KHMER PICKLED VEGETABLE SALAD

Khmer Pickled Vegetable Salad image

I grew up as a missionary kid in Cambodia, and most of my favorite foods have a Southeast Asian background. Locals love eating this pickled salad for breakfast, but I like it as a side for lunch or dinner, especially with chicken satay. -Hannah Heavener, Belton, Texas

CONFETTI COLESLAW WITH CILANTRO

Confetti Coleslaw With Cilantro image

This recipe is traditionally called "California Cole Slaw", but I made some changes by reworking the recipe. The pretty contrast of colors reminded me of confetti, hence the name. I found the original version "California Cole Slaw" recipe while going through my deceased mother-in-laws recipes. Thought I'd make a couple ingredient changes and wala. Here's the finished product. It is even kid friendly. Hope you enjoy it.

CHICKEN SOTANGHON SOUP

CHICKEN SOTANGHON SOUP image

Chicken Sotanghon Soup is a Filipino-style soup made with bite-sized chicken, cellophane noodles and vegetables in a ginger-flavored broth. This recipe calls for atchuete powder, which this site will not accept as an ingredient, so you can substitute paprika.

Provided by JackieOhNo

Categories     Filipino

Time 55m

Yield 6 serving(s)

Number Of Ingredients 17

1 tablespoon oil
1 onion, peeled and sliced thinly
4 garlic cloves, peeled and minced
1 thumb-size piece fresh ginger, peeled and julienned
1 lb chicken wings, tips removed and cut into 2-inch pieces
1 cup Chinese celery, finely chopped (kinchay)
2 tablespoons fish sauce
7 cups chicken broth
1 teaspoon paprika
1 large carrot, peeled and julienned
salt and pepper
4 ounces cellophane noodles (about 2 coils sotanghon)
1/2 head napa cabbage, shredded
3 -4 hardboiled egg, peeled and halved
green onion, chopped
1/2 cup oil
1 head garlic, peeled and minced

Steps:

  • In a large pot over medium heat, heat oil. Add onions, garlic and ginger and cook until aromatic. Add chicken and cook, stirring regularly, until lightly browned and juices run clear. Add kinchay and cook, stirring regularly, for about 2 to 3 minutes or until limp. Add fish sauce and cook for about 2 to 3 minutes.
  • Add chicken broth and bring to a boil, skimming any scum that floats on top. Lower heat, cover and continue to cook until chicken is cooked through.
  • In a bowl, combine about ½ cup of the hot broth and atsuete powder. Stir until atsuete is dissolved. Add atsuete water to pot.
  • Add carrots and cook for about 1 to 2 minutes or until half done. Season with salt and pepper to taste. Add sotanghon noodles and push down into broth to soften, stirring gently to separate. When noodles have slightly softened, add cabbage and cook for another 2 to 3 minutes or until noodles are cooked and vegetables are tender yet crisp.
  • Ladle soup into bowls and top with boiled eggs, fried garlic bits and green onions. Serve hot.
  • For Fried Garlic Bits: In a small pan over low heat, heat oil. Add garlic and cook, stirring occasionally, for about 10 to 15 minutes or until golden brown. With a slotted spoon, remove from pan and drain on paper towels. Garlic will crisp as it cools.

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 15

2 slices thin top round beef (pounded thin)
2 slices white bread (torn into tiny pieces)
1 teaspoon dried parsley
1/2 cup pine nuts (crushed or minced in food processor)
1/2 teaspoon crushed garlic
2 tablespoons fennel seeds
4 ounces prosciutto di Parma (thinly sliced)
1/2 cup currants or 1/2 cup raisins
1 egg
1/4 teaspoon ground black pepper
1 tablespoon parmesan cheese (grated)
8 slices thin mozzarella cheese or 8 slices Fontina cheese
3/4 cup extra virgin olive oil
3 -4 cups good thick and chunky marinara sauce (I suggest my sauce)
2 teaspoons sugar

Steps:

  • Get butcher to pound the meat thin, or you can have the butcher slice it thin on an electric slicer.
  • If you are getting your meat from a store that does not have a butcher to pound the meat slices thin, then place a slice between 2 pieces of waxed paper and pound it yourself with either a heavy skillet or a mallet.
  • Combine filling ingredients (except mozzarella or fontina and bread) and the prosciutto di Parma and mix together very thoroughly with a spoon or your hands.
  • After the ingredients are mixed together, add the pieces of bread and mix again, lightly.
  • Cut each slice in half to make 4 pieces and top with 2 slices of mozzarella or fontina cheese and 2 slices of the prosciutto di Parma per braciole. Then spread ingredients on top.
  • Fold in the sides and roll them up longways very tightly, as you would an egg roll, securing the rolls with string or wooden toothpicks.
  • Each roll will be about 5 inches long and about 1 1/2 inches thick.
  • Pour olive oil into a large and very hot skillet.
  • Brown beef rolls on all sides in the hot olive oil.
  • Transfer the rolls to a pot and cover with the marinara sauce and then cover with lid and simmer for 30 minutes. I suggest my marinara sauce, recipe #84217.
  • To serve, slice the bracioles crosswise diagonally and also in slightly larger pieces crosswise. You can also serve the bracioles without slicing them. Serve 1 braciole per person.

MAMA'S COUCHE COUCHE

Mama's Couche Couche image

A simple Cajun breakfast delicacy, pronounced "coosh-coosh." Warm cane syrup and café au lait would be appropriate accompaniments. This is home cooking at its best. Recipe from the New Orleans Times-Picayune.

Provided by Jostlori

Categories     Breakfast

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 cups yellow cornmeal
1 1/2 teaspoons salt
1 teaspoon baking powder
2 teaspoons sugar
1 1/2 cups milk
3 -4 tablespoons bacon drippings (or vegetable oil)
cane syrup, to taste

Steps:

  • Combine the cornmeal, salt, baking powder, milk or water in a bowl and mix to blend. The mixture will be like damp sand.
  • Heat the drippings in a cast-iron (preferably) medium-size or large, heavy skillet over medium-high heat. Add the corn meal mixture and allow a crust to form on the bottom, much like you would do to make cornbread.
  • Reduce the heat to medium and cook, scraping the bottom of the pot with a metal spatula to stir and fold the crust, breaking up large lumps, until the mixture is golden brown and resembles crumbled cornbread, about 15 minutes.
  • Serve hot, with cane syrup, or honey drizzled over the top. Maple syrup if you must - LOL!
