GREEN BEANS WITH CARAMELIZED ONIONS AND ALMONDS

Steps:
- Fill a large high sided skillet with some water, adding enough to be just shy of the rim of the pan by about 1 inch. Place over high heat and bring up to boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp. Drain the beans and then run them under some cold water to stop them from cooking. Reserve the beans while you start the onions.
- Return the skillet you cooked the beans in to the cook top over medium heat. Add the almonds and toast stirring every now and then until golden, about 3 to 5 minutes. Remove the almonds from the skillet and reserve. Return the skillet to the heat and add the butter and olive oil and heat until the butter has melted. Add the onions, season with salt and pepper, and cook stirring frequently until the onions caramelize, 20 to 25 minutes. Add the thyme, and cook for another 5 minutes. Add the cooked cooled green beans and almonds, and stir well to combine. Season with salt and pepper, to taste.

- Cook green beans in boiling water.
- Drain.
- (This can be done ahead.).
- Cut onions into thin slices, and cut each slice in half.
- Cook onions in a nonstick skillet over medium-high heat, stirring occasionally until onions are golden brown.
- (Original recipe says do not stir onions first 5-10 minutes.) Reduce heat to medium; stir in butter and brown sugar.
- Add green beans; cook 5 minutes or until thoroughly heated.
- Toss with vinegar.

- Place beans and water in a large saucepan. Cover, and bring to a boil. Set heat to low, and simmer until tender, about 10 minutes. Drain off water, and set aside.
- Melt butter in a skillet over medium heat. Stir in sugar, garlic salt, pepper and basil. Add tomatoes, and cook stirring gently just until soft. Pour the tomato mixture over the green beans, and toss gently to blend.

CARAMELIZED ONION GREEN BEANS
This recipe came from a Woman's World magazine. It is very good and has a very pretty presentation. (**Updating to say that I made this recipe with canned cut green beans. I simply drained them and heated them in a little broth for about 3-5 minutes and added them to the recipe instead of fresh green beans. They were very good this way...a nice way to dress up canned green beans.)

- In skillet, melt 1 Tbsp butter over medium heat. Add onion; cook, stirring occasionally, until starting to brown, 7-10 minutes. Add sugar, salt, and Cajun seasoning. Reduce heat to medium-low; cook, stirring often, until onion is soft and golden brown, 5 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add green beans; cook until tender, 4-5 minutes. (Next time, I will cook longer as mine were not as done as I would have liked them.) Drain well, then add to onion with remaining 1 Tbsp butter. Cook, stirring, until heated through, 1 minute.
GREEN BEAN AND CHERRY TOMATO SALAD
I found this recipe in Cooking Light a couple years ago. My family loves it and I make it all year long, not just in the summer. In a pinch, I have even made this using Trader Joe's frozen baby french green beans. This salad is always a big hit. Try to use a good quality red wine vinegar, like a cabernet vinegar, it really makes a difference.

- Cook beans in boiling water 7 minutes or until tender.
- Drain.
- Place beans, tomatoes, and oregano in a large bowl; toss gently to combine.
- Combine the shallots and vinegar, stirring with a whisk.
- Let vinegar mixture stand 10 minutes.
- Add oil, salt, and pepper to vinegar mixture, stirring with a whisk until well blended.
- Pour vinaigrette over bean mixture; toss well.

- Preheat oven to 400 degrees.
- Cook beans in boiling water 3 minutes.
- Drain and rinse under cold water, set aside.
- Heat nonstick fry pan coated with veggie spray over medium high heat.
- Add onion and next 4 ingredients (onion through pepper), saute 8 minutes or until lightly browned, stirring frequently.
- Stir in vinegar, basil and oregano, cook 2 minutes.
- Remove from heat.
- Arrange beans in a 11 x 7 inch baking dish coated with veggie spray.
- Top with onion mixture.
- Arrange tomatoes on top of onion mixture and sprinkle with cheese.
- Bake at 400 degrees for 35 minutes or until the cheese is lightly browned.
