Steps:
- Preheat oven to 350°F.
- Place water in a saucepan and add frozen vegetables, celery and onion.
- Cook for 5-10 minutes until vegetables become slightly tender.
- Drain vegetables and place in a mixing bowl.
- Add mayonnaise and shredded cheddar cheese to vegetables and mix.
- Place mixture into a casserole dish that has been sprayed with non-stick cooking spray.
- Pour melted butter over vegetables.
- Sprinkle crushed butter flavored crackers over top.
- Bake for 20 - 30 minutes.
- ~NOTE~ The frozen veggies I buy includes carrots, broccoli, and cauliflower.

- Toast the cereal in a large dry skillet over medium-high heat, about 3 minutes. Transfer to a medium bowl; set aside. Add the corn to the skillet and cook until just warmed through, about 3 minutes. Transfer to a large bowl.
- Warm the grains as the label directs and fluff with a fork. Add to the corn along with the beans, tomatoes, scallions, cilantro, lime juice and half each of the sprouts and goat cheese. Add the sesame oil, 2 tablespoons water, 1/2 teaspoon salt and a few grinds of pepper and toss until combined. Stir in half of the toasted cereal and season with salt and pepper. Top each serving of the salad with the remaining goat cheese, toasted cereal and sprouts.

- Make the pickled vegetables:
- Bring vinegar, brown sugar, salt, and 2 cups water to a boil in a large saucepan. Meanwhile, pack vegetables into jars. Pour brine over vegetables. Cover and chill until cool.
- Make the dressing and assemble:
- Whisk buttermilk, yogurt, lemon juice, and 3 Tbsp. oil in a large bowl until smooth; season dressing with salt and pepper.
- Scoop avocados into a small bowl; add 1 Tbsp. oil and lightly mash. Season with salt and pepper. Mash goat cheese with remaining 2 Tbsp. oil in another small bowl until softened and spreadable; season with salt and pepper.
- Add lettuce to dressing and toss to coat; season with salt and pepper. Spread avocado mixture over 4 slices of bread. Arrange lettuce over and top with cucumber, sprouts, and some drained pickles. Spread remaining 4 slices of bread with goat cheese and close sandwiches.
- Do Ahead
- Pickles can be made 2 weeks ahead. Keep chilled.

- In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
- Preheat the grill for high heat.
- Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
- Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

- Grill asparagus, eggplant, zucchini, corn, and meat as desired.
- Suggestion: I put the olive oil in a 9x12 pyrex dish and added the vegs (but for the sake of presentation don't mix together), roasting them under the broiler.
- Put a bed of lettuce on plate,
- On top of that,mound each grilled veg separately around the edges.
- Top with sliced meat, if using.
- add chopped green onion and avo.
- Dress with dijon balsamic dressing (I used a recipe from this site).
