevent the cheese from running. Serve with a side salad and garlic bread.

An awesome, basic recipe for good ol' lasagna. The sauce is perfect: hearty and flavorful. This recipe was originally from Epicurious.com, but I have edited it somewhat. This variation is quite a bit cheesier, and uses oven-ready, no-boil noodles. I'm not one to cut corners, but in fact, I think the no-boil variety taste just as good as regular noodles. Using them also eliminates one of the more tedious steps in lasagna-making.

1 cup chopped onion
3/4 cup grated carrot
2 tablespoons minced garlic

6 ounces hot Italian sausages, casings removed

1/4 cup tomato paste
1/4 cup chopped fresh basil
1 tablespoon golden brown sugar
1 tablespoon dried oregano
1 bay leaf
1/2 teaspoon dry crushed red pepper
15 oven-ready no-boil lasagna noodles (about 12 oz.)
2 (15 ounce) containers ricotta cheese
1 1/2 cups grated parmesan cheese
10 ounces frozen spinach, thawed, drained & squeezed dry
2 large eggs
2 lbs grated mozzarella cheese

Steps:

  • Heat the olive oil in a large, heavy saucepan over medium heat.
  • Add onion, carrots and garlic; sauté until softened, 10-12 minutes.
  • Add beef and sausages to pan; sauté until cooked through, breaking up meat as you stir, about 5 minutes.
  • Add remaining ingredients.
  • Cover and simmer until flavors blend and sauce measures about 5 cups, stirring occasionally, about 15 minutes.
  • Discard bay leaf.
  • Set aside and cool.
  • Combine ricotta and ¾ cup Parmesan cheese in medium bowl.
  • Mix in spinach.
  • Season to taste with salt and pepper.
  • Mix in eggs.
  • Preheat oven to 350°F
  • Spread ½ cup sauce over the bottom of a 13" by 9" glass baking dish.
  • Place 5 noodles over sauce, overlapping to fit.
  • Spread half of the ricotta-spinach mixture evenly over noodles.
  • Sprinkle 2 cups mozzarella cheese evenly over ricotta-spinach mixture.
  • Spoon 1½ cups sauce over cheese, spreading with spatula to cover (sauce will be thick).
  • Repeat layering with 5 noodles, remaining ricotta-spinach mixture, 2 cups mozzarella and 1½ cups sauce.
  • Arrange remaining 5 noodles over sauce.
  • Spread remaining sauce over noodles.
  • Sprinkle remaining mozzarella and Parmesan cheese evenly over the top of the lasagna.
  • Cover baking dish with aluminum foil.
  • Bake lasagna 40 minutes; uncover and bake until hot and bubbly, about 40 more minutes.
