3 cups chopped cooked chicken
1 cup sliced almonds
1 (8-oz ) can sliced water chestnuts, (drained)
1 (4-oz) jar diced pimentos, (drained)
2 cups chopped celery
1 Tbsp lemon juice
1½ cups mayonnaise
1 cup shredded cheddar cheese
1 (10.75-oz) can cream of chicken soup
1 tsp salt (or to taste)
½ tsp pepper (or to taste)
1 (3-oz) can French fried onions

Steps:

  • Preheat oven to 350ºF. Spray a 9x13x2-inch pan with cooking spray.
  • In a large bowl, combine cooked chicken, almonds, water chestnuts, pimentos, celery, lemon juice, mayonnaise, cheddar cheese, cream of chicken soup, salt, and pepper. Spread into prepared pan.
  • Bake uncovered for 30 minutes. Sprinkle French fried onions on top of casserole and bake an additional 10 minutes.

½ cup slivered almonds
1 cup diced celery
2 cups cooked cubed chicken breast
1 cup mayonnaise
1 cup grated sharp cheddar cheese
1 cup crushed potato chips

Steps:

  • Preheat oven to 350 °F. Spray a 13 by 9 inch baking dish with vegetable oil cooking spray.
  • In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly.

Dressing:
6 tablespoons honey
2 tablespoons Dijon mustard
2 teaspoons olive oil
1 tablespoon rice wine (or apple cider) vinegar
1/2 teaspoon salt
Salad:
3 boneless, skinless whole chicken breasts (about 1 1/2 pounds)
1/4 teaspoon garlic powder
1/4 teaspoon sweet chili powder
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Vegetable oil cooking spray
1 teaspoon olive oil
3 ears of corn, husked
1/2 pound asparagus stalks (about 10), ends trimmed, cut into thirds
3 plum tomatoes, diced
1/2 small red onion, thinly sliced
2 tablespoons pine nuts
3 slices turkey bacon, cooked as directed on package, chopped

Steps:

  • Combine all dressing ingredients in a blender. Sprinkle chicken with garlic and chili powders, salt and pepper. Coat a large skillet with cooking spray. Heat skillet over high heat and add oil. When oil is hot, add chicken. Reduce heat to medium-high and cook for 6 minutes per side, turning halfway through. Reduce heat to low and cover. Cook until chicken is no longer pink inside, 2 to 3 minutes. Cool chicken and slice thinly. Boil corn in a medium saucepan 5 minutes; cool, then cut kernels off cob; place in a bowl. Steam asparagus in 1 inch boiling water 3 minutes; drain and cool 1 minute. Add to bowl along with remaining vegetables. Heat a dry pan over medium heat. Add pine nuts. Cook, stirring often, until toasted, about 6 minutes. Place salad on a platter; top with chicken, bacon, pine nuts and dressing.

2 cups thinly sliced celery
1/2 cup slivered salted almond
1/4 cup pimiento, cut in narrow strips
1 1/4 cups mayonnaise
3 tablespoons lemon juice

1 cup crushed potato chips
1/2 cup grated American cheese
sugar, if needed, to taste

Steps:

  • Toss with a fork; chicken, celery, almonds, piment, grated onion and seasonings.
  • Blend mayonnaise and lemon juice and add to the first mixture.
  • Spread in a greased casserole.
  • Mix grated cheese and potato chips. Sprinkle over casserole.

Even though there are quite a few hot chicken salad, I'm posting this one because it is a little different and I want to know the nutrition information. The recipe calls for real mayonnaise. Do not sub fat free or low fat mayo as it will change the taste of the recipe.
