RED CABBAGE AND CARROT SLAW RECIPE
Tossed with an incredible Apple Cider Vinaigrette, this tangy slaw is light, crunchy, refreshing, and serves perfectly as a side dish or even an appetizer.

Steps:
- Place shredded cabbage, carrots and green onions in a large salad bowl. Set aside.
- In a mixing bowl, whisk together the dijon mustard, garlic, oil, apple cider vinegar, lemon juice, honey, vanilla, chili powder, salt and pepper; whisk until well combined.
- Pour dressing over the cabbage mixture and toss to combine.
- Taste for seasonings and adjust accordingly.
- Place in the refrigerator for 15 minutes.
- Remove from fridge and garnish with chopped parsley.
- Serve.

CRUNCHY RED CABBAGE SLAW
Make this crunchy coleslaw into a homely supper with roast chicken and mustardy mayo, or glam it up Asian-style with lime, herbs and juicy grilled chicken

- Using a large knife, shred the cabbage and place in a large bowl with the carrot, apple and spring onions.
- Whisk together the mayonnaise, vinegar and oil. Season then toss with the salad. Serve or see our suggestions, below right.
- To make with roast chicken, snip the stalks from a punnet of mustard cress and stir half into the coleslaw with the wholegrain mustard. Divide between plates then scatter the roast chicken (leftovers or shop bought) on top. Sprinkle with the remaining cress and serve.
- To make with marinated chicken, heat the grill to high. Tear the leaves from a large bunch basil and scatter half of them into the coleslaw. Chop the rest and mix with a pinch ground fenugreek or coriander, zest and juice of the lime, olive oil and salt and pepper to taste. Rub the chicken breasts in the lime mix (leave to marinate for 10 mins if time), then grill for 6 mins on each side until golden and cooked through. Thickly slice and serve on top of the coleslaw.

CARROT AND RED CABBAGE SLAW WITH FETA AND DILL

- Shred red cabbage and carrots either in a food processor using the shredder attachment or with a grater. You can also shred the cabbage easily with a sharp knife. To make it super easy, buy the carrots pre-shredded. Put in large bowl. In a food processor or belnder blend dill, lemon juice, olive oil, and salt and pepper to taste. Process until dill is chopped and dressing is emulsified. You may need to add more lemon juice or olive oil depending on your taste. Add dressing the carrot-cabbage mixture, making sure to get all the dill in, and toss until well coated. Crumble feta cheese in salad and gently toss again to incorporate feta. Do not over toss once cheese is added.
RED CABBAGE COLESLAW
This is an awesome coleslaw that I make occasionally, because it is tart, crunchy, and flavorful. Unlike traditional coleslaw, my recipe is not sweet at all, but is sour because of the acidity from the lemon juice and pickles. The crunchy vegetables and creamy dressing makes it refreshing as a side dish for a barbeque or a quick and easy salad to accompany a weekday dinner. Enjoy!

RED CABBAGE, FETA & OLIVE SALAD
I had to make this salad two days in a row. When I got home from work yesterday, my husband asked me where I'd hidden the leftovers from the night before because he wanted them for lunch. Well, I'd taken them with me for MY lunch -- so I made another batch last night to go with our chili. The night before that I'd served it with shredded chicken Bobbie-Q (see my recipes) over mashed potatoes. There was a bit left over last night -- and I made sure to leave it for my husband. I brought peanut butter & a cucumber for my lunch instead. *sigh* Anyway, if you do have any of this salad left, use it by the next day.

- In a sealed jelly jar, combine the olive oil, red wine vinegar, honey, dijon, and salt. Seal and shake until well combined. Line the carrots up on the pan and toss them with half the olive oil mixture. Roast for 30-40 minutes, flipping half way through. If your carrots are small and thin it'll be on the shorter side, fatter carrots will take longer.
