2 cups water
½ red onion, finely chopped
6 cups small zucchini, thinly sliced and seeds removed
1 tablespoon finely chopped fresh mint
1 tablespoon finely chopped fresh basil
4 tablespoons extra-virgin olive oil
1 teaspoon lemon juice, or more to taste
½ teaspoon finely grated fresh lemon zest
salt and freshly ground black pepper to taste

Steps:

  • Bring water in a saucepan to a boil, add onion in a sieve and blanch for 1 minute. Remove and rinse under cold running water. Add zucchini to the pot with boiling water and cook for 30 seconds. Drain and put zucchini into a bowl with ice water. Move zucchini around so they cool evenly. Drain well.
  • Combine zucchini, mint, and basil in a large salad bowl. Mix oil, lemon juice, lemon zest, salt, and pepper in a small cup and pour over salad. Mix and refrigerate for 30 minutes.

  • Heat grill. Lay zucchini on large baking sheet and brush both sides with 2 tablespoons of the oil. Sprinkle generously with salt and pepper.

Steps:

  • In the bottom of a medium bowl, whisk together the lemon basil vinaigrette: lemon juice through pepper.
  • Trim both ends of the zucchini and use a vegetable peeler to create long, wide ribbons. I find that it's easiest to place the zucchini flat on a cutting board and peel the vegetable horizontally.
  • Repeat the same process with a cucumber and place both the zucchini and cucumber ribbons in the bowl on top of the vinaigrette.

3 small to medium zucchini, (rinsed and trimmed)
1 pint pear or cherry tomatoes, (halved)
4 tablespoons white wine vinegar
2 tablespoons extra virgin olive oil
1 tablespoon honey
1 tablespoon freshly squeezed lime juice
1/4 cup slivered fresh basil
salt and freshly ground pepper, (to taste)

Steps:

  • Cut the corn off the cob by placing it upright in a deep bowl, and cut down the sides of the cob with a sharp knife.
  • Dice the zucchini into 1/2-inch pieces (leave the skin on) and add it to the bowl. Add the tomatoes, and stir to combine.
  • In a separate small bowl, whisk together the vinegar, olive oil, honey and lime juice. Pour the vinaigrette over the salad and toss to combine. Garnish with fresh basil.
  • Cover the salad with plastic wrap and refrigerate for at least one hour and up to 4 hours until ready to serve. Toss again before serving to re-distribute the dressing. Add salt and freshly ground black pepper just before serving.

2 garlic cloves, peeled

1 cup sun-dried tomato
3 roma tomatoes

Steps:

  • "Zucchini ""Noodles"":.
  • Using a Mandoline Slicer, slice zucchini into thin strips. Marinate ""noodles""in 1/2 teaspoon of salt and 1/2 teaspoon olive oil for 10 minutes.
  • Basil Cashew Cheese:.
  • Drain soaked cashews. Places soaked Cashews, Garlic, Fresh Lemon Juice, Water, Basil, Nutritional Yeast and Salt and Pepper in a high speed blender or food processor and blend until well combined. (Stop and scrape down sides as needed.) Pour into separate bowl and set aside.
  • Tomato Sauce:.

1 medium ripe tomatoes, diced
1/4 small onion, chopped
1 garlic clove
2 tablespoons lemon juice
1/4 cup extra virgin olive oil
4 teaspoons raw honey
2 teaspoons sea salt
1 pinch hot pepper flakes
2 cups packed basil leaves
1/2 cup raw pine nuts
6 tablespoons extra virgin olive oil

Line the bottom of a 9-by-13-inch baking dish with two layers of zucchini slices. Brush the zucchini lightly with olive oil, spread 1/3 of the tomato sauce over it, and top with small dollops of "ricotta" and pesto, using 1/3 of each. Layer on 1/3 of the tomato slices, and sprinkle with 1/3 of the oregano and thyme. Add another double layer of zucchini and repeat twice more with the tomato sauce, pesto, ricotta, tomato slices, and herbs. Serve immediately, or cover with plastic and let sit at room temperature for a few hours. Garnish with basil.
