1/3 cup soft herbed goat cheese
16 Medjool dates, pitted
16 large basil leaves
4 wide, thin slices prosciutto di Parma, each cut into 4 long strips
16 toothpicks, soaked in water 10 minutes

Steps:

  • Heat broiler to low. Spoon 1 teaspoon cheese into each date; wrap with a basil leaf, then a prosciutto strip. Secure with a toothpick. Broil until cheese bubbles, about 3 minutes. Serve warm.

10 ripe figs (washed with stems trimmed)
½ cup goat cheese (chèvre)
5 prosciutto slices (sliced in half lengthwise)
1 tbsp fresh rosemary (chopped)
Flaky finishing salt
Black pepper
Honey

Steps:

  • Heat the oven to 375° F. Line a baking sheet with parchment paper.
  • Quarter the top of the figs, taking the incisions a quarter of the way down the fruit to make an opening for the cheese.
  • Stuff each fig with 3 teaspoons of goat cheese. Then wrap each fig with a slice of prosciutto and place figs on the baking sheet.
  • Top each fig with chopped rosemary, black pepper, and flaky finishing salt. Place the sheet in the oven and bake for 17-20 minutes.
  • Remove the figs from the oven and plate on a cheese board or serving platter. Drizzle with honey and serve warm.

8 slices bacon (I find that thin bacon works better)
16 dates
4 ounces goat cheese
toothpicks

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Slice the dates lengthwise on one side to create an opening. Remove the pit.
  • Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.
  • Cut the bacon slices in half. Wrap each date with a slice of bacon and secure with a toothpick.
  • Arrange evenly on a baking sheet with raised edges (otherwise grease will get everywhere) and bake for 10 minutes. Remove the dates and use the toothpick to turn each one so it's laying on its side. Bake for another 5-8 minutes, until browned to your liking, and turn the dates to the other side and repeat. Remove from the oven, place on a paper towel lined plate, and let stand for 5 minutes before serving.

Goat Cheese Stuffed Dates Wrapped in prosciutto and fresh basil are easy to make and VERY yummy. Serve these healthy appetizers either hot or cold.

24 Medjool Dates (OR deglets)
Prosciutto
1/2 Cup goat cheese (use soft spreadable variety-herbed if you like)
24 leaves Basil-fresh
1/4 Cup Balsamic reduction sauce (to taste)

Steps:

  • SOAK 24 toothpicks in water
  • Prepare baking sheet with a oil spray or lay a silicone baking mat on it.
  • Cut a lengthwise slice in the center top of each date. Make sure it is big enough to hold the cheese but don't slice all the way through the date.
  • Slice prosciutto into 24 pieces about 2 1/2 inches long or however long you prefer to securely wrap the stuffed dates over the basil leaf.
  • Lay out the dates, prosciutto, goat cheese and basil leaves on a board within easy reach of your baking sheet.
  • Scoop up a teaspoon of soft goat cheese and push it into your sliced date.
  • Wrap a leaf of basil around the date
  • Wrap a piece of prosciutto around the basil wrapped stuffed date.
  • Pierce the date through with a soaked toothpick.
  • Lay the finished date on your baking sheet.
  • Repeat until all dates are stuffed and wrapped.
  • Broil for 3 to 5 minutes until crispy.
  • Remove from oven and set on serving tray. Serve hot!

6 ounces sharp blue cheese, such as Bleu d'Auvergne
1/4 pound thinly sliced prosciutto (8 to 10 large slices)

Steps:

  • Preheat the oven to 400 degrees F.
  • With a small paring knife, slit each date lengthwise and spread open just enough to remove the pit while leaving the date intact. Fill the cavity of each date with a small piece of blue cheese and fold the date over the cheese, pressing it back into its original shape.
  • Cut a strip of prosciutto as wide as each date is long and wrap it around twice, enclosing the date almost completely. Place the dates on a sheet pan and bake for about 8 minutes, until the prosciutto is browned and the cheese starts to melt.
