Sweet and Spiced Candied Nuts image

1/3 cup brown sugar, lightly packed
2/3 cup white granulated sugar
1/2 tablespoon Kosher salt
1 teaspoon ground cinnamon
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1 1/2 cups raw cashews
1 1/2 cups raw almonds
1 egg white
1 tablespoon water

Steps:

  • Preheat oven to 300°F. Mix together brown sugar, granulated sugar, salt, cinnamon, cayenne pepper, and paprika in a small mixing bowl until fully combined and mixture is free of lumps.
  • In a separate small bowl, beat together the egg white and water with a whisk until frothy but not stiff.
  • Place almonds and cashews in a medium mixing bowl. Pour egg white mixture over nuts and stir to coat. Sprinkle nuts with the sugar mixture and toss until everything is evenly coated. Spread nuts in a single layer on a baking sheet fitted with a sil-pat or parchment paper. Bake for 30 minutes, stirring a few times throughout the process. Remove from oven. Nuts will harden as they cool. Once completely cool, break apart any pieces stuck together and store in a airtight container at room temperature.
  • Can be made a couple days ahead of time.

These candied spiced nuts are sweet and spicy and the sorta thing friends demolish in minutes at cocktail parties and holiday gatherings yet talk about for months afterward.

1 teaspoon fine sea salt (plus more if needed)
1/4 to 1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon cayenne or smoked paprika
1 pound raw or roasted nuts* ((such as almonds, pecans, hazelnuts, walnuts, cashews, or any combination))
3/4 cup granulated sugar
2 tablespoons cold water
1 sprig rosemary (leaves only, left whole or finely chopped)

Steps:

  • Preheat an oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or a silicone liner.
  • Spread the nuts in a single layer on the baking sheet and roast until aromatic and lightly toasted, 5 to 7 minutes, stirring halfway through. Remove from the oven.
  • In a small bowl, stir 1/2 teaspoon salt with the cumin, cinnamon, ginger, and cayenne or smoked paprika.
  • In a large, heavy skillet, stir the sugar with the water and remaining 1/2 teaspoon salt. Bring the mixture to a boil over medium-high heat, without stirring (you can tilt the skillet a bit to distribute the sugar and to swirl it, but do not stir the contents or the syrup will crystallize). Continue to cook until the sugar turns a medium amber color, 6 to 12 minutes, depending on your stove's exact heat.
  • Working carefully and quickly, stir in half the spice mixture and all the nuts and combine well. Tip the nuts back out onto the still-lined sheet pan and spread out as evenly as you can with a fork. Immediately sprinkle the nuts with 1/3 of the reserved spice mixture. Bake, stirring and flipping the nuts with a pair of forks every 5 minutes or so to keep the nuts coated in the caramel and breaking up any large clumps, 15 to 20 minutes. Each time you stir the nuts, add 1/3 of the remaining spice mixture. The last time you stir the nuts, add the rosemary and additional sea salt, if desired.
  • Let the nuts to cool completely on the baking sheet, then break up any remaining large clusters. Store in an airtight container for up to 1 week.

  • Combine all ingredients in a medium size heavy skillet. Heat over medium-high heat to boiling.

  • Transfer to a non-stick baking sheet; break nuts apart while still warm. Let cool.

1/2 cup blanched whole almonds
1/2 cup whole cashews
1/2 cup roasted, unsalted peanuts
1/2 cup whole pecans
1/4 teaspoon chili powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 tablespoon fresh rosemary leaves, roughly chopped

Steps:

  • Melt the butter and sugar in a large skillet over medium heat and add the salt. Add the almonds, cashews, peanuts, pecans, chili powder, cinnamon, cumin and cayenne.   • Preheat the oven to 250 degrees F. Beat the egg white with 1 tablespoon water in a large bowl until foamy. Add the nuts, sugar, cumin, cayenne, cinnamon and 1/2 teaspoon salt and mix well. Steps:

