SWEET AND SPICY CHICKEN DRUMSTICKS
If you like Buffalo wings, you will love these sweet and spicy chicken drumsticks. And, they are baked not fried -- so much healthier! Oh, and did I mention that the sauce is incredible?

Steps:
- Place the drumsticks in a large bowl and sprinkle with the salt.
- Place the bowl in the refrigerator for at least 40 minutes.
- Preheat the oven to 450°F.
- Line a rimmed baking sheet with parchment paper.
- Combine the tapioca starch and buckwheat flour in a shallow dish.
- Roll the chicken in the flour mixture so that it is evenly coated and arrange the coated chicken on the baking sheet so that the pieces are not touching each other.
- Place the chicken in the oven and bake for 45 mins.
- Meanwhile, make the sauce: combine the sriracha, vinegar, molasses, and preserves in a small pot and bring to a boil.
- Reduce the heat to low, and let simmer 20 mins, stirring occasionally.
- When the chicken is cooked through, put it in a large bowl. Pour the sauce into the bowl and toss it all around so that the chicken is completely coated.
- Enjoy!
SWEET AND SPICY CHICKEN DRUMETTES

- In a medium bowl, whisk together the pineapple juice, soy sauce, Marsala wine, brown sugar, sesame oil, garlic, chili powder, and red pepper flakes until the sugar is dissolved. Put the chicken drumettes in a 1-gallon size, resealable plastic bag. Add the pineapple liquid to the chicken and seal removing as much air as possible from the bag. Marinate the chicken for 3 hours in the refrigerator.
- Put an oven rack in the center of the oven. Preheat the oven to 450 degrees F. Line a baking sheet with foil and spray it liberally with vegetable cooking spray.
- Remove the chicken from the marinade and arrange in a single layer on the prepared pan. Season the chicken with salt, to taste, and bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
- Meanwhile, put the marinade into a small saucepan. Whisk in the arrowroot or cornstarch, if using, and bring to a boil over medium heat (in order to kill bacteria). Reduce the heat to a low boil and cook until thick, about 5 minutes. Cool for 10 minutes.
- Using a pastry brush, brush some of the cooked marinade over the chicken or pour it into a small bowl and serve on the side. Arrange the chicken on a platter, sprinkle with chopped cilantro and serve.

- Bring Sriracha, rice vinegar, mirin, and jelly to a boil in a small heavy saucepan over high heat. Reduce heat to medium; simmer, adjusting heat if necessary, until mixture is thick and reduced to 3/4 cup, about 10 minutes. DO AHEAD: Can be made 1 week ahead. Cover; chill. Rewarm before using.
- Place drumsticks in a large bowl and season generously with salt. Cover and refrigerate for 1 hour. Preheat oven to 450°F. Whisk rice flour and cornstarch in a medium bowl. Place a wire rack on a rimmed baking sheet. Using a paper towel, pat drumsticks dry. Dredge in rice flour mixture, shaking off excess. Arrange on prepared rack.
- Roast drumsticks, turning frequently, until skin is browned and crisp, 50-60 minutes. DO AHEAD: Can be made 1 day ahead. Let cool, cover, and chill. Rewarm in a 450°F oven for 10-15 minutes before continuing.
- Combine hot drumsticks and 1/4 cup sauce in a large bowl; toss to coat. Return drumsticks to rack and roast, turning once, until skin is crisp and sauce is beginning to brown, 8-9 minutes. Brush with additional sauce and serve remaining sauce alongside.

SWEET "N" SPICY DRUMSTICKS

Times are estimated but to be honest I would be cutting the honey back to about 2 tablespoons from a 1/2 cup due to diabetic reasons but otherwise happy witht he recipe, he posted as a kids like recipe so servings are for 4-6 kids but I would say 3-4 adults Serve just the drumsticks as an appertizer or at a picnic could be good too.

- Preheat oven to 180°C.
- Mix together hoisin, soy, honey, ginger and garlic and add the chicken drumsticks and toss well to coat.
- Put a sheet of baking paper/parchment onto 1 ot 2 baking trays and place drumsticks on top (in one layer).
- Spoon a little sauce over the top of each drumstick/leg and cook in oven for about 20 to 30 minutes until cooked through, turning once.
- Heat oil in a wok (or large non stick frying pan) and briefly toss snowpeas until tender.
- To serve, mound snowpeas on individual plates and top with chicken, cooking juices and spring onion.

- For sauce~ in a small saucepan, combine preserves, ketchup, soy sauce, garlic and hot pepper sauce.
- Cook and stir over medium heat until preserves are melted.
- Arrange drumsticks in a single layer in 13x9 baking pan.
- Pour sauce over drumsticks, turning to coat.
- Bake uncovered in a 350º oven for 40 to 45 minutes or until chicken is done, spooning sauce over drumsticks once during baking.
- Serve drumsticks over rice.

- Combine all ingredients except chicken stirring to make a paste.
- Place chicken in a large food storage bag, add the paste. Remove the air in the bag and massage chicken until well coated.
- Refrigerate for at least 3 hours or overnight.
- Bake in a moderate (180c) oven for 30 to 40 minutes until the juices run clear and chicken is cooked. Turn occasionally as they cook.
