After some looking at different recipes, I thought I would experiment with making an Indian Tomato Soup, as I once had in a restaurant. This comes close. Warning! Indian Chili powder is much spicier than your ordinary store-bought.

2 tablespoons olive oil
1 onion, chopped
2 bay leaves
1 tablespoon all-purpose flour
1 tablespoon ginger-garlic paste
1 teaspoon garam masala
½ teaspoon ground turmeric
1 tablespoon Indian chili powder
½ cup water, or as needed
1 (28 ounce) can tomato puree
1 tablespoon white sugar
salt to taste
⅓ cup heavy cream or half-and-half

Steps:

  • Heat oil in a large saucepan over medium heat; stir in onions and bay leaves, and cook about 5 minutes until the onions begin to soften. Add flour, ginger-garlic paste, garam masala, turmeric, and Indian chili powder. Cook and stir until fragrant, about 1 minute.
  • Pour the water into the pan, and bring to a boil while scraping the browned bits of food off of the bottom with a wooden spoon. Pour in the tomato puree and thin with additional water to desired consistency. Add sugar and salt; cook until sugar is dissolved and soup is hot, about 5 minutes.
  • Remove bay leaves and serve with cream if desired.

1 (15-ounce) can cannellini beans, drained and rinsed
1/2 teaspoon red pepper flakes
1/2 cup pastina pasta (or any small pasta)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve.

2 tablespoons extra-virgin olive oil
1 small yellow onion, peeled, halved, and sliced into 1/4-inch-thick slices
1 teaspoon red pepper flakes (or to taste ( we started with 1/2 teaspoon)
2 (28 ounce) cans whole tomatoes
1 1/2 cups water
1/4 cup loosely packed fresh basil leaf
kosher salt
fresh ground black pepper
creme fraiche, for garnish (optional)

Steps:

  • Heat the olive oil in a large saucepan over medium heat until shimmering. Add the onions and red pepper flakes and cook, stirring occasionally, until the onions are translucent and very tender, about 10 minutes.
  • Stir in the tomatoes and their juices, plus the water, and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the flavors have melded, about 30 minutes. (If you're in a hurry, you can skip the simmer time -- just add a bit less water.)
  • Add the basil, season with salt and pepper, remove from the heat, and let cool briefly, about 5 minutes.
  • Set a fine-mesh strainer over a large, heatproof bowl.
  • Using a blender, purée the soup in batches until smooth, removing the small cap from the blender lid (the pour lid) and covering the space with a kitchen towel (this allows steam from the hot soup to escape and prevents the blender lid from popping off).
  • Pour the blended soup through the strainer, pressing on the solids with a rubber spatula or ladle; discard the solids. Taste the soup and season with additional salt and pepper as needed.
  • Return the soup to the saucepan and reheat on medium low until hot.
  • If you choose, serve topped with a tablespoon of crème fraîche.

4 cups peeled tomato chunks
3 scallions, chopped
1 jalapeno, seeded and sliced
1 lime
1 red pepper, seeded and chopped
Salt

Tabasco pepper sauce

Steps:

  • In food processor combine tomatoes, scallions, jalapeno, juice of the lime, and red peppers. Process until smooth. Season with salt, pepper and a dash of Tabasco pepper sauce to taste. Chill and serve.

  • Bring a large pot of water to a rolling boil. Using a paring knife make an X on the bottom of each tomato. Lower tomatoes into boiling water for 30 to 45 seconds. Remove tomatoes to a bowl of ice water to stop cooking process. Tomatoes can now be peeled with fingers

This recipe has been in my family for as long as I can remember. Ever since I was a kid, I can remember my Mother's Tomato Soup on those cold winter's nights while sitting on the poarch on one of the cattle stations, listening to the quiet chatter of the stockmen preparing for an early start on Monday morning. Sunday evening was one of the few times of the week that we could have my Mum to ourselves. The rest of the week was rather busy with early morning starts and busy evenings perparing the bread dough, biscuits and cakes for breakfast and morning teas.

