Sauté cannellini beans for a filling, flavorful meal. Alongside some fresh brown rice, it's part of a warm grain bowl. Served over toasted hand-made whole wheat bread, it's a little bit Tuscan.

Number Of Ingredients 10

2 cups cooked cannellini beans (or one 15 oz can)
1 leek sliced
3 cloves of garlic, minced or put through a garlic press.
2 tablespoons olive oil (divided)
½ cup small tomatoes
2 portobello mushrooms
2 cups of spinach
Salt/pepper to taste
½ teaspoon dried Italian herb mix
2-3 tablespoons white wine

Steps:

  • Cook the beans ahead of time or use a can of beans.
  • Slice the leeks and the mushrooms.
  • Chop or slice the fresh garlic. (or use a garlic press)
  • Cook the portobello mushrooms in about a tablespoon of olive oil, turning them a couple of times until the mushrooms are a little bit brown.
  • Put the mushrooms aside to use as a garnish on top after everything else is done.
  • Sauté the leek slices, the Italian seasoning, and the garlic in about a tablespoon of olive oil until the leek slices and garlic are soft.
  • Add a sprig of rosemary to the skillet toward the end of the cooking time for the leeks and garlic.
  • Add the beans, salt, the white wine, and the Italian seasoning to the skillet with the leeks and garlic.
  • Stir for about 2-3 minutes to warm everything up.
  • Add the sliced tomatoes and the spinach.
  • Reduce the heat and stir until the spinach is cooked. This takes about 2-3 minutes.
  • Serve over brown rice or toasted whole wheat bread.

1/3 cup extra virgin olive oil
1/2 yellow onion (, chopped)
4 cloves garlic (, peeled and smashed)
1 pound dried cannellini beans (, rinsed, picked over, and soaked in water by 2 inches for 8 hours up to 24 hours)
4-6 cups water
1 cup chicken stock
1 bouquet garni (, or bay leaf and sprigs of thyme, parsley, rosemary, or marjoram)
1 tablespoon kosher salt

Steps:

  • In a large, heavy bottom pot, heat the olive oil over medium heat. Add the onion and garlic and cook for 5 minutes, stirring occasionally, until the garlic is fragrant and the onions soften. Add the cannellini beans with their water and the chicken stock. Add more water to cover the beans by 3 inches. Add the bouquet garni or herbs on their stems with the kosher salt. Bring to a boil. Skim off the foam and discard. Reduce the heat to medium low and cook at a gentle simmer for about 2 hours. Add more water if needed to keep the beans submerged.
  • Once the beans are cooked to your desired tenderness, remove them from the heat and discard the boquet garni (or herb stems). Taste for seasoning and add more salt if needed. Serve immediately or at room temperature, and refrigerate the leftover beans in their cooking liquid for up to 1 week.

30 ounces cannellini beans (2 cans, drained but not rinsed)
1 onion (medium diced fine)
2 tablespoons garlic, minced
7 ounces frozen spinach (1 box Bird Eye or any brand)
2 teaspoons parsley (fresh and chopped fine)
1 teaspoon dried rosemary
1/2 teaspoon red pepper flakes
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 tablespoon olive oil
3 tablespoons white wine (or you can use chicken broth or just water to loosen up the sauce if too thick)
olive oil, to drizzle as a garnish

Steps:

  • Saute -- In a large pan, heat the oil. Add the garlic, onion and red pepper and saute for 2-3 minutes on medium until slightly soft.
  • Beans and spinach -- Add the beans, seasoning and saute on medium high to high until cooked through, about 5 minutes. As they cook I like to take a fork and slightly mash the beans a bit to get a good consistency. I like to get them a little crisp and browned but not fried dark brown. Just a light browning is good. Add the spinach and break up as it cooks. If too dry you can use a little white wine, chicken broth or just water to loosen the sauce if necessary. Garnish with some good olive oil and ground pepper.

