- Preheat an oven to 350 degrees F (175 degrees C). Mix the spelt flour, carob powder, salt, and baking powder together in a large bowl.
- Stir the honey, brewed tea, cream, vegetable oil, and eggs together in a separate bowl. Add the honey mixture into the flour mixture, and stir to thoroughly combine; pour into an 8x11-inch baking dish.
- Bake in the preheated oven until a toothpick inserted into the center comes out gummy rather than wet, about 45 minutes. Allow to cool before refrigerating overnight for best results.

- Preheat oven to 350°F.
- In a large bowl, mix together all of your flours, baking powder, salt, and carob powder.
- Add in the honey, juice, oil and vanilla and stir just until combined. Don't worry if there are some lumps - it's okay!
- Spread into a greased 8*8 inch pan. Bake for 25-30 minutes, or until a toothpick or knife inserted in the middle comes out clean.

HONEY AND CAROB BROWNIES
This recipe is delicious. I love it because it uses carob instead of chocolate. Carob is similiar to cocoa, except it requires about half the sugar to get it to be sweet like chocolate. It was sent to me by Holy Food Imports (www.holyfoodimports.com) which is my favorite food company, after purchasing their products, with permission to share!

- Blend together melted butter, honey & carob spread in a bowl. Add eggs and vanilla; mix well.
- Add a sifted mixture of whole wheat flour, baking powder, and salt; mix well. Stir in chopped walnuts. Pour into a greased 8-inch baking dish.
- Bake for 40 minutes. Cool on a wire rack before cutting into squares.

These are dense, moist, and deeply carob-y. I like to serve them chilled very cold with whipped cream. They are more fudgelike than cakelike. This recipe comes from my sister who served them to me after my son was born. I believe she got this from the "Deaf County Country Cookbook."

- Combine butter and egg and beat well. Add vanilla, orange peel, lemon peel, dates and carob powder and combine thoroughly.
- In a separate bowl, stir together oats, flour, wheat germ, baking powder and three spices. Combine the two mixes, add milk and beat until blended.

These brownies are almost fat free, low sugar and provide around 100 calories each... They have a much lighter taste than regular brownies and admittedly lack some richness but they are still delicious, especially with a tiny bit of chocolate spread to finish them off!

- Preheat the oven to 190degrees (fan) Mix together the carob powder, flour, sugar and baking powder in a large bowl. In a separate bowl, mix the water, milk, eggs, oil and mashed bananas. Pour the wet into the dry ingredients with the vanilla extract and mix thoroughly.
- Now add the chopped walnuts if using them. You could also add dark chocolate chips if you wish. At this point, if the mixture is too thick, add a little extra milk until it is looks thick but stir-able.
- Transfer the mix to a greased, non-stick brownies tray (could use baking parchment but I didn't seem to need it).
- Cook in the preheated oven for around 20-30 minutes - the brownies will feel firm to the touch, not wobbly like normal brownies.