1 ounce butter
1 medium onion
1 carrot
1 tablespoon plain flour
1 lb ripe tomatoes
1 pint water or 1 pint vegetable stock
1 bay leaf
2 teaspoons sugar
1 pinch ground mace or 1 pinch nutmeg
salt and pepper
1 teaspoon arrowroot (optional)
3 -4 tablespoons cream (optional)

Steps:

  • Slice tomatoes, onion and carrot.
  • Melt butter in a medium size saucepan.
  • Add the onion and carrot, cover, and allow to soften for 5-6 minutes.
  • Remove from the heat, stir in the plain flour, add tomatoes, stock or water, bay leaf, sugar, mace or nutmeg and seasoning.
  • Stir until boiling, simmer for 20-30 minutes.
  • Rub soup through sieve, pour back into rinsed saucepan, and reheat.
  • Adjust seasoning, and thicken slightly if necessary with a teaspoon or more of arrowroot blended with a tablespoon of cold water.
  • Reboil to cook the arrowroot if used to thicken the soup.
  • Add cream if used.
  • If cream is added do not boil the soup.
  • If required, a teaspoon of tomato paste may be added to the tomato soup for extra colour and flavour.
  • Serve with crusty bread, the kind that you have to break apart with your hands.
  • Feel free to dip your chunks of bread into the soup.

4 tomatoes, halved
2 tablespoons olive oil
2 cloves garlic, thinly sliced
1 small red onion, chopped
2 teaspoons fresh oregano leaves, chopped
2 cups chicken broth
1 teaspoon hot sauce
One 28-ounce can diced fire-roasted tomatoes
Kosher salt and freshly ground black pepper

Croutons, recipe follows
2 cups cubed day-old French bread
2 tablespoons olive oil

Steps:

  • Preheat the broiler. Line a sheet pan with foil.
  • Place the tomatoes on the prepared sheet pan and broil until charred, 4 minutes.
  • Add the oil to a large pot set over high heat. Saute the garlic, onions and oregano. Reduce the heat to medium.
  • Add the broiled tomatoes to the pot and mix into the sauteed onion mixture. Break up the tomatoes with the mixing spoon so they cook evenly. Add the broth, hot sauce and canned tomatoes to the pot. Season with salt and pepper. Sprinkle the cheese, reserving 2 tablespoons for garnish, into the soup. Use an immersion blender to blend the soup until smooth. Simmer the soup on low for 5 minutes.
  • Divide the soup among four bowls, then garnish with the reserved cheese and some Croutons.
  • Preheat the oven to 375 degrees F.
  • Place the cubes on a sheet pan in a single layer and sprinkle the oil over the bread. Season with salt and pepper. Bake until crisp and golden, about 10 minutes.

1 medium white or yellow onion
6 tablespoons (3/4 stick) butter
Two 14.5-ounce cans diced tomatoes
One 46-ounce bottle or can tomato juice
3 to 6 tablespoons sugar
1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
Freshly ground black pepper
1 cup sherry, optional
1 1/2 cups heavy cream
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley

Steps:

  • To begin, dice the onion. Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent.
  • Now dump in the diced tomatoes and stir to combine. Add the tomato juice.
  • Next - and this is important - in order to combat the acidity of the tomatoes add 3 to 6 tablespoons of sugar. Now, you'll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acidic bite than others. (For what it's worth, and I realize it's not worth much, I use 6 tablespoons of sugar.)
  • Next, add 1 or 2 tablespoons chicken base to the pot. I added 3, and it wound up being a little too much.
  • Now you can add lots of freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.
  • Add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.
  • Serve the soup warm!

I attempted to make spicy tomato sauce out of fresh tomatoes and this soup is the result. We think it is a winner. If you simmer this for an additional 45 minutes, not covered, you will get a thick spicy sauce. This soup tastes great frozen and reheated.

