In the southern Mediterranean, savory rice salads are popular and are great for a light summer lunch or supper. The rice is first boiled in well-salted water like pasta and dressed with a zesty vinaigrette. This version is topped with a pile of briefly cooked shrimp, calamari and mussels, and summery ingredients like cherry tomatoes, green beans and basil. The salad is served at room temperature, and most of it can be prepared in advance, so it is exactly what you want when the weather is sweltering.

Number Of Ingredients 18

1 1/2 cups short-grain Italian rice, such as Carnaroli or Arborio
1 large shallot, finely diced
2 garlic cloves, smashed to a paste
3 tablespoons lemon juice
1/2 teaspoon grated lemon zest
1 tablespoon white wine vinegar
2 teaspoons Dijon mustard
1/2 cup olive oil
Salt and pepper
1 small bay leaf
1 sprig thyme
1/2 pound small shrimp, peeled and deveined
1/2 pound cleaned squid, cut in thin rings
1 pound small mussels, scrubbed
1/2 pound slender green beans
1/2 pound cherry tomatoes, halved
Handful of basil leaves, for garnish
2 tablespoons finely cut chives

Steps:

  • Bring a gallon of well-salted water to a boil then add rice. Cook for about 15 minutes (as though it were pasta), until al dente. Drain and spread rice on a platter or baking tray to cool.
  • Make the vinaigrette: In a small bowl, combine shallot, garlic, lemon juice, lemon zest, vinegar and mustard. Let macerate 5 to 10 minutes, then whisk in olive oil. Season with salt and pepper.
  • Cook the seafood: Fill a medium saucepan with salted water and bring to a simmer. Add bay leaf and thyme. Add shrimp and cook for 1 to 2 minutes, until just done, then remove and spread on a plate to cool. Cook squid rings for about 1 minute, then remove and spread on a plate to cool. Finally, simmer mussels in same pot, covered, until shells open, about 2 minutes. Drain and spread on a plate to cool. Remove mussels from shell if desired. (Reserve cooking liquid for another purpose.)
  • Cook the green beans: Boil a small amount of salted water (just enough to cover the beans) in a separate low pot or a skillet. Add green beans and simmer for 2 to 3 minutes, until tender but still firm, then drain and cool.
  • Put rice in a low salad bowl. Dress with half the vinaigrette and season lightly with salt and pepper; toss well to distribute dressing. Combine green beans and cherry tomatoes, then dress with 2 tablespoons vinaigrette, season lightly and scatter over rice. Arrange shrimp, squid and mussels over the top. Spoon remaining vinaigrette over seafood. Garnish with basil leaves (tear larger leaves into pieces) and sprinkle with chives. Serve salad at room temperature.

1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon dried oregano
1 package (8.8 ounces) ready-to-serve brown rice
1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons minced fresh basil or 1 teaspoon dried basil
2 tablespoons lemon juice
1 celery rib, chopped
1/4 cup minced fresh parsley
2 tablespoons chopped green pepper
4 cups fresh baby arugula or baby spinach

Steps:

  • Toss shrimp with oil, garlic and oregano; let stand 15 minutes. Meanwhile, cook rice according to package directions. Transfer rice to a large bowl; cool slightly. For dressing, mix mayonnaise, sour cream, basil and lemon juice., In a large skillet, saute shrimp mixture over medium-high heat until shrimp turns pink, 2-3 minutes. Add to rice; stir in celery, parsley and pepper. Add arugula and toss lightly; serve with dressing.

Prep time includes chilling time.

2 cups shrimp, cooked and peeled (can leave whole or cut in half)

1/4 cup green onion, finely chopped
green olives, chopped (any amount desired)
1 small green bell pepper, chopped

1 package (10 ounces) frozen peas, thawed
3 cups cooked rice
1-1/2 cups chopped celery

3 tablespoons cider vinegar
2 tablespoons brown sugar
1 tablespoon soy sauce
2 teaspoons curry powder
1/2 teaspoon celery seed
1/2 teaspoon salt

Steps:

