CARAMELIZED ONION AND SHALLOT DIP
Roasting the onions and shallots takes this dip way out of the box.

Steps:
- Preheat oven to 425°F. Mix onions, shallots, thyme sprigs, and oil in a large roasting pan. Season with salt and pepper.
- Roast onion mixture, stirring and scraping down sides of pan every 10 minutes, until mixture starts to break down and turn golden brown, 45-55 minutes.
- Discard thyme sprigs. Add wine and vinegar; stir to scrape up any browned bits from bottom of pan. Return onion mixture to oven. Continue roasting, stirring occasionally, until deep golden brown and completely caramelized, about 15 minutes longer. Spread onion mixture out on a rimmed baking sheet to cool.
- Transfer onion mixture to a work surface and mince. Transfer to a medium bowl. Stir in sour cream, chives, yogurt, and onion powder. Season with salt and pepper. DO AHEAD: Dip can be made 3 days ahead. Cover; chill.
CARAMELIZED ONION AND GARLIC DIP

- In a large saute pan over medium heat, add the olive oil. Add the thyme, shallots, garlic and all the varieties of onions. Saute, stirring constantly. (Onions absorb oil quickly, so add more if necessary.) Continue to cook until the vegetables are lightly browned, about 15 minutes. Remove from the heat and season with salt and pepper. Let cool slightly.
- In a medium bowl, add the yogurt and cream cheese and stir together. Add in the onions, scallions and chives. Stir well to combine.
CARAMELIZED ONION DIP
Steps:
- Heat the oil in a large skillet over medium heat. Add the onions and thyme and cook, stirring occasionally, until the onions are very soft and brown, about 20 minutes, reducing the heat to medium-low if the onions brown too quickly. Set aside to cool to room temperature.
- Meanwhile, stir together the sour cream, mayonnaise and Worcestershire sauce and season with salt and pepper. Add the onion mixture and stir until well combined. Cover and chill for at least 1 hour or up to overnight. The dip can be made up to 3 days ahead and refrigerated in an airtight container. When ready to serve, scatter the chives over the top and serve with potato chips.
CARAMELIZED ONION DIP
You will never use onion soup mix again to make dip.

Steps:
- Heat oil in a skillet over low heat; stir in onion. Cook and stir until onion is soft but not browned, 20 to 30 minutes. Increase heat to high, add butter, and sprinkle sugar over onions. Cook and stir frequently until onion is very tender and dark brown, 8 to 10 minutes more. Remove from heat and cool to room temperature.
- Combine sour cream, yogurt, and mayonnaise together in a bowl; season with salt and black pepper. Mince cooled onions on a cutting board; stir onions into sour cream mixture. Store in refrigerator to allow flavors to blend, at least 1 hour.

- In a large skillet, saute onions in oil until softened. Reduce heat to medium-low; cook, stirring occasionally, for 30 minutes or until deep golden brown. BLUE CHEESE AND CARAMELIZED SHALLOT DIP

- Heat oil in heavy medium saucepan over medium-low heat. Add shallots. Cover and cook until shallots are deep golden brown, stirring occasionally, about 20 minutes. Cool.
- Whisk together mayonnaise and sour cream in medium bowl to blend. Add blue cheese. Using rubber spatula, mash mixture until smooth. Stir in caramelized shallots. Season dip to taste with salt and pepper. Cover dip and refrigerate until flavors blend, about 2 hours. (Can be made 2 days ahead. Keep refrigerated.) Serve dip chilled or at room temperature.
CARAMELIZED ONION DIP
My mom made this at a dinner party she had when dh and I went home recently. She served it with homemade chips made of toasted foccia bread. This has a bit more zip than the traditional onion soup mix dips without having to use the mix!

Steps:
- Cut onion in half and slice thinly (I use food processor).
- Heat oil and butter in large frying pan over medium heat.
- Add onion, cayenne, salt & pepper and saute for 10 minutes.
- Reduce heat to medium low and cook, stirring occasionally for 20 minutes more, until onions are browned and caramelized.
- cool.
- Beat cheese, sour cream and mayonnaise until smooth.
- Add onions and mix well.
- Serve immediately or chill for a couple hours prior to serving.
- Serve with potato chips, crackers or toasted bread below.
- Bread preparation:.
- Preheat oven to 300-325 degrees.
- Thinly slice a loaf of Foccia bread.
- Brush bread slices with olive oil.
- Sprinkle optional parmesan cheese on top.
- Place on cookie sheet and Bake for 5 minutes or until lightly browned.
- Cool and break apart to large sized chip pieces.
- Serve with a knife to spread the dip in case the dip is chilled.

- Stir sour cream, mayonnaise, pepper, onion powder, garlic powder, and remaining ¾ teaspoon salt in a medium bowl. Stir in shallots and parsley and top with more parsley. Serve with potato chips and sliced cucumber.