2 flavourful ripe tomatoes (150g) roughly chopped
1 small red pepper (150g) roughly chopped
Half a small red onion finely (150g) roughly chopped
1 clove garlic
1 tbsp white wine vinegar
2-3 drops Tabasco
1 small chilli chopped
Half a tsp sugar
Half a tsp celery salt
Salt & freshly ground black pepper

Steps:

  • Place all the ingredients in a food processor and whizz until blended and smooth.
  • Place a sieve over a bowl and strain the soup, pushing through as much as possible.
  • Discard the solids and season the soup with sea salt & freshly ground black pepper.
  • Chill, until very cold. (Or add a couple of ice cubes if you are short of time).
  • Pour into shot glasses and drizzle with a little more oil and maybe a leaf of celery.

2 onions , finely sliced
1 carrot , finely chopped
3 red peppers , roughly chopped

400g can chopped tomato
850ml-1 litre/1½-1¾pts vegetable stock or bouillon
4 tbsp Greek-style yogurt
½ cucumber , halved, deseeded, coarsely grated and squeezed of excess water
a few mint leaves, chopped

Steps:

  • Heat the oil in a large saucepan. Tip in the onions, carrot and peppers. Cook gently for 15 mins, to soften. Add the garlic and chilli, and cook for a few mins more. Pour over the chopped tomatoes and 800ml of the stock. Bring to the boil and simmer for 10-15 mins until the veg is completely tender.
  • Meanwhile, mix the yogurt, cucumber and mint in a bowl, and season.
  • Blitz the soup with a hand blender until smooth, using the extra stock to thin if it has become too thick. Heat through, season and spoon into bowls. Serve with a dollop of the yogurt mixture on top and a drizzle of olive oil.

This is not your average run-of-the-mill tomato soup, this soup takes time to prepare but well worth the extra time. The soup can be made and refrigerated then pureed and heated the following day, actually it tastes even better as the flavors blend overnight. If you like spice then try this soup, of coarse you can adjust the jalapeno to taste. This is a fantastic starter to serve to your guests at a dinner party, to save time, make the soup well in advance even a day ahead, and just warm before dinner, pass a small cup of whipping cream. The complete recipe may be doubled to serve more than four people.

1 large onion, chopped
1 -2 tablespoon minced fresh garlic
1 jalapeno pepper (with seeds or without, leave the seeds for more heat)

1/4 cup olive oil
1/2 teaspoon cumin
2 1/2 cups chicken broth
1 -4 tablespoon sugar (to taste)

whipping cream (unwhipped)

Steps:

  • Puree 2 cans of tomatoes in a blender (leave one with the juice, and the other drained).
  • In a heavy large pot or saucepan saute the onion, garlic, chile pepper and fresh ginger until onion is softened (about 6 minutes).
  • Add in cumin; cook stirring 1 minute.
  • Stir in pureed tomatoes, broth, 1 tablespoon sugar and 2 teaspoons salt; simmer uncovered, stirring occasionally for 30-40 minutes.
  • At this point you may refrigerate and puree the following day, or cool the mixture slightly then blend in a blender until smooth (be careful when blending hot liquids!).
  • Force the liquid over a sieve to remove any seeds.
  • If needed heat the soup.
  • Ladle into bowls and drizzle with whipping cream.
  • Delicious!

3 tablespoons olive oil
1/2 teaspoon ground cumin
2 1/4 cups reduced-sodium chicken broth (18 fl oz)
1 tablespoon sugar, or to taste
2 teaspoons salt, or to taste

Steps:

  • Drain 1 can tomatoes, discarding juice, then purée with remaining can tomatoes (including juice) in a blender.
  • Cook onion, garlic, chile, and ginger in oil in a 4- to 5-quart heavy nonreactive pot over moderate heat, stirring frequently, until onion is softened, about 8 minutes. Add cumin and cook, stirring, 1 minute. Stir in puréed tomatoes, broth, 1 tablespoon sugar, and 2 teaspoons salt and simmer, uncovered, stirring occasionally, 20 minutes. Working in 3 or 4 batches, blend soup in blender until smooth (use caution when blending hot liquids). A quick, easy and tasty recipe for thick lentil soup. This works best using a hand blender or a food mixer, but you can puree it in the blender too. Serve with thickly sliced crusty bread for a filling and delicious meal.