  • In a bowl, combine the first five ingredients; toss gently. In a jar with a tight-fitting lid, combine the oil, vinegar, brown sugar, soy sauce and seasonings; shake well. 2 cloves garlic, minced
1 2-inch piece ginger, peeled and grated
3 tablespoons toasted sesame oil
1/4 cup rice vinegar
2 tablespoons soy sauce
Pinch of sugar
3/4 pound large shrimp, peeled, deveined and halved lengthwise
1 large carrot, shredded
2 stalks celery, thinly sliced
2 cups snow peas, thinly sliced
1 tablespoon vegetable oil
2 cups cooked white or brown rice
1 bunch scallions, thinly sliced
1/4 head iceberg lettuce, shredded
1 cup mung bean sprouts
1/2 cup chow mein noodles and/or chopped peanuts

Steps:

  • Whisk the garlic, ginger, sesame oil, vinegar, soy sauce and sugar in a large bowl. Transfer 2 tablespoons of the dressing to a medium bowl, add the shrimp and toss. Add the carrot, celery and snow peas to the remaining dressing and toss.
  • Heat a large skillet over high heat and add 2 teaspoons vegetable oil. Add the shrimp and stir-fry until they turn pink, 3 to 4 minutes, then transfer to the bowl with the vegetables. Add 3 to 4 tablespoons water to the skillet and scrape up the browned bits with a wooden spoon, then add the liquid to the bowl with the shrimp. Let the skillet reheat, then add the remaining 1 teaspoon vegetable oil and stir-fry the rice until toasted, about 2 minutes. Remove from the heat and let cool.
  • Add the rice and scallions to the shrimp-vegetable mixture and toss. Divide among bowls and top with the lettuce, sprouts, chow mein noodles and/or peanuts.

JOYCE'S SHRIMP SALAD AND THYME RICE



Joyce's Shrimp Salad and Thyme Rice image

My Mom gave me this recipe when I went to college in 1976 and I still make it today! Also, the rice is wonderful with many dishes like baked fish or lemon baked chicken. I am submitting the recipe as written but there are so many ways to tweak to your taste-I've done it all-including using fresh shrimp, chicken, and veggies. Also, think about adding more veggies to either the salad or the rice ie green peas, kernel corn, grated carrot, chopped squash---really anything you like! Prep time includes chill time for salad which I recommend to be at least 1 hour. This can also be easily expanded to feed a crowd. I still love it after all these years! Enjoy!!!

  • For Rice, melt butter in large skillet and add rice, onion, salt, and pepper. Stir frequently until rice is brown, about 15 minutes.
  • Add wine and cook 4 minutes until wine is reduced.
  • Add hot stock and all other ingredients.
  • Cover and reduce heat. Simmer until rice is tender and liquid has been absorbed, about 30 minutes. (You can also use Minute Rice and reduce cooking time by half.).
  • Serve Shrimp Salad over Thyme Rice or over a bed of salad greens with sliced tomato-hope you like it!

1 cup shrimp, cleaned and cooked
3 cups rice, cooked
1/4 cup celery, diced
1/4 cup pimento stuffed olive, sliced
1/4 cup green pepper, chopped
1/4 cup pimentos, chopped
1/4 onion, minced
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons mayonnaise
3 cups iceberg lettuce
2 tomatoes, cut into wedges
French dressing

Steps:

  • Split each shrimp lengthwise.
  • In a large bowl, combine shrimp, rice, celery, olives, green pepper, pimento and onion.
  • Cover the mixture and chill for at least 30 minutes.
  • Just before serving, stir together salt, pepper, and mayonnaise and toss with the shrimp mixture.
  • Spoon the mixture on top of the lettuce
  • Garnish with the tomato wedges and any leftover shrimp.
  • Serve with the French dressing.

My mother has used this for a stuffing for turkey and cornish hens, but I like to mix in some peas and serve it as a side dish. This is the recipe for the basic stuffing my mother uses.

Yield 4 c cooked thyme rice

Number Of Ingredients 4

4 cups cooked white rice
1 tablespoon ground thyme
1/3 cup butter
1/2 teaspoon garlic salt (optional, I added this after my mother's recipe)

Steps:

  • Mix the butter, thyme and garlic salt into the rice until mixed.
  • As a stuffing: Stuff into cornish hen or turkey and bake until bird is done. I serve the stuffing still inside the hen, but I take it out of the turkey and sometimes bake the rice a bit more for the added crisp. (My family likes crispy rice :) ).
  • To crispify: Throw the bowl into the oven at 350 for 8-10 minutes or until it's slightly crispy on top.
  • As a side dish, I mix as above and add peas and serve. I imagine the rice would work well mixed with other veggies, but we just love our peas so much that it's normally what I add. Trust me and use real butter, and don't omit.
