1 pound thin spaghetti (broken into 1 inch pieces)
1 pint cherry tomatoes (chopped in half)
2 zucchini (medium, diced)
1 cucumber (large, diced)
1 green bell pepper (medium, diced)
1 red bell pepper (diced)
1 red onion (large, diced)
2 cans ripe olives (2-1/4 ounces each sliced, drained)
1 bottle Italian salad dressing (16 ounces)
1/4 cup Parmesan cheese (grated)
1 tablespoon sesame seeds
1 teaspoon paprika
1/2 teaspoon celery seed
1/4 teaspoon garlic powder

Steps:

  • Cook the pasta according to package directions. Drain using a colander and rinse in cold water. Add cherry tomatoes, zucchini, cucumber, green and red bell pepper, red onion and olives in a large bowl.

10 ounces frozen vegetables, California-blend (see note)
1/2 cup celery, chopped
1/2 cup yellow onion, chopped
1/4 cup water
1/2 cup mayonnaise
1/2 cup cheddar cheese, shredded
1/4 cup butter, melted
1/2 cup butter flavored cracker, crushed (such as Ritz)

Steps:

  • Preheat oven to 350°F.
  • Place water in a saucepan and add frozen vegetables, celery and onion.
  • Cook for 5-10 minutes until vegetables become slightly tender.
  • Drain vegetables and place in a mixing bowl.
  • Add mayonnaise and shredded cheddar cheese to vegetables and mix.
  • Place mixture into a casserole dish that has been sprayed with non-stick cooking spray.
  • Pour melted butter over vegetables.
  • Sprinkle crushed butter flavored crackers over top.
  • Bake for 20 - 30 minutes.

1 cup unsweetened puffed millet or puffed rice cereal
1 cup frozen fire-roasted corn, thawed
1 13-ounce bag frozen mixed grains (or 1 1/2 cups cooked brown rice)
1 14-ounce can adzuki beans, drained and rinsed
1 cup grape tomatoes, halved
3 scallions, thinly sliced
1/2 cup chopped fresh cilantro
Juice of 2 limes
1 4-ounce container sprouts, bottoms trimmed
1/2 cup crumbled goat cheese (about 3 ounces)
2 tablespoons toasted sesame oil
Kosher salt and freshly ground pepper

Steps:

  • Toast the cereal in a large dry skillet over medium-high heat, about 3 minutes. Transfer to a medium bowl; set aside. Add the corn to the skillet and cook until just warmed through, about 3 minutes. Transfer to a large bowl.
  • Warm the grains as the label directs and fluff with a fork. Add to the corn along with the beans, tomatoes, scallions, cilantro, lime juice and half each of the sprouts and goat cheese. Add the sesame oil, 2 tablespoons water, 1/2 teaspoon salt and a few grinds of pepper and toss until combined. Stir in half of the toasted cereal and season with salt and pepper. Top each serving of the salad with the remaining goat cheese, toasted cereal and sprouts.

For the pickled vegetables:
2 cups apple cider vinegar
1/2 cup (packed) light brown sugar
1/4 cup kosher salt
4 cups any combination shredded carrots, sliced cucumbers, sliced red onions, and/or sliced mild fresh chiles
For the dressing and assembly:
1/4 cup buttermilk
1/4 cup plain whole-milk Greek yogurt
1 tablespoon fresh lemon juice
6 tablespoons olive oil, divided
Kosher salt, freshly ground pepper
2 ripe avocados, halved
6 ounces fresh goat cheese
6 cups mixed lettuce leaves, ribs removed if thick
8 slices multigrain bread, toasted
1/2 English hothouse cucumber, thinly sliced on a diagonal
2 cups sprouts

2 heatproof 1-qt. glass jars

Steps:

  • Make the pickled vegetables:
  • Bring vinegar, brown sugar, salt, and 2 cups water to a boil in a large saucepan. Meanwhile, pack vegetables into jars. Pour brine over vegetables. Cover and chill until cool.
  • Make the dressing and assemble:
  • Whisk buttermilk, yogurt, lemon juice, and 3 Tbsp. oil in a large bowl until smooth; season dressing with salt and pepper.
  • Scoop avocados into a small bowl; add 1 Tbsp. oil and lightly mash. Season with salt and pepper. Mash goat cheese with remaining 2 Tbsp. oil in another small bowl until softened and spreadable; season with salt and pepper.
  • Add lettuce to dressing and toss to coat; season with salt and pepper. Spread avocado mixture over 4 slices of bread. Arrange lettuce over and top with cucumber, sprouts, and some drained pickles. Spread remaining 4 slices of bread with goat cheese and close sandwiches.
  • Do Ahead
  • Pickles can be made 2 weeks ahead. Keep chilled.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add frozen vegetables, cover, and steam until tender, 4 to 6 minutes. Transfer vegetables to a baking dish.
  • Mix mayonnaise, sour cream, onion, and Cheddar cheese in a bowl; pour over vegetables. Stir crackers and melted butter in another bowl and sprinkle over vegetables.

¼ cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
⅛ cup olive oil
1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
½ cup crumbled feta cheese

Steps:

  • In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
  • Preheat the grill for high heat.
  • Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
  • Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

1/4 cup flour
2 cups milk
8 ounces cream cheese
2 (16 ounce) packages frozen broccoli carrots cauliflower mix

Steps:

  • Par-boil frozen vegetables.
  • Melt butter in a saucepan.
  • Whisk in flour, do not brown.
  • And add milk, continue to stir.
  • Dice cream cheese and slowly add to mixture. Do not boil.
  • Continue stirring until mix is smooth.
  • Place vegetables in a greased baking dish.
  • Pour sauce over veggies.
  • Sprinkle cheddar cheese over the top and if you like, you can now add a bread crumb topping.

I had this salad at California Pizza Kitchen in Charlotte NC, and it blew me away! I couldn't find a recipe for it, so here's my attempt at recreating it. I used the ingredient list in their menu (and photo) for inspiration. It can be served without chicken or steak for vegetarian for a very satisfying salad. Posted for safekeeping. Servings are estimated.

1/2 bunch fresh asparagus, cut in 2-inch lengths
1/4 eggplant, cut in 1/2 slices
1 zucchini, halved lengthwise and cut into 1/2 inch slices
1 green onion
2 ears corn, kernels removed or 1/2 lb frozen corn
1/2 head romaine lettuce or 1/2 head red leaf lettuce, chopped
1 avocado, diced
2 tablespoons sun-dried tomatoes, chopped and soaked and drained
1 -2 boneless chicken breasts, seasoned and grilled (optional) or 1 steak, seasoned and seared (optional)
1 tablespoon olive oil

Steps:

  • Grill asparagus, eggplant, zucchini, corn, and meat as desired.
  • Suggestion: I put the olive oil in a 9x12 pyrex dish and added the vegs (but for the sake of presentation don't mix together), roasting them under the broiler.
  • Put a bed of lettuce on plate,
  • On top of that,mound each grilled veg separately around the edges.
  • Top with sliced meat, if using.
  • add chopped green onion and avo.
  • Dress with dijon balsamic dressing (I used a recipe from this site).
  • It makes a beautiful presentation when vegs are separate on the plate, then tossed to eat.
