Time 1h20m

Yield 12

Number Of Ingredients 7

6 large sweet potatoes
½ cup butter
2 cups white sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon vanilla extract
salt to taste

Steps:

  • Peel the sweet potatoes and cut them into slices.
  • Melt the butter in a heavy skillet and add the sliced sweet potatoes.
  • Mix the sugar, cinnamon, nutmeg and salt. Cover the sweet potatoes with sugar mixture and stir. Cover skillet, reduce heat to low and cook for about 1 hour or until potatoes are "candied". They should be tender but a little hard around the edges. Also the sauce will turn dark. You will need to stir occasionally during the cooking. Stir in the vanilla just before serving. Serve hot.

This Easy Southern Candied Sweet Potatoes recipe is homemade from scratch and baked in the oven. From there, you drizzle the dish in a thick caramelized syrup. Your Sunday dinners and soul food holiday events just got much better!

Provided by Brandi Crawford

Categories     Side Dish

Time 1h15m

Number Of Ingredients 9

2 pounds sweet potatoes (Washed and Peeled. This was 2 large sweet potatoes for me. Weigh for accuracy.)
1/2 cup unsalted butter
1/2 teaspoon salt
1/2 cup dark brown sugar or sweetener
3/4 cup white sugar or sweetener
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 teaspoons vanilla (I use pure vanilla, not imitation.)

Steps:

  • Preheat the oven to 350 degrees.
  • Add the sweet potatoes to a 9x13 baking dish.
  • Cover the pan in foil and bake for an additional 15-20 minutes. Mine usually takes the full 20 minutes. Test the sweet potatoes by piercing them with a fork. You want for the potatoes to be soft.
  • Allow the sweet potatoes to sit for 15 minutes before stirring. This will thicken up the sweet potatoes.

CANDIED SWEET POTATOES

Candied Sweet Potatoes image

When Fred Harvey opened his first Harvey House restaurant in 1876 on the railway line in Topeka, Kan., his idea was radical for the time: Railroad passengers would be fed good food in a pleasant environment. His concept was so successful that it spawned 84 restaurants, a Hollywood movie and an official cookbook. And it was in "The Harvey House Cookbook" that we found this excellent recipe for sweet potatoes candied with confectioners' sugar and butter. It is best served warm rather than piping hot, which makes it convenient for big meals like Thanksgiving. Bake it before you roast your turkey, then reheat it briefly just before serving.
