Steps:
- Cut steak crosswise into 3 equal pieces.
- In a large bowl, whisk together teriyaki sauce, garlic, ginger, scallions, and lime. Add the steak and toss so that the meat is fully coated in the marinade. Cover the bowl with plastic wrap and set in refrigerator for at 30 minutes and up to 2 hours.
- After the steak has time to marinate, preheat grill (or grill pan) to medium-high and oil the grates.
- Once hot, remove the meat from the marinade and place on the grill. Add scallions to the grill and brush with oil. Season both with salt and pepper. Cook steak for about 3 minutes per side (depending on the thickness) for medium-rare.
- Remove steak from grill and transfer it to a cutting board. Cover with foil and let rest for 5-10 minutes. Slice the steak against the grain into thin strips.
- Garnish with sesame seeds.

- Combine the minced garlic, minced rosemary, Ooomami, horseradish spice blend and salt in a bowl.
- Mash the ingrediants with the tines of a fork until almost a paste.
- Pat the beef dry with a paper towel and place on a clean work surface.
- Rub the beef all over with the oil.
- Coat the beef with the garlic blend on all sides.
- Wrap the roast in plastic wrap and place in fridge overnight.
- When ready to grill, allow the beef to sit out for 1 hour.
- If you are using a grill-safe thermomteter insert it now.
- Using a chimney starter or other desired method, allow charcoal to become ashen before pouring it to one side of the grill to create an eoffset heat source.
- Place your diffuser plate, if your grill has one, and grilling grate on the grill and oil grate for smoking.
- Add hickory chunks or chips to the grill and allow to smoke.
- Place the roast over the cooler side of the grill and close the lid.
- Grill for 1 hour to 1 1/2 hours, or until the beef reaches an internal temperature of 125 degrees F, rotating once 180 degrees, halfway through cooking.
- Remove the roast from the grill and a cover with foil.
- Allow to rest for 20 minutes.
- When ready to serve, slice into even portions for as many servings as needed. Do not slice additional portions ahead of time.
- Sprinkle with a little salt and serve hot.

- Score surface of steak, making shallow diagonal cuts. In a bowl, combine the broth, pineapple juice, soy sauce, lemon juice, honey and ginger. , Pour 1 cup marinade into a shallow bowl large; add steak and turn to coat. CHARCOAL-GRILLED BEEF TERIYAKI
Steps:
- 1. FOR THE STEAK: Cut steak with grain into 2 to 3 even pieces. (If total length of steak is 12 inches or less, cut into 2 pieces. If over 12 inches, cut into 3 pieces.) Holding knife at 45-degree angle, slice each piece against grain into 4 to 5 slices about ½ inch thick. Combine remaining ingredients, except scallion greens, in gallon-sized bag and toss to combine. Place meat in bag, press out as much air as possible, and seal. Refrigerate 30 minutes or up to 1 hour, flipping bag every 15 minutes to ensure that meat marinates evenly. 2. Build modified two-level fire by arranging all coals over half of grill, leaving other half empty. Position cooking grate over coals, cover grill, and heat about 5 minutes; scrape grate clean with grill brush. Dip wad of paper towels in oil; holding wad with tongs, wipe cooking grate. Grill is ready when side with coals is medium-hot (you can hold your hand 5 inches above grate for 3 to 4 seconds). 3. FOR THE SAUCE: While grill is heating, whisk sauce ingredients together in small saucepan until combined. Bring sauce to boil over medium-high heat, stirring occasionally. Reduce heat to medium-low and simmer, stirring occasionally, until sauce is syrupy and reduced to 1 cup, 12 to 15 minutes. Transfer ¾ cup sauce to small bowl and set aside to serve with cooked meat. 4. Remove meat from marinade and pat dry. Grill, uncovered, until well seared and dark brown on first side, 3 to 4 minutes. Using tongs, flip steak and grill until second side is well seared and dark brown, 3 to 4 minutes. Brush top of meat with 2 tablespoons sauce; flip and cook 30 seconds. Brush meat with remaining 2 tablespoons sauce; flip and cook 30 seconds longer. 5. Transfer meat to serving platter and let rest 5 minutes. Sprinkle with scallion greens and serve, passing reserved sauce separately.

Steps:
- Combine oil, garlic, teriyaki marinade and liquid smoke in sealable plastic bag; mix well.
- Add the roast.
- Squeeze air from bag, allowing marinade to cover the roast; seal.
- Marinate in refrigerator for 6-8 hours, turning occasionally; drain.
- Place roast on grill rack over medium-hot coals.
- Grill with lid down for 45 minutes.
- Turn the roast over and grill for another 30 minutes or until done to taste.
- Cut into 1/2 to 3/4 inch slices.
- Serve immediately.
