ASIAN RICE SALAD WITH SHRIMP

2 cloves garlic, minced
1 2-inch piece ginger, peeled and grated
3 tablespoons toasted sesame oil
1/4 cup rice vinegar
2 tablespoons soy sauce
Pinch of sugar
3/4 pound large shrimp, peeled, deveined and halved lengthwise
1 large carrot, shredded
2 stalks celery, thinly sliced
2 cups snow peas, thinly sliced
1 tablespoon vegetable oil
2 cups cooked white or brown rice
1 bunch scallions, thinly sliced
1/4 head iceberg lettuce, shredded
1 cup mung bean sprouts
1/2 cup chow mein noodles and/or chopped peanuts

Steps:

  • Whisk the garlic, ginger, sesame oil, vinegar, soy sauce and sugar in a large bowl. Transfer 2 tablespoons of the dressing to a medium bowl, add the shrimp and toss. Add the carrot, celery and snow peas to the remaining dressing and toss.
  • Heat a large skillet over high heat and add 2 teaspoons vegetable oil. Add the shrimp and stir-fry until they turn pink, 3 to 4 minutes, then transfer to the bowl with the vegetables. Add 3 to 4 tablespoons water to the skillet and scrape up the browned bits with a wooden spoon, then add the liquid to the bowl with the shrimp. Let the skillet reheat, then add the remaining 1 teaspoon vegetable oil and stir-fry the rice until toasted, about 2 minutes. Remove from the heat and let cool.
  • Add the rice and scallions to the shrimp-vegetable mixture and toss. Divide among bowls and top with the lettuce, sprouts, chow mein noodles and/or peanuts.

5 tablespoons olive oil, divided
1 (8 ounce) package sliced fresh mushrooms
1 onion, chopped
2 cloves garlic, chopped
1 pound large shrimp, peeled and deveined
1 ¼ teaspoons salt, divided
4 skinless, boneless chicken breast halves - cut into 1 inch cubes
3 tablespoons all-purpose flour, divided
¼ cup dry white wine
1 ¼ cups water
ground black pepper to taste

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium high heat. Saute mushrooms until golden; remove from skillet with a slotted spoon and set aside.
  • Add another 2 tablespoons oil to skillet. Saute onion, garlic and shrimp until opaque. Remove from skillet and add to mushrooms.
  • In a shallow dish or bowl mix 2 tablespoons flour with 3/4 teaspoon salt. Dredge chicken in flour to coat. Add 1 tablespoon oil to skillet and saute chicken in oil for 3 to 5 minutes or until no longer pink. Add chicken to mushroom/shrimp mixture.
  • Heat 1 tablespoon oil in skillet and stir in 1 tablespoon flour. Cook about 30 seconds, stirring constantly, until brown. Stir in wine, 1/2 teaspoon salt and water. Boil for 1 minute.
  • Reduce heat to medium low and return shrimp and chicken mixture to skillet. Simmer for about 10 minutes, season with pepper and serve.

Basmati Rice - 200 gm or 1 cup (as per US RATIO). (rinsed twice and soaked for 20 mins and boiled )
Chicken boneless-1/2cup
Shrimp - 6 to 8 pc
Olive oil - 2 tbsp
Honey - 1 tbsp
Ginger - crushed - 1 tsp
Red chilly flakes - 2 tsp
Soya sauce - 1Tbsp
Vinegar - 1 tbsp.
Pepper - To taste
Salt - To taste.
Spring onions - 1/4 cup shredded
Iceberg lettuce - 1/2 cup shredded or torn.
Peanuts - 1/3 cup

Steps:

  • Whisk together the olive oil, soya sauce, honey, red chilly flakes crushed ginger, vinegar, salt and pepper. Add half this mixture to the shrimp and chicken and keep aside. The other half is the dressing for the salad.
  • In a pan, over heat, stir fry the chicken and shrimp with a little oil till browned. Add the shredded spring onions and cook for another 2-3 mins.
  • Add the boiled Basmati Rice and continue to saute on low heat for another 2 mins. Keep aside.
  • Take the Boiled Basmati Rice, the chicken and shrimp mixture and serve in bowls
  • Add some dressing over this and top with lettuce and crushed peanuts.

1/4 cup neutral oil, such as canola
1 chicken breast, cut into small pieces
1 medium-sized onion, diced small
1 pound raw shrimp, peeled and deveined
1 cup peas, fresh or frozen
2 carrots, peeled and diced small (about pea sized)
2 tablespoons mirin (can substitute 1 tablespoon sugar)
1 1/2 teaspoons kosher salt, or to taste
1 tablespoon toasted sesame oil
1 large handful of cilantro, leaves and tender stems, roughly chopped
3 scallions, dark and light green parts, sliced thin

Steps:

  • Using a large skillet or wok, heat the oil over medium-high heat until shimmering.
  • Add the onion, chicken, and a large pinch of the salt. Cook until the chicken is a little more than halfway done. Add the shrimp, peas, carrots, and another pinch of salt. Continue to cook until everything has cooked and any excess moisture has evaporated. Stir frequently. If things start to stick, add another tablespoon of oil.
  • Add the rice, the rest of the salt, and mirin or sugar. Cook, stirring constantly, until heated through. Add the sesame oil. Stir, and adjust seasoning.

