1/2 medium yellow onion (medium diced)
1 egg
1/2 cup breadcrumbs (italian seasoned)
1/4 cup milk
1-1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon worcestershire sauce

Steps:

  • Pre-heat the oven to 350F.
  • Combine all ingredients meatloaf ingredients except the glaze ingredients into a large bowl.
  • In a separate bowl combine all glaze ingredients.
  • Pour the glaze over the meatloaf and cover with tinfoil. Bake in a 9x5 cast iron loaf pan for 45 minutes or until internal temperature reaches 155-160F.
  • Allow the meatloaf to rest for 5-10 minutes before slicing. Serve with parsley or shredded cheese.

1/3 cup breadcrumbs
1/3 cup milk
1/3 cup chopped fresh parsley
1 large egg
3 tablespoons Worcestershire sauce
1 small onion, finely minced
1 teaspoon chili powder
2 cloves garlic, grated or finely minced
1 1/2 pounds meatloaf mix (ground beef, pork and/or veal)
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil
1/2 cup ketchup
1 to 2 tablespoons packed light brown sugar
1 tablespoon apple cider vinegar

Steps:

  • Mix the breadcrumbs, milk, parsley, egg, Worcestershire sauce, onion, chili powder and garlic in a large bowl. Add the meat, season with salt and pepper and mix with your hands until combined. Shape into six 3-to-4-inch oval loaves.
  • Heat the vegetable oil in a large nonstick skillet over high heat. Add the loaves and brown about 3 minutes per side.
  • Whisk the ketchup, sugar and vinegar in a bowl and brush a few tablespoonfuls over the meat. Add 1/2 cup water to the skillet, cover and simmer over low heat until cooked through, about 15 minutes.
  • Transfer the loaves to a plate. Add the remaining ketchup mixture to the skillet and cook over high heat, stirring, until thick, 3 to 5 minutes. Serve 4 meatloaves with the hot glaze, reserving 2 for quesadillas.

1 1/2 cups Old Fashioned Oats
1 cup Ketchup
2 eggs
1 medium onion, finely chopped
2 teaspoons salt
1 teaspoon pepper
2 tablespoons Worcestershire Sauce Topping
1/3 cup ketchup
2 tablespoons brown sugar

Steps:

  • 1. Preheat oven to 350 degrees. 2. In a large bowl whisk the eggs. Add the onion, salt, pepper, 1 cup ketchup and the Worcestershire sauce to the eggs stir until blended. Add the ground beef and the oats mix well using a wooden spoon or your hands ( I used my hands). 3. Dump mixture into a 10in. cast iron skillet, press to shape. If you don't have a cast iron skillet, you can follow the same instructions for a bread pan. Bake for one hour, remove from oven, spread on the topping and bake for 25 more minutes or until the center reaches 160 degrees.

Rach's skillet meatloaf is glazed with a spicy layer of Korean ketchup and served with a hearty helping of rainbow chard.

2 tablespoons neutral oil
such as safflower or canola
2 pounds ground beef (80%) or mix of beef and pork
Salt and pepper
1 onion
grated or very finely chopped
4 cloves garlic
grated or finely chopped
2 inches ginger
grated or minced
About 3 tablespoons soy sauce or smoked soy sauce
About 2 tablespoons Worcestershire sauce
2 eggs
1-1 ½ cups old-fashioned oats or panko breadcrumbs
½ cup ketchup
3 tablespoons to ¼ cup gochujang (Korean chili paste)
regular or extra-spicy
2 teaspoons toasted sesame oil
Chopped scallions or chives
to serve
Salt
1 ½-2 pounds rainbow chard
3 tablespoons tamari or soy sauce
1 lime
2 tablespoons toasted sesame oil
1 tablespoon superfine sugar
2 cloves garlic
grated
minced or pasted
¼ cup toasted sesame seeds
1 bunch scallions
chopped on a bias

Steps:

