AIR FRYER BACON WRAPPED JALAPEñO POPPERS
How big your jalapeños are will determine how much filling you need. You may have some leftover. You can use for a future batch or to stuff mushrooms or other delicious uses. If desired, you can use just a half slice of bacon per popper, but we prefer a whole slice. If using a half slice, you may need to stretch the bacon it get it to wrap around the popper nicely. All air fryers are different and some cook much hotter than others. Once you cook your first batch, you'll know more of what works for your model of air fryer and size of food.

Steps:
- Cut the jalapeños in half, lengthwise. Scrape out the seeds and white ribs. Set aside.
- In a bowl, mix together the cream cheese, cheddar cheese, onion powder, garlic powder, chili powder and salt until smooth & evenly combined.
- Fill the jalapeño halves with the cream cheese mix. If using 6 slices of bacon, cut them in half lengthwise. Wrap the bacon around the filled jalapeño poppers.
- Sprinkle black pepper over the top of the wrapped jalapeño poppers. Lay in air fryer basket/tray in a single layer.
- Air Fry at 380°F/193°C for 10-12 minutes, or until the bacon is crispy and the jalapeños are tender, or cook to your preferred doneness. Serve warm or at room temperature.

- Preheat the air fryer to 325°F (160°C).
- Wearing latex gloves, slice the jalapeños in half lengthwise. Carefully scoop out the seeds and membrane.
- In a medium bowl, mix together the cream cheese, cheddar cheese, salt, and pepper with a rubber spatula. Transfer the cheese mixture to a piping bag fitted with a medium round tip or a resealable plastic bag with a corner snipped off.
- Pipe the cream cheese filling into each jalapeño half.
- Wrap each jalapeno in 1 strip of bacon.
- Working in batches, place half of the poppers in the air fryer and fry for 8-10 minutes, until the bacon is crispy. Repeat with the remaining poppers.

- Slice jalapeños lengthwise. Remove seeds and veins. Rub jalapeños with oil then transfer to greased air fryer basket.
- Air fry jalapeños at 400ºF for 4 minutes. Let cool 5 minutes or until able to be handled. Place upside down on paper towel to drain any excess liquid or oil.
- Mix cream cheese, garlic powder, onion powder, salt and pepper. Add half & half then mix until creamy and smooth. Stir in cheddar and bacon.
- Fill jalapeños with cream cheese mixture and return to air fryer basket. Top with additional shredded cheese and bacon crumbles.

- Cut the jalapeños in half, lengthwise. Remove all of the seeds and rinse the jalapeños.
- Cut small slices of the cream cheese, in strips, and place a strip inside each half piece of the pepper.
- Wrap a piece of bacon around the stuffed pepper and secure with a toothpick.

AIR FRYER JALAPEñO POPPERS
We have a high bar for jalapeño poppers, and this easy air-fryer version surpasses it. In our books the jalapeño itself needs to be cooked through but still sturdy enough to support all the filling. This recipe calls for large jalapeños, which fit more filling than smaller ones and tend to be sturdier. The molten cheese will not spill out of these poppers thanks to the way they are filled and rested for a few minutes in the air fryer after cooking. Finally, the breadcrumb coating remains crispy for a very long time because of the addition of crushed kettle potato chips.

- Working with disposable rubber gloves to protect your skin, halve each jalapeño lengthwise, slicing through the stem. Remove the seeds and white ribs with a spoon or small melon baller. Arrange the halves on a baking sheet rounded sides down. If any of the halves tilt sideways instead of standing straight up, slice a sliver of skin off the rounded side, making sure not to cut through to the cavity, so they sit level.
- Add the cream cheese and Cheddar to a small bowl and mix together with a rubber spatula until combined. Stir together the breadcrumbs and potato chips in a medium bowl.
- Divide the cream cheese mixture among the jalapeño halves, smoothing it down with your finger or the back of a butter knife so the filling is level with the top of the jalapeno, not mounded. (You may have extra filling depending on how large your jalapenos are.) Firmly press the breadcrumb mixture over the cream cheese to fully coat. Spray the breadcrumbs with nonstick spray.
- Preheat the air fryer to 400 degrees F and set to cook for 4 minutes. Arrange the poppers in a single layer in the basket so they're not touching, working in batches if necessary. Air fry the poppers without opening the basket to check on them. When the air fryer turns off, let the poppers sit in the basket for another 4 minutes without opening the machine. (this will allow the poppers to cool slightly and the cheese to set so it doesn't slide out-don't worry, it'll still be gooey.)
- Carefully open the air fryer basket and remove each popper with a spatula. Serve the poppers sprinkled with the bacon.

- 1. Grease a 7 1/2-inch barrel cake pan (see Note) with oil.
- 2. In a large bowl, stir together the chicken, bell pepper, jalapeños, cream cheese, Mexican cheese blend, chili powder, garlic salt, and salt until thoroughly combined. Transfer the mixture to the prepared pan.
- 3. Cut each bacon slice into three or four pieces. Arrange the bacon in a circle on top of the chicken mixture. Place the pan in the air-fryer basket. Set the air fryer to 400°F for 15 minutes, or until the cheese has melted and the chicken is cooked through.

- Preheat an air fryer to 375 degrees F (if preheating is necessary; see Cook's Note for oven directions).
- Slice each jalapeño in half lengthwise and remove the ribs and seeds (see Cook's Note). Using a small rubber spatula or spoon, fill the jalapeño halves with the cream cheese. If using large jalapeños, wrap each half with 1 slice of the bacon, tucking in the ends. (If using smaller jalapeños, cut each slice of bacon in half crosswise before wrapping.)

- Cut each okra pod in half lengthwise. Use a small spoon to scoop out the seeds and discard.
- Arrange the okra, cut-side up, in a shallow glass dish. Pour the buttermilk and hot sauce over the okra. Cover the dish with plastic wrap and refrigerate for 2-4 hours.
- While the okra marinates, make the pimento cheese filling: In a medium bowl, combine the cheddar cheese, cream cheese, mayonnaise, pimiento peppers, jalapeño, salt, and cayenne. Mix with an electric hand mixer on low-medium speed until well combined, 2-3 minutes. Transfer the filling to a piping bag and refrigerate until ready to use.

- Assemble the poppers: After the okra has marinated, drain and rinse under cold water. Place on a paper towel-lined baking sheet and pat the insides dry.
- Preheat the air fryer to 400°F (200°C) for 10 minutes.
- Cut the tip off of the piping bag with the pimiento cheese filling and pipe the filling into each okra half. Wrap a half-slice of bacon around each okra half, using toothpicks to secure if needed.
- Working in batches of 5-6 at a time, air fry the okra poppers for 10 minutes, or until the bacon is cooked and crispy.
- Arrange the okra on a platter and serve with the remoulade sauce alongside.
