1 (14 ounce) can pizza sauce
1 (8 ounce) package shredded mozzarella cheese
1 (8 ounce) package sliced pepperoni
1 (4 ounce) link cooked Italian sausage, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange English muffin halves, cut-side up, on a baking sheet. Spoon 1 to 2 tablespoons pizza sauce onto each English muffin; top with mozzarella cheese. Place pepperoni slices on 1/3 the pizzas and Italian sausage on 1/3 the English muffins, leaving the remaining 1/3 with just cheese.
  • Bake in the preheated oven until cheese is melted, about 10 minutes.

3/4 pound bulk pork sausage
1 small onion, chopped
1/2 cup tomato paste
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
3 packages (12 ounces each) English muffins, split
1-1/2 cups shredded part-skim mozzarella cheese
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese

Steps:

  • In a Dutch oven, cook the beef, sausage and onion over medium heat until meat is no longer pink; drain. Stir in the tomato paste, garlic salt, oregano and cayenne. Spread over the cut side of each English muffin. Place on baking sheets. Combine the cheeses; sprinkle over meat mixture., Freeze for up to 3 months or bake at 350° for 15-20 minutes or until heated through.

1/2 tablespoon extra virgin olive oil
3/4 cup prepared pizza sauce (tomato, pesto, or alfredo; whichever your family likes! (We use tomato))
Tiny Pinch kosher salt
Pinch black pepper
1 cup shredded part-skim mozzarella cheese (or cheddar cheese, provolone, or any cheese you like)
1/2 teaspoon Italian seasoning
Toppings of choice (such as mini pepperonis (or regular pepperonis, quartered), or sautéed veggies, such as spinach or mushrooms)
Thinly sliced fresh basil (optional for serving)

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Arrange the English muffin halves cut side up onto a baking sheet. Lightly drizzle with olive oil. Place in the oven and toast until barely golden, about 4 minutes.
  • Spoon 1 1/2 tablespoons pizza sauce over each one, using the back of a spoon to spread it evenly. Sprinkle with salt and pepper. Top with mozzarella cheese and Italian seasoning. Add any desired toppings.

One 4-ounce chicken breast cut into 1/4-inch cubes
1 cup (4 ounces) coarsely grated whole-milk mozzarella
2/3 cup chopped baby spinach
1/2 cup (4 ounces) mascarpone
1/3 cup finely grated Parmesan (about 1 ounce)
1/3 cup purchased tomato-basil sauce
2 tablespoons chopped fresh basil
2 teaspoons fresh lemon juice (about 1/2 a small lemon)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Nonstick vegetable oil spray
All-purpose flour, for dusting
1 pound ball fresh pizza dough

Steps:

  • In a large bowl, combine the chicken, mozzarella, spinach, mascarpone, Parmesan, tomato-basil sauce, basil, lemon juice, salt and pepper.
  • Position an oven rack in the center of the oven and preheat to 425 degrees F. Spray a standard 12-cup muffin pan with nonstick spray.
  • Lightly flour a work surface. Roll out the pizza dough to a thin large round, about 1/8-inch thick. Using a 3 1/2- to 4-inch-diameter round cutter, cut out 12 rounds for pizza crusts. I got this recipe from my mom, but I don't remember where she got it. It's one of the simplest, yummiest appetizers and is a hit every time. Another plus, is I've also been able to adapt the recipe to fit my IBS diet and it still tastes very good imo. :D This recipe is the original; to adapt it for my IBS I replaced the Miracle Whip with light Miracle Whip or a vegan mayo, the cheese with a non-dairy sub like soy cheese, and the bacon bits are usually fine, but I can cook up some turkey bacon until very crisp and let cool before adding them. Be careful when biting into these, they can be really hot. Many people have burnt their mouths devouring these tasty appetizers before my mom can plate them!

1 cup Miracle Whip
1 cup green onion, chopped

  • After splitting the English Muffins, cut them into wedges so each muffin makes 8 wedges.
  • Mix the remaining ingredients in a bowl. (Note: My mom prefers 5 or more drops of Tabasco, but use as little or as much as you like.).