  • Line a baking sheet with parchment paper.
  • Put the nuts, sugar, water, and salt into a large skillet over high heat. Bring the mixture to a boil, stirring frequently, and cook until the water is nearly evaporated and the liquid becomes syrupy, about 10 minutes.
  • Meanwhile, mix the spices together in a small bowl.
  • After 10 minutes, sprinkle the spices over the nuts and stir well. Continue stirring constantly while the water evaporates completely, about 5 minutes. When there is no longer any sugar syrup left in the bottom of the pan, turn off the heat and stir the nuts vigorously but carefully in the pan until the sugar seizes up and the nuts are evenly coated with crystallized sugar.
  • Turn the nuts out onto the lined baking sheet and spread into an even layer. Cool completely before sifting the excess sugar from the coated nuts and storing in an airtight container.
  • Cook's Note: DO NOT touch the nuts at any time while cooking or just afterward. Cooked sugar is extremely hot and can burn instantly when touched.

Peanut or canola oil
4 cups walnut halves
1 cup confectioners' sugar, sifted
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
Pinch salt, or more to taste
1/4 teaspoon freshly ground black pepper

Steps:

  • In a large, heavy-bottomed skillet, heat about 1-inch of oil to 350 degrees F.
  • Bring a large pot of water to a boil. Add walnuts and blanch for 30 seconds. Drain and transfer nuts to a medium bowl. While nuts are still hot and slightly wet, add confectioners' sugar and toss to coat nuts. Stir and toss until all the sugar has melted into the nuts; if bits of un-melted sugar remain on the nuts, they will not fry properly.
  • Stir the nuts again before frying. Using a large slotted spoon, transfer a few nuts to the hot oil, allowing the foam to subside before adding another spoonful. (Otherwise, the oil could foam over and burn you.) Fry in small batches until the nuts are medium brown, about 45 seconds; be careful not to overcook. Scatter on an unlined baking sheet to cool slightly.
  • In a small bowl, stir together cayenne, cinnamon, a pinch of salt, and pepper.
  • While the nuts are still warm, transfer them to a bowl and sprinkle evenly with about half of the spice mix. Toss well to distribute the spices and then taste a nut. Add more spice mix, to taste, and toss well after each addition. When cool, pack in an airtight jar. They will keep at room temperature for at least 2 weeks.

  • Combine sugar, salt, cinnamon and milk.
  • Cook slowly to soft ball stage (236-240 degF).
  • Remove from heat.
  • Immediately add vanilla and nuts.
  • Stir carefully until coating loses its gloss and is creamy.
  • Turn out on wax paper.
  • and spread out nuts using 2 forks, being careful not to get burned.
  • Cool to room temperature before storing.

8 cups salted mixed nuts
1 ⅓ cups SMUCKER'S® Strawberry Jelly
4 tablespoons paprika

Steps:

  • Combine oil and nuts in a medium bowl; set aside.
  • In a small saucepan, melt SMUCKER'S® jelly over medium heat. Add paprika and cumin. Cook the mixture to the hard ball stage, 260 degrees F measured on a candy thermometer (or you can test for the hard ball stage by dropping a teaspoon of the mixture into a glass of iced water; the mixture will harden instantly if it has reached the proper temperature).
  • Immediately pour the mixture over the nuts. Stir with a wooden spoon to evenly coat the nut mixture. Cool for five minutes. Combine brown sugar, paprika and cumin in a small bowl. Once cool enough to handle, sprinkle nuts with the brown sugar mixture. Stir to combine.

2 cups raw peanuts
1 cup white sugar
⅓ cup water
1 pinch coarse sea salt, or to taste
1 pinch ground cinnamon
1 pinch chili powder

Steps:

  • Grease a baking sheet or line with a silicone mat.
  • Cook and stir peanuts, sugar, and water together in a wide, heavy skillet over medium heat until liquid evaporates and nuts begin to crust with the hardening sugar; about 5 minutes.
  • Reduce heat to low and continue to cook and stir, scraping the bottom of the pan to coat peanuts with syrup as the sugar begins to melt and darken to a deep caramel color, about 10 minutes. Tilt pan away from the heat as needed to allow peanut mixture to darken without burning. Remove from heat immediately when peanuts are deeply bronzed; stir.
  • Sprinkle peanuts with sea salt and cinnamon or chili powder; tilt peanuts onto prepared baking sheet to cool completely. Break up clumps. Store in an airtight container at room temperature for up to 1 week.