SAUTEED ESCAROLE WITH GARLIC AND CANNELLINI BEANS

2 pounds escarole, trimmed, cut into bite-size pieces, rinsed well, and spun dry
1 can cannellini beans, rinsed and drained

Steps:

  • In a large skillet start the garlic in cold oil over moderately high heat, stirring, until it is golden. To the skillet add the escarole, and season with salt and pepper, to taste. Saute the mixture, stirring, for 1 minute. Cook the mixture, covered, over moderately low heat for 4 minutes, or until the escarole is tender, stir in the cannellini beans. Heat through.

1/2 sweet bell pepper, finely chopped
1/2 medium onion, diced
3 tablespoons olive oil, divided
2 cloves garlic, minced
1/4 cup white wine
1/2 cup chicken or vegetable stock
1 teaspoon herbes de provence
3 cups cooked cannellini beans
1/2 baguette, sliced and toasted, for serving

Steps:

  • In a medium saute pan, cook the bell peppers and onions in 2 tablespoons olive oil until soft, 5 to 7 minutes. Add the garlic and cook until fragrant, another 2 minutes. Deglaze the pan with white wine and allow to boil for 1 to 2 minutes. Add the stock, herbs de provence, and beans and simmer for 20 minutes. Pour into shallow bowls and drizzle with the remaining olive oil. Serve with bread slices.

We eat a lot of bean based soups in this house and I am always looking for another one to try. Cannellini beans are some of my favorites so I had to grab this recipe when I saw it in the Winter 2008 copy of the BBC Easy Cook magazine. The recipe states that it is suitable for freezing.

4 shallots, finely chopped
2 garlic cloves, finely chopped
1 carrot, finely chopped
2 sticks celery, finely chopped
2 leeks, finely chopped
5 ounces bacon, finely chopped
1 tablespoon olive oil
47 ounces chicken stock (can use vegetable stock too)
2 bay leaves
1/2 teaspoon dried oregano
2 (15 ounce) cans cannellini beans, drained
1/4 cup fresh parsley, chopped

Steps:

  • Fry the shallots, garlic, carrot, celery, leeks and bacon in the oil for 7 minutes, until softened but not brown.
  • Pour in the stock and add the bay leaves and oregano.
  • Season and bring to the boil, cover the pan and simmer gently for 15 minutes.
  • Tip in the beans, re-cover and simmer for a further 5 minutes.
  • Swirl the chopped parsley into the soup.
  • Serve sprinkled with a little extra parsley.

This recipe is amazing, and comes from Kalyn at Kalyn's Kitchen. It could be made with any kind of sausage really, however I used a smoked turkey and it turned out so well, even the kiddos ate it up!!

2 cups cooked cannellini beans
4 links smoked turkey sausage
2 -3 teaspoons olive oil
1 large onion (1/2 for beans and 1/2 for stew)
1 tablespoon garlic, minced
1 (14 1/2 ounce) can petite diced tomatoes with juice
1 teaspoon oregano
1/2 teaspoon dried marjoram
2 cups chicken stock
salt and pepper
1/4 cup basil, chopped
1 tablespoon balsamic vinegar
fresh grated parmesan cheese, for serving

Steps:

  • If using dried beans, soak overnight, discard soaking water. Add beans to pot, cover with water by several inches. Add 1/2 onion (coarsly chopped), and 3-4 bay leaves. Simmer until soft (about 45 minutes). When done, drain in sink.
  • While beans are cooking, cut sausage in half lengthwise, then cut into half-moon slices. Heat 1 tsp olive oil in heavy Dutch oven, sauté sausage until browned, about 5 minutes. When done, remove to bowl.
  • Add chopped onion to pot, sauté for 2 minutes, adding more oil if necessary. After 2 minutes, add chopped garlic and sauté for another 2 minutes.
  • Add tomatoes and juice, dried oregano, dried marjoram, and chicken stock to pot with onions and garlic. Add sausage back to pot and cook at a low simmer about 30 minutes.
  • After 30 minutes, add drained beans and simmer 15 minutes more. (If the mixture seems too dry at this point, add a bit more chicken stock.).
  • Add chopped basil and balsamic vinegar and simmer 5 minutes more. Taste, and add salt and pepper as needed.
  • Serve hot with freshly grated parmasean (Romano works nicely as well).