Steps:

  • Heat the olive oil in a large saucepan or Dutch oven. Lightly brown the onions in the oil. Add the tomatoes, chili pepper, lentils, cumin and basil to the pan along with the water. Bring to a boil, then reduce heat to medium-low and simmer for about 20 minutes, or until the lentils are tender.
  • When the lentils have softened, use a stick blender to puree the soup. Season to taste with salt and pepper. For a special touch, put sour cream in a squirt bottle, and squeeze a spiral onto the top of each bowl of soup, and garnish with a sprig of fresh basil.

2 teaspoons olive oil
1 slice bacon
2 teaspoons garlic, crushed
1/2 teaspoon onion flakes
1 cup crushed tomatoes
1 chicken stock cube
1 tablespoon tomato paste
1/2 teaspoon chili flakes (optional or to taste)
1/4 teaspoon black pepper, ground
1 tablespoon fresh parsley, torn apart
6 basil leaves, torn apart
2 cups water
1 slice bread

Steps:

  • Remove rind from bacon and tear into bite sized pieces.
  • Place bacon, oil, garlic, and onion flakes into medium saucepan and cook over medium heat until bacon is browned and cooked through.
  • Add all remaining ingredients apart from bread and slowly bring to boil over medium temperature (will take around 10 minutes).
  • Reduce temperature to low and simmer for 10 minutes.
  • Meanwhile toast bread and cut into small squares as croutons.
  • Serve soup in bowl with croutons sprinled over the top.

  • Fry the chopped onion and bacon if using in a small knob of butter/oil for about 5 mins
  • Add cubed potato and quatered tomatoes, sugar and water simmer gently with the lid on a pan until potato is well cooked. Allow to cool slightly
  • Remove the bacon if using and pour the ingredients into a blender.
  • Once blended add the seasonings and blend well and adjust to your taste.
  • Pass through a sieve into a pan. At this point this soup is perfect for freezing. Add the milk and gently reheat and add fresh parsley is using. Serve with a chunk of fresh warm bread.

This sturdy soups heat level suites my taste but do feel free to adjust it up or down to please your own palate then just tie a big napkin around your neck and enjoy.

2 tablespoons olive oil
1/2 lb round steak, cut into cubes
1 medium onion, chopped
1 tablespoon garlic, minced
1 1/2 teaspoons cajun seasoning
4 cups beef broth
1 cup tomatoes, diced (fresh or from a can)
1/2 cup tomato ketchup
1/2 cup chili sauce
3/4 lb new potato, cut into med cubes (can use up to 1 lb if you like)
1 large green bell pepper, chopped
1 medium carrot, sliced
1 1/2 teaspoons celery seeds
1/2 teaspoon oregano, dried
1 teaspoon red pepper flakes (or to taste)
kosher salt & freshly ground black pepper (to taste)

Steps:

  • In a 3-4 qt dutch oven heat oil and add the beef and onion, cook until beef is done and the onion is softened. Add the garlic and Cajun seasoning, cook until fragrant, about 1 more minute.
  • Add the beef broth, ketchup, chili sauce, diced tomato ,potatoes, bell pepper, carrot, celery seed and oregano. Cover and bring it to a simmer.
  • Simmer the soup for 20 mins then add the red pepper flakes and simmer for up to 5 mins longer or until the vegetables are tender but not mushy.
  • Rest the soup for 5-10 mins, Taste and add salt and pepper to your liking.

1 teaspoon dried basil
1 teaspoon ground cumin
1/2 to 1 teaspoon crushed red pepper flakes, optional
Shredded cheddar or Monterey Jack cheese, optional

Steps:

  • Cook the macaroni according to package directions. Meanwhile, in a large saucepan, combine the tomato juice, corn, beans, salsa, oregano, garlic powder, basil, cumin and pepper flakes if desired; bring to a boil. Reduce heat; cover and simmer for 8-10 minutes. , Drain macaroni; stir into the soup. Garnish with cheese if desired.
