- Grease a large baking sheet with olive oil.
- Slice cabbage, in a top to stem motion, in ½ - ¼" slices (the thinner your slices, the more caramelization you will get).
- Place cabbage steaks onto baking sheet in a single layer.
- Brush each cabbage steak with olive oil, then sprinkle evenly with each spice.
- Roast on center rack of oven at 400 degrees for 45 - 60 minutes (the thicker your cabbage steak, the longer it will take).
- Serve immediately.

- Preheat oven to 400 degrees F. Generously coat a rimmed baking sheet with nonstick spray and set aside.
- Cut off the bottom (root) end of the cabbage and place it on a cutting board sitting up so that the flat end is on the cutting board. Cut top to bottom into 3/4- to 1-inch thick slices. Place on the prepared baking sheet. If you have more slices than fit on your baking sheet without touching, divide them between two baking sheets.
- In a small bowl, whisk together the olive oil, garlic, salt, and pepper. Brush over one side of the cabbage, then flip the cabbage over and brush the other side. Roast the cabbage for 26 to 28 minutes, or until crispy at the edges and tender in the center. (If you are using one pan, roast it on the center rack; if two, use the the upper and lower-third racks.) Halfway through the baking time, rotate the pan(s) 180 degrees; if you are using two pans, switch their positions on the upper and lower racks at this point too. No need to flip the cabbage over. Don't worry about any extra crispy, dark leaves around the very outsides; they'll taste incredible.
- While the cabbage bakes, toast the pecans in the oven at the same time: spread the pecans onto a small, ungreased baking sheet. Toast them in the oven with the cabbage until fragrant and the center of a pecan is light tan when broken in half, about 8 minutes, tossing them once halfway through. DO NOT WALK AWAY during the last several minutes of baking. Nuts love to burn the second you do. Remove the pecans from the oven and transfer immediately to a cutting board (if you leave them on the hot pan and they are super toasted already, they may burn). Let cool, then roughly chop.
- Sprinkle the roasted cabbage with Parmesan and fresh herbs. Squeeze the lemon over the top, then finish with the chopped pecans. Serve hot.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Whisk oil, vinegar, mustard, garlic powder, salt, and black pepper together in a bowl.
- Remove any loose outer leaves from the cabbage. Trim the stem so the cabbage sits flat on a cutting board. Cut vertically into six 3/4-inch-thick "steaks". Place the steaks on a baking sheet.

- Preheat oven to 425°F. Slice 1 cabbage into 1"-thick steaks. Cut the second cabbage in half (if using). Arrange on a large rimmed baking sheet and drizzle with oil. - Place the slices of bacon onto a large, cold pan. Place on the stove and turn to medium-low heat. Fry the bacon for 8-10 minutes, until crispy, flipping as needed.
- Meanwhile, cut the cabbage into 3/4-in (2 cm) thick slices.
- In a large resealable plastic bag, combine the olive oil, lemon juice, sea salt, and black pepper.
- Remove the bacon from the pan and set aside to drain, leaving behind the bacon fat in the pan. Add the minced garlic and saute for about a minute, until fragrant.
- Let the pan with bacon fat cool for 5-10 minutes. When the bacon fat has cooled enough to not melt the plastic, pour the bacon fat (along with the sauteed garlic) into the plastic bag. Scoop any remaining garlic with a spatula and add it in. Seal and mix well to form the marinade.
- Add the sliced cabbage steaks to the marinade bag. Coat well. Refrigerate for at least 30 minutes.
- Preheat the grill at medium heat.
- Grill cabbage steaks for about 4-8 minutes on each side, until tender and crispy on the edges.
- To serve, top with cooked bacon and parsley for garnish (optional).
- Preheat the oven to 425 degrees F (218 degrees C).

- Slice off bottom inch of cabbage at stem end.
- Remove one layer of leaves and discard.
- Carefully remove remaining leaves until you get to smaller central ones.
- Reserve smaller leaves for another use.
- You should have about 12 large leaves.
- Place one leaf on work surface.
- Top with another leaf facing the opposite direction, that is, with cut end at leafy end.
- Dust with pinch of sea salt.
- Continue stacking leaves, alternating their direction, and dusting every second leaf with salt.
- Place stack four inches from end of a 16-inch sheet of foil.
- Lift end of foil over stack of leaves and tightly roll, wrapping the foil as you go.
- Be careful that foil is wrapped around only the outside of cabbage roll.
- Tightly tie roll with butcher's cord at 1 1/2- to 2-inch intervals.
- You should be able to make 6 ties.
- Use large knife to slice about 1/2 inch from ends of roll, so cut sides are smooth.
- Then slice roll in sections between cord.
- You should have 6 thick rounds of cabbage, each wrapped in foil and tied.
- Preheat oven to 250 degrees.
- Heat 1 tablespoon olive oil in skillet large enough to hold rolls, a cut side down, in single layer.
- Cook rolls over medium-low heat until lightly browned on bottom and steam rises from center, 5 to 8 minutes.
- Turn rolls and cook on other side until lightly browned.
- Remove rolls to baking dish and place in oven.
- While cabbage is cooking, mix yuzu juice, soy sauce and grapeseed oil together and set aside.
- Place remaining olive oil in skillet.
- Add mushrooms and sauté over medium-high heat until softened and lightly browned.
- Remove from heat.
- If not serving dish immediately, place mushrooms in small baking dish in oven to keep warm.
- To serve, remove cabbage from oven and, keeping rolls standing on a cut side, transfer to serving dish or put each on a salad plate.
- Snip cords and carefully remove foil.
- Cabbage rolls should hold together neatly.
- Sprinkle cabbage rolls with bonito flakes.
- Toss mushrooms with yuzu mixture, place a few mushroom pieces on top of each cabbage roll and serve.
GRILLED CABBAGE STEAKS WITH CILANTRO-LIME SAUCE

- Prepare a grill for medium heat. If using wooden skewers, soak them in water for 15 minutes.
- Combine 1 1/2 cups of the cilantro, 1 1/2 cups of the parsley, the garlic, jalapeño, lime juice, rice vinegar, honey and 1/2 teaspoon salt in a blender and blend on high until smooth. With the blender running, drizzle in the oil in a slow stream to make a very smooth sauce. Transfer to a serving bowl and season with more salt, if needed.
- Remove any loose leaves from the exterior of the cabbage and set it on its stem end. Cut a thin piece off one side of the cabbage to make it flat; then slice a thin piece off the other side of the cabbage. (Reserve the pieces for another use.) Slice the cabbage vertically to make 4 thick steaks, each about 3/4- to 1-inch thick.
- Lay the steaks on a baking sheet and stick a skewer horizontally through any that are not holding together. Brush both sides of the steaks with olive oil and sprinkle with the lime zest, ancho powder and 1 teaspoon salt.
- Grill the steaks, covered, moving them occasionally so they cook evenly, until charred and crisp-tender, 6 to 7 minutes per side. Transfer to a serving platter, brush the tops lightly with olive oil and remove any skewers you used.
- Coarsely chop the remaining 1/2 cup cilantro and 1/2 cup parsley. Drizzle about half of the sauce over the cabbage. Sprinkle with the herbs and red onion and serve the remaining sauce on the side.