8 ounces baby shrimp
1 cup white rice
2 cups water
2 teaspoons chicken bouillon
1 cup flour

Steps:

  • Cook rice in water with chicken bouillon for 20 minutes or until done. Put on the side.
  • Cut chicken breast into thumb size pieces.
  • Put flour and spices into small bowl. You can change amounts or types of spices to your taste. Mix the flour and spices together.
  • Heat oil in skillet.
  • Put chicken pieces in flour and dredge them till covered. Put into heated oil in skillet.
  • Cook chicken till no longer pink in color.
  • Add frozen salad shrimp. These should be the ones that come 100 to a pound. You can add more if you really like shrimp.
  • Add soy sauce or Braggs Liquid Aminos to the skillet. The flour, water from the shrimp and soy sauce form a thin sauce.
  • Cook down till shrimp are hot and sauce is thin.
  • Put rice on plate. Add chicken and shrimp mixture. Mix so the sauce is stirred well into the rice.

12 ounces Cajun/andouille sausage sliced ½-inch thick ((pork or chicken))
3 tablespoons olive oil, divided
1 1/2 cups long grain basmati rice, thoroughly rinsed and drained
1/2 onion, chopped
1 red bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
2 3/4 cups low sodium chicken broth
1 15 oz. can fire roasted diced tomatoes, not drained
1 tablespoon tomato paste
1 tablespoon lemon juice
Green onions or parsley for garnish ((optional))
1 1/2 tsp EACH smoked paprika, garlic powder, onion powder
1/2 tsp EACH dried oregano, dried thyme, pepper
1/4 teaspoon salt
¼-1/2 teaspoon cayenne pepper

Steps:

  • Mix Cajun seasonings together. Add 1 ½ tablespoons to the raw shrimp in a bowl and stir to coat; set aside.
  • Heat 1 tablespoon oil in a 3.5 qt (or larger) braiser or Dutch oven over medium-high heat. Add sausage and brown on each side, about 5 minutes. Remove sausage to a plate using a slotted spoon; set aside.
  • Add 1 tablespoon oil to the drippings in the skillet and heat over medium-high heat. Add the shrimp in an even layer and cook just until opaque, about 2-3 minutes per side. Remove shrimp to a plate using tongs. You can chop the tails off of the shrimp once cool enough to handle if desired.
  • Heat 1 tablespoon oil in the now empty skillet over medium-high heat. Add rice, onions and all remaining Cajun seasoning and sauté for 3 minutes. Add the bell pepper and celery and sauté 3 additional minutes (onions should be softened). Add garlic and sauté 30 seconds.
  • Stir in the chicken broth, diced tomatoes, tomato paste and the cooked sausage.
  • Bring the pot to a simmer, uncovered - the bubbles should reach to the center of the skillet (this can take up to 5 minutes, so be patient). Give everything a stir, cover, and reduce heat to LOW. Simmer for 5-10 minutes, checking and stirring at 5 minutes and replacing the lid. The rice is done when most of the liquid is evaporated and the rice is tender but slightly al dente. Add additional water or broth if the liquid has evaporated and the rice is not cooked yet.
  • Once the rice is al dente, stir in the shrimp, cover, and remove from heat. Let the pot rest undisturbed for 10 minutes.
  • Drizzle in lemon juice and fluff with a fork. Taste and season with additional salt or cayenne pepper to taste (I like more of both).

1 teaspoon Spanish smoked paprika
5 1/2 cups chicken broth, hot
1/4 teaspoon Saffron threads (loosely packed) (microwave for 15 seconds to help toast saffron)
2 Tablespoon soy sauce
2 cups short grain rice ((Rice options: Paella, Bomba, Aborio, sushi, short grain))
1 pound large shrimp (peeled & deveined) ((fresh or frozen-thawed))
1/2 cup frozen peas
1-2 lemons, cut into wedges (for garnish)
1/4 cup chopped parsley (for garnish)

Steps:

  • Season chicken thighs with salt, pepper, and smoked paprika. Add the olive oil to a large 10-12 inch skillet pan. Heat oil over medium-high heat. Fry the chicken on both sides and cook until golden for about 10 minutes. Remove chicken from pan and set aside.
  • In the same pan, add the chopped onion and red pepper, and sauté until translucent for about 4 minutes. Add an additional tablespoon of olive oil if needed. Add garlic and cook for 1 minute.
