Sticky, sweet and tangy deliciousness! This Apricot Chicken recipe is a semi-homemade and much better version of that old recipe with onion soup, jam and Catalina dressing.

1 chicken bone-in, cut in 8ths, trimmed of extra fat
Garnish: chopped parsley
3/4 cup ketchup
3/4 cup apricot jam ((peach or marmalade ok too))
1 tablespoon red wine vinegar
1/2 teaspoon Worcestershire sauce
1 teaspoon garlic, minced (1 clove) ( or 1/4 tsp garlic powder)
1/2 teaspoon each, salt and pepper (or to taste)
2/3 cup finely chopped onions, about 1/2 spanish onion ((I chop in food processor))
1 1/2 tablespoon cornstarch ((this will help sauce stay on chicken))
1/2 tablespoon sugar (optional)

Steps:

  • Preheat oven to 375F.
  • MAKE SAUCE/GLAZE: In a large mixing bowl, add all sauce ingredients and mix to combine well. Taste and adjust if needed e.g. more salt, sugar, vinegar, etc. Add chicken and toss to coat evenly. Note 1 for make ahead.
  • BAKE CHICKEN: Use a pan with 1-3 inch sides that will fit the chicken comfortably, but that is not too big. Line it with foil and spray with oil. Place chicken and sauce in the pan in a single layer, skin side up. Bake for 30-45 minutes, depending on size of chicken. Instant thermometer should read about 160F. Remove chicken and spoon sauce on top if some has slipped off. If desired, broil the chicken 8-10 inches from heat source for about 4 minutes to brown it on top. Watch that it doesn't burn.
  • SERVE: Transfer to a serving platter, spooning extra sauce on top (or in a separate small bowl to pass around). Garnish with chopped parsley.

Steps:

  • Preheat Oven to 350 degrees. Heat Oil in large skillet on Med-High heat. Add Chicken; Cook 4 min on each side or until browned. Remove Chicken from skillet; Place in 3 qt baking dish. Mix dressing, jam and soup mix in small bowl and then pour over browned chicken. Bake 45 min. or until chicken is cooked through.

1 (10 fluid ounce) bottle Russian-style salad dressing

  • Heat oven to 350°F.
  • Heat oil in large skillet on medium-high heat. Add chicken; cook 4 min. on each side or until browned on both sides. Transfer chicken to 3-qt. casserole.

1 kg chicken leg
100 ml cream
425 g apricot nectar
1 1/4 ounces dry onion soup mix (french)
1 teaspoon curry powder
1 teaspoon mixed herbs
2 garlic cloves, crushed
4 cups cooked rice

Steps:

  • Cook the chicken legs while on the bone.
  • Then take the chicken off of the legs and cube it.
  • Put it in a stove top pot (with a lid) and put the apricot nectar and french onion soup in; add all other ingredients except for the rice.
  • Cook on a low to medium heat for about 20 minutes.
  • Once cooked, serve it up on a bed of rice.

1 medium onion, sliced
1 garlic clove, crushed
2 tablespoons flour
2 teaspoons curry powder
600 g skinless chicken thighs, filets, cut into 3 to 4 pieces
1 (40 g) French onion soup mix (dry)
1 (415 g) can apricot nectar
2 tablespoons chopped parsley

Steps:

  • Preheat oven to 190c.
  • Heat the oil in an oven-proof pan (with a lid) and cook onion and garlic over medium heat until onion is softened (about 5 minutes), Stir.
  • Mix the curry powder and flour together in a bag then add in the chicken and toss well.
  • Add the chicken to the pan and cook it until it changes colour. Add the dry soup mix and stir to coat all the chicken, then the nectar stirring really well. Bring to the boil and simmer until the mix thickens.
  • Put the lid on and place in the preheated oven. Cook for about 30 minutes or until the chicken is cooked through.
  • Remove from the oven, stir through the parsley, then serve over plenty of mash or rice (mash is my favourite).
  • *You can add in dried or canned apricots, but we prefer it without.

2 tablespoons olive oil
4 boneless skinless chicken breasts
salt and pepper
1 shallot
1/4 ounce fresh thyme sprig
4 tablespoons balsamic vinegar
2 tablespoons apricot jam
1/2 cup water
1 ounce chicken stock, concentrate cup
2 tablespoons butter

Steps:

  • Finely mince shallot.
  • Heat a large drizzle of olive oil in a non stick skillet over medium high heat. Pat chicken dry with paper towel, then season all over with salt and pepper.
  • Add to pan and cook until no longer pink in center 4-5 minutes per side. Remove from pan and set aside to rest.
  • To pan, add shallot, whole thyme sprigs and drizzle of olive oil over medium heat. Cook, tossing, until shallot is soft, 2-3 minutes. Stir in balsamic vinegar and apricot jam. Let simmer until syrupy, 1 minute. Stir in 1/2 cup water and stock concentrate. Simmer until thickened, about 3 minutes. Remove pan from heat and add 2 Tbsp. butter, gently swirl until melted. Serve this pan sauce drizzled over chicken.

And then it became a regular favorite requested by the whole family as well. It can be adapted for people who aren't lactose intolerant by just switching out the lactose-free milk for regular milk I normally double this recipe. Enjoy!
