Steps:
- In heavy saucepan, whisk egg yolks and sugar till thick.
- In another saucepan, bring cream and half and half just to a boil over medium heat. Gradually whisk the hot cream into the egg mixture in a thin stream.
- Cook over low heat, stirring constantly, till custard is thick enough to coat the back of a spoon (about 6 minutes). Do not boil!
- Strain into a bowl; add vanilla and let cool to room temperature
- Cover and refrigerate over-night.
- Pour into freezer and follow directions for your freezer.

VANILLA ICE CREAM
Steps:
- Place the half-and-half and the heavy cream into a medium saucepan, over medium heat. Bring the mixture just to a simmer, stirring occasionally, and remove from the heat.
- In a medium mixing bowl whisk the egg yolks until they lighten in color. Gradually add the sugar and whisk to combine. Temper the cream mixture into the eggs and sugar by gradually adding small amounts, until about a third of the cream mixture has been added. Pour in the remainder and return the entire mixture to the saucepan and place over low heat. Continue to cook, stirring frequently, until the mixture thickens slightly and coats the back of a spoon and reaches 170 to 175 degrees F. Pour the mixture into a container and allow to sit at room temperature for 30 minutes. Stir in the vanilla extract. Place the mixture into the refrigerator and once it is cool enough not to form condensation on the lid, cover and store for 4 to 8 hours or until the temperature reaches 40 degrees F or below.
- Pour into an ice cream maker and process according to the manufacturer's directions. This should take approximately 25 to 35 minutes. Serve as is for soft serve or freeze for another 3 to 4 hours to allow the ice cream to harden.
ROASTED PEARS WITH BROWN SUGAR AND VANILLA ICE CREAM
I came back from the village with a boxful of pears from my father-in-law's orchard and looked for ways to use them up fast. I found this Giada de Laurentis recipe which I loved.

- Arrange the pears cut side up in an 8-inch square glass baking dish. Whisk the apple juice and sugar in a small heavy saucepan over medium-high heat until the sugar dissolves. Whisk in the butter. Pour the sauce over the pears. Bake until the pears are crisp-tender and beginning to brown, basting occasionally with the juices, about 35 minutes.
- Spoon the pears onto plates. Top with ice cream. Drizzle with any juices and serve.
- The pears can also be served frozen. To do so, cool the pears, then place them in the freezer until frozen solid, about 8 hours.

- Gather the ingredients.

- In a large saucepan combine half- and- half, light cream,or milk and brown sugar.
- Cook and stir over medium heat just till brown sugar dissolves.
- Stir about 1 cup of the warm mixture into beaten egg yolks; return all to saucepan.
- Bring to boiling,stirring constantly.
- Reduce heat.
- Boil gently over medium-low heat for 2 minutes, stirring constantly.
- Stir in the whipping cream and the vanilla.
- Cool.
- If desired, stir in pecans or or almonds.
- Freeze in a 4-or 5-quart ice cream freezer according to the manufacturer's directions.

SERIOUS VANILLA ICE CREAM

- Combine all ingredients (including the bean and its pulp) in a large saucepan and place over medium heat. Attach a frying or candy thermometer to inside of pan. (see note below) Stirring occasionally, bring the mixture to 170 degrees F. Remove from heat and allow to cool slightly. Remove the hull of the vanilla bean, pour mixture into lidded container and refrigerate mixture overnight to mellow flavors and texture.
- Freeze mixture in ice cream freezer according to unit's instructions. The mixture will not freeze hard in the machine. Once the volume has increased by 1/2 to 3/4 times, and reached a soft serve consistency, spoon the mixture back into a lidded container and harden in the freezer at least 1 hour before serving.
- NOTE: If you do not have a thermometer, bring the mixture just barely to a simmer. As soon as you see a bubble hit the surface, remove it from the heat. Do not let it boil.

- Preheat oven to 375.
- Butter 13x9x2" glass baking dish.
- Toss apples, 1/4 cup sugar, lemon juice, and lemon peel n prepared dish.
- Whisk flour, baking soda, cinnamon, and remaining 1/2 cup sugar in medium bowl.
- Add butter and egg yolk and rub in with your fingertips until mixture forms moist clumps.
- Sprinkle topping over apples.
- Bake until apples are tender and topping is golden and crisp, about 28 minutes.
- Cool 20 minutes.

- Mix white sugar and cinnamon together in a small bowl.
- Roll out 1 thawed loaf into a large rectangle. Brush half of the melted butter evenly over dough. Sprinkle half of the cinnamon sugar mixture over butter. Roll up dough into a log starting with the long edge closest to you. Cut log into 1-inch slices with a sharp serrated knife. Arrange slices cut-side up in an ungreased 9x13-inch baking pan.
- Repeat step 2 with second thawed loaf.
- Combine brown sugar, vanilla ice cream, and 1/2 cup butter in a small saucepan over medium heat; stir until melted and well-blended, 3 to 5 minutes. Pour caramel mixture over rolls in the baking pan. Cover with aluminum foil and refrigerate until rolls double, 8 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until golden brown, about 30 minutes. Allow to cool in the pan for 10 minutes before serving.

- Combine milk and cream in medium saucepan.
- Bring just to simmer.
- Remove from heat.
- Place sugar in large saucepan.
- Stir over medium heat until sugar melts (some soft lumps will remain) and is deep brown, about 5-7 minutes.
- Stir the sugar continuously while it melts.
- Whisk in hot milk mixture.
- Stir over low heat until caramel bits melt, about 5 minutes (mixture may look curdled).
- Whisk yolks in large bowl to blend.
- Gradually whisk in brown sugar mixture.
- Return mixture to saucepan.
- Stir over low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 5-7 minutes (do not boil).
- Cool.
- Mix in vanilla.
- Puree custard in batches in blender until very smooth.
- Refrigerate until cold, at least 1 hour or overnight.
- Process custard in ice cream maker according to manufacturers instructions.
- Transfer to container; cover and freeze until firm.
