MISO CARAMEL CRACKER COOKIES

Miso Caramel Cracker Cookies image

Provided by Molly Yeh

Categories     dessert

Time 1h30m

Yield about 36

Number Of Ingredients 7

11 ounces store-bought caramels
2 tablespoons heavy cream
1 1/2 tablespoons white miso paste
About 2 1/2 sleeves butter crackers, such as Ritz (about 72 crackers)
8 ounces chopped dark chocolate or dark chocolate chips
Flaky salt, such as Maldon, for topping
Sprinkles, for topping

Steps:

  • In a medium pot, combine the caramels and heavy cream. Heat over medium low, stirring, until the caramels are melted and the mixture is smooth, about 7 minutes. Stir in the miso and remove from the heat. Let cool for a few minutes, so the caramel can thicken slightly.
  • Arrange half of the crackers salty-side down on a baking sheet lined with parchment and dollop on about 1 teaspoon caramel per cracker (or as much as will fit without spilling over the edges...but it's ok if it spills off a little). Top each with another cracker salty-side up. Refrigerate for 30 minutes.
  • In a double boiler or a microwave in 30-second increments, melt the chocolate, stirring until smooth. Let cool slightly.
  • Dip the crackers halfway into the chocolate and place back on the baking sheet. Sprinkle with flaky salt and sprinkles. Let set in the refrigerator or at room temperature until the chocolate is firm, about 30 minutes.

ROASTED SALMON WITH MISO RICE AND GINGER-SCALLION VINAIGRETTE

Roasted Salmon With Miso Rice and Ginger-Scallion Vinaigrette image

This simple weeknight meal makes great use of pantry staples to create complex flavors with minimal work. Miso is often used to flavor soups or sauces, and here, it is added to raw rice before cooking, which results in a delightfully sticky, savory steamed rice. Fragrant and nutty basmati is called for, but any long-grain rice will work. Shredded cabbage brings freshness and crunch to the finished dish, but use whatever crispy vegetable you have on hand: shredded brussels sprouts, carrots, snap peas, radishes and iceberg lettuce are all great options. For a heftier meal, add some canned chickpeas, white beans or black beans. To finish, the vibrant tang of the bright ginger-scallion vinaigrette balances the richness of the roasted salmon.

Time 30m

Yield 4 servings

Number Of Ingredients 11

1/4 cup white or sweet miso
1 1/2 cups basmati or other long-grain rice
4 (6-ounce) skin-on salmon fillets
2 tablespoons extra-virgin olive oil
Kosher salt and black pepper
1/4 cup low-sodium soy sauce
1/4 cup chopped scallions, plus more for garnish
1 tablespoon distilled white vinegar or unseasoned rice vinegar
1 tablespoon minced fresh ginger
4 cups finely shredded cabbage, such as green, Napa or savoy (about 8 ounces)
Roasted sesame oil, for serving

Steps:

  • Heat oven to 425 degrees. In a medium saucepan, whisk miso with 2 1/4 cups water until dissolved. Stir in rice and bring to a boil. Cover, reduce heat to low and cook until all of the liquid is absorbed and rice is tender, about 15 minutes. Remove from heat and let stand for 5 minutes. Fluff rice with a fork (it will be a little sticky).
  • On a rimmed baking sheet, rub salmon all over with olive oil, season with salt and pepper and arrange skin-side up. Roast until fish is just opaque and cooked to medium, 8 to 10 minutes.
  • In a small bowl, combine soy sauce, scallions, vinegar and ginger, and season with salt and pepper.
  • Divide miso rice and cabbage among bowls. Top with salmon, ginger-scallion vinaigrette and sesame oil.

BROWN RICE WITH MISO (RICE COOKER)

Brown Rice With Miso (Rice Cooker) image

From The Ultimate Rice Cooker Cookbook. You may use short, medium, or long grain brown rice in this dish. The authors call for a 6 cup rice cooker, but I've had no problem using a 3 cup model. Cook time includes resting time after the cycle finishes.

Provided by IngridH

Categories     Brown Rice

Time 1h22m

Yield 3-4 serving(s)

Number Of Ingredients 5

1 1/2 tablespoons miso (white or yellow)
2 1/4 cups water or 2 1/4 cups vegetable stock
1 inch fresh gingerroot, peeled
2 teaspoons lemon juice
1 cup brown rice

Steps:

  • Dissolve the miso in 1/4 cup of the water.
  • Combine the dissolved miso and remaining ingredients in the rice cooker bowl.
  • Set the machine for the regular or brown rice (if you have one) cycle.
  • When the machine switches to 'keep warm', set a timer for 15 minutes.
  • After 15 minutes, fluff the rice with the plastic paddle or a wooden spoon.
  • Discard the ginger and serve, or leave on the 'keep warm' setting for up to 2 hours.
