This is a great recipe for spicy Cajun-style​ pork ribs. Cajun spices and other spices are used-increase or decrease the spices for your taste.

1 rack pork spareribs
2 tablespoons/30 mL salt (use less if necessary)
2 tablespoons/30 mL Cajun seasoning
2 tablespoons/30 mL black pepper
1 teaspoon/5 mL cayenne
1 teaspoon/5 mL white pepper
1 teaspoon/5 mL onion powder
1 teaspoon/5 mL garlic powder
1 teaspoon/5 mL paprika
Louisiana hot sauce and Worcestershire sauce to taste

Steps:

  • Gather the ingredients.
  • Mix the dry ingredients with Cajun seasoning and rub into ribs.
  • Add the hot sauce and Worcestershire sauce to your liking.
  • Let sit overnight.
  • Smoke or grill and serve with your favorite BBQ sauce.

½ rack baby back ribs
3 tablespoons cajun seasoning
1 cup BBQ sauce

Steps:

  • Preheat oven to 250°F (120°C).
  • Rub the Cajun seasoning evenly over the top and bottom of the ribs.
  • Bake for 2 hours, until ribs are tender.
  • Increase oven temperature to 500°F (260°C).
  • Brush the BBQ sauce evenly over the top and the sides.
  • Bake for an additional 15 minutes, until the sauce is bubbly and caramelized.
  • Serve with the extra BBQ sauce!
  • Enjoy!

1 cup hickory smoke-flavored barbecue sauce
1/2 teaspoon hot pepper sauce
1/2 teaspoon ground red pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon celery seed
1/2 teaspoon crushed thyme leaves

Steps:

  • Place ribs aside.
  • Mix remaining ingredients in a medium saucepan, bring to a soft boil.
  • Place in a glass container along with ribs.
  • Marinate for 3 to 4 hours.
  • Wipe grill with olive oil and heat.
  • Place ribs on grill.
  • Grill for 8 to 10 minutes.

1 lb pork spareribs, cut 1/4 pound portions
3/4 cup paprika
6 tablespoons onion powder
6 tablespoons garlic powder
1/4 cup black pepper
3 tablespoons salt
3 tablespoons cayenne pepper
3 tablespoons thyme, crushed
3 tablespoons oregano, crushed

Steps:

  • Place ribs in a pan of boiling water. Simmer, covered 45 minutes and drain.
  • Combine seasonings in a bowl and sprinkle on both sides of warm ribs, rubbing in slightly.
  • Preheat oven to 350°F.
  • Place ribs in a shallow baking pan and bake single layer 45 minutes, until tender and nicely browned.

2 tablespoons celery salt
2 tablespoons ground black pepper
2 tablespoons white pepper
2 tablespoons brown sugar
1 tablespoon garlic powder
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons dried thyme
1 teaspoon dried sage
4 -6 country-style pork ribs (about 4 to 6 10-14 ounce size each)

Steps:

  • Combine seasonings. Rub half of this on ribs the night before you plan to cook them. Refrigerate.
  • Prepare the smoker.
  • Remove ribs from refrigerator 25-30 minutes prior to when you plan on placing them on smoker. Rub in remaining seasoning mixture.
  • Cook on smoker for 2.5 to 3 hours.** They should be done and quite tender with a coating of crispy spices on the suface.
  • **As with all methods of outdoor cooking and variations of fire temperatures, cook according to your particular fire.

2 tablespoons paprika
1 tablespoon kosher salt
1 tablespoon white sugar
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons dried thyme
1 teaspoon dried oregano
1 teaspoon cumin
1 teaspoon ground black pepper
1/2 teaspoon white pepper
1/2 teaspoon cayenne pepper
1 (12 ounce) can beer, at room temperature
1/4 cup butter, melted
2 tablespoons Worcestershire sauce
1 tablespoon liquid crab boil concentrate
1 tablespoon louisiana hot sauce
2 st. louis-cut sparerib racks

Steps:

  • To make the rub, in a small bowl, mix together paprika, salt, sugar, garlic powder, onion powder, thyme, oregano, cumin, black pepper, white pepper, and cayenne pepper. Set aside.
  • To make the liquid seasoning, in a medium bowl, whisk together beer, butter, Worcestershire sauce, liquid crab boil, and Louisiana-style hot sauce. Set aside.
  • Remove membrane from back of each rack of ribs and trim meat of excess fat. Season ribs liberally with rub all over.
  • Fire up smoker or grill to 225°F, adding chunks of smoking wood when at temperature.
  • When wood is ignited and producing smoke, place ribs in smoker or grill, meat side up.
  • Smoke until ribs darken to a deep rusty red color, about 3 hours.
  • Lay each rack of ribs on top of a sheet of extra-large heavy duty aluminum foil; tilt foil edges upward.
  • Pour half of liquid seasoning over each rack of ribs, then seal ribs in foil and place back on smoker or grill for 1 hour.
  • Open one end of foil and pour liquid seasoning into a small bowl and reserve.
  • Remove ribs from foil and place back in smoker and continue to cook until ribs have a slight bend when lifted from one end, 1-2 hours more.
  • Remove ribs from smoker, brush with reserved liquid seasoning. Serve immediately.

  • Preheat oven to 250° F (160° C). With your fingers remove the thin fibrous membrane along the bony side of the ribs if your butcher did not already do so. Rub the ribs all over with cajun seasoning. Coat evenly, tightly wrap the ribs with foil (shiny side out) and place in a large roasting pan or baking sheet.
  • Add the butter and the onions to a medium saucepan on medium heat. Saute onions until just about translucent. If the onions start to brown at any point lower the heat. Add the garlic, BBQ sauce, apple cider vinegar, honey, and black pepper. Whisk to combine and taste and season with salt if needed. Simmer for 5 minutes and then remove from heat. If making ahead of time, cool and then store in the refrigerator until you are ready to use.
  • Baking Method: Preheat (or raise) the oven heat to 350° F. Baste the ribs on both sides with BBQ Sauce and place it on a baking sheet bone-side down with the foil open. Bake for 10 minutes and then baste the meaty side of the ribs with more BBQ sauce. Repeat every 10 minutes. After 50 minutes of total cooking time remove from the oven and serve.
  • When finished cooking, slice the rib racks into 1 or 2 rib portions and serve with a side of warmed BBQ sauce. Enjoy!