  • For the meatloaf, heat oven to 375˚F and brush or rub a 10-inch cast-iron skillet with oil
  • Combine ground meat with salt, pepper, onion, garlic, ginger (Rach uses her multi-grater to grate the onion, garlic and ginger directly into the bowl), soy, Worcestershire and eggs
  • Begin with 1 cup of oats or panko added to the mixture, and add more if mixture is too wet
  • Fill pan and form an even, smooth top for meatloaf
  • Bake until meatloaf registers 140˚F on a thermometer, about 25 minutes
  • Pull from oven, add sauce and bake 5-10 minutes more or to 160˚F on thermometer
  • For the sauce, in a small bowl, combine ketchup, gochujang and sesame oil
  • Top the prepared meatloaf with scallions or chives to serve
  • Cut in wedges and serve directly from the pan
  • For the salad, heat a large pot of water to boil, and season water with salt
  • Stem chard and boil the stems 3 minutes, remove, cold shock, dry and chop into 1 inch pieces
  • Add greens to water, 30 seconds, then cold shock in ice water, dry and coarsely chop or shred into 1 ½-inch-wide ribbons
  • Whisk up soy sauce, juice of 1 lime, sesame oil, sugar and garlic
  • Add the greens, sesame seeds and scallions, then toss and serve

2 (4.5 ounce) packages noodle soup mix (such as Lipton® Soup Secrets®)

1 yellow onion, chopped
½ cup ketchup
½ (4 ounce) packet saltine crackers, crumbled
2 tablespoons Worcestershire sauce, divided
1 tablespoon barbeque sauce
2 teaspoons steak sauce (such as A1®)

Steps:

  • Place a large cast iron skillet in the oven. Preheat oven to 375 degrees F (190 degrees C).
  • Combine ground beef, Italian bread crumbs, noodle soup mix, 1/2 the tomato sauce, eggs, onion, ketchup, cracker crumbs, 1 tablespoon Worcestershire sauce, barbeque sauce, steak sauce, salt, 1 1/2 teaspoons black pepper, 1 teaspoon garlic powder, and 1/2 teaspoon onion powder in a large bowl; mix well.
  • Mix remaining tomato sauce, 1 tablespoon Worcestershire sauce, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and cayenne pepper in a small bowl until topping is smooth.
  • Remove skillet from the oven. Place ground beef mixture in skillet, smoothing the top. Spread topping over beef.
  • Bake in the preheated oven until beef is mostly cooked through, about 1 hour 30 minutes. Remove from oven and drain off grease. Return to the oven and continue cooking until meatloaf juices run clear and an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 1 hour more.
  • Remove meatloaf from oven and allow to cool for 15 minutes before serving.

FARMHOUSE STYLE CAST IRON SKILLET MEATLOAF

I like to incorporate Italian sausage into the ground beef or buffalo that I use in this recipe. The combination results in a wonderfully seasoned, delicious meatloaf. If you like more spice, you could certainly use spicy Italian sausage with equally delicious results. I often double this recipe and use my large 12 inch cast iron skillet to bake a larger meatloaf. Then I am able to look forward to serving leftovers the next night. Like most savory dishes, this meatloaf is even more delicious the second night!

1 Tablespoon lard or oil
1 large onion (, finely diced)
3 garlic cloves (, minced)
1 teaspoon dried thyme
1 teaspoon dried rosemary
16 ounces ground beef or buffalo
8 ounces Italian sausage (, removed from the casing)
1 Tablespoon tomato paste
1/3 cup old fashioned oats
2 large eggs
2 ounces mozzarella cheese (, shredded)
¼ cup ketchup
1 Tablespoon soy sauce
1 Tablespoon brown sugar

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Warm an 8-9 inch cast iron skillet over medium heat. Add the lard, swirling the pan to coat the bottom surface of the skillet. Add the onions and cook until translucent. Add the garlic, thyme, and rosemary, stirring for one minute to prevent the garlic from burning. Remove the pan from the heat.
  • In a large bowl, combine the ground beef or buffalo with the Italian sausage that has been removed from its casing. Add the tomato paste, sautéed onion mixture, oats, and eggs. Mix to fully combine the ingredients.
  • Transfer about half of the mixture to the cast iron skillet, pressing to evenly cover the bottom of the skillet. Sprinkle the shredded mozzarella cheese over the top before covering with the remaining ground meat mixture. Press the meat mixture to the edges of the skillet. The mixture should reach the edges of the skillet and be an even thickness to ensure that it will bake evenly.
  • In a small bowl, combine the ketchup, soy sauce, and brown sugar. Spread this mixture over the top of the ground meat. Transfer the skillet to the warm oven and bake for 50 to 60 minutes. When the meatloaf is finished, it will begin to pull away from the edges of the pan and register at 160 degrees on a meat thermometer.
  • Remove the meatloaf from the oven and allow to cool for five minutes before slicing into wedges and serving. We love to enjoy this meatloaf with Colcannon Style Mashed Potatoes. The combination of meatloaf, potatoes, and cabbage is a favorite at our farmhouse table.

My Grandmother's meatloaf recipe is moist and tender but not too loose for slicing leftover meatloaf sandwiches and she cooked hers in a cast iron skillet.

2 lbs. hamburger 85/15
1 cup saltine cracker crumbs (oatmeal or bread crumbs)
1/2 cup onion, chopped
1/2 cup bell pepper chopped (my addition)
2 eggs
3/4-1 cup evaporated milk (whole milk or half and half)
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon ground coriander (my addition)
2 cups of water
1 cup ketchup
1 cup (maybe more) juices in the skillet from the meatloaf
2 tablespoons cornstarch
1 (8 oz.) can tomato sauce
1 1/2 cups water

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9 or 10-inch cast iron skillet with a nonstick cooking spray; set aside.
  • In a large bowl, combine all the above ingredients, except for the water and ketchup, and mix until well blended.
  • Be careful not to handle the meat mixture too much. Shape into a round bun and place in the cast iron skillet. Pour water a third of the way up in the skillet.
  • Bake in the oven for 1 hour or until meatloaf is done. Spoon ketchup over the meatloaf and return to the oven for another 15 minutes. If the liquid has cooked down too much to make gravy add another 1/2 cup of water.
  • Heat reserved juices from the skillet. Using a wire whisk, blend in cornstarch, stirring constantly. When all is incorporated, tomato sauce and 1 cup of water at a time.
  • Stir the water in until thick and bubbly. If the gravy is too thick, add more water, 1/2 cup at a time.
  • Taste the gravy and season to your taste. I usually add the same seasonings in the meatloaf, salt, black pepper, garlic powder, and coriander.
  • Serve over meatloaf.

1 c quick oats (preferably Bob's Red Mill Gluten-Free Quick-Cooking Rolled Oats)
¼ c ketchup (preferably Primal Kitchen Organic Unsweetened Ketchup)
1 tsp garlic powder
1 tsp onion powder
1 tsp kosher salt
½ tsp freshly ground black pepper
¼ c ketchup (preferably Primal Kitchen Organic Unsweetened Ketchup)
1 Tbsp Dijon mustard

Steps:

  • Place an 8" cast-iron skillet in oven, and preheat oven to 350℉.
  • Place all ingredients in a large bowl and mix to combine. Your hands will work best!
  • Remove cast-iron skillet from oven and carefully place meat mixture into skillet. Press down so it fills the skillet evenly. Bake for 15 minutes.

  • Beat eggs in a large mixing bowl.

Steps:

  • Preheat oven to 375 degrees F.
  • Sauté onion, green pepper, and garlic in pan. When browned, set aside and let cool.

1 c bread crumbs
1/2 c chopped onion
1/2 c chopped red pepper
2 eggs
1 c milk
2 tsp salt
1 tsp garlic powder
favorite bbq sauce or catsup

Steps:

  • 1. In large bowl combine all ingredients. Form into ball and place in skillet, leaving 1/4 inch of open space all around perimeter of skillet. Place in oven and pour water in skillet, enough to come halfway up the pan. Cook for about an hour and a half, or until meat is 170 degrees. Spread bbq sauce (ketchup if you dont like sauce) and brush it on, put back in oven for 15 minutes. Try not to burn your lips on the pan while you are licking off the stuff that got stuck, or do what I did, wait for it to cool and attack it with a spoon.
