BEET AND CABBAGE SALAD



Beet and Cabbage Salad image

Grated beets and thinly sliced cabbage are tossed with a sweet and sour caraway vinaigrette.

Number Of Ingredients 8

8 ounces beets, peeled
1/4 small red cabbage, thinly sliced (about 2 cups)
1 teaspoon caraway seeds
2 tablespoons olive oil
2 tablespoons red wine vinegar
1/4 teaspoon sugar
Kosher salt and freshly ground black pepper
2 tablespoons 1/2-inch long chopped chives

Steps:

  • Grate the beets on the large holes of a box grater into a large bowl. Add the cabbage and set aside.
  • Heat the caraway seeds in a small skillet over medium heat, swirling, until toasted and fragrant, 1 to 2 minutes. Add the oil, vinegar and sugar and stir until the sugar melts. Pour over the beet mixture. Season with salt and pepper. Sprinkle the chives over top.

3 to 4 medium beets (use a combination of red and golden beets, if desired - see note)
1/2 cup whole baby carrots (or peeled and coarsely chopped carrot)
1/4 medium head red cabbage
Juice of 1/2 to 1 lemon (to taste)
2 tablespoons agave nectar or pure maple syrup (or to taste)
1 to 2 tablespoons minced fresh dill (or 1 teaspoon dried)
Pinch of salt
Freshly ground pepper to taste

Steps:

  • Grate the beets and carrots in a food processor using a medium-coarse grating blade.
  • Cut the cabbage into chunks small enough to fit through your processor's feed tube and grate with the same blade.
  • Combine the grated beets and cabbage in a serving container and dress to taste with the lemon juice and syrup. Stir well, then add the dill and salt and stir again.
  • Let the salad stand for at least 15 minutes or so before serving. Taste again and adjust the lemon and sweetener if needed, then serve.

6 medium beets, trimmed
1/2 cup apple cider vinegar
1/3 cup sugar
2 tablespoons whole grain Dijon mustard
1 1/2 teaspoons caraway seeds
2/3 cup corn oil
8 cups thinly sliced red cabbage (about half of large head)
2/3 cup chopped onion
1/4 cup (packed) chopped fresh dill
Lettuce leaves
3 large carrots, peeled, coarsely grated (about 3 cups)

Steps:

  • Preheat oven to 400°F. Wrap beets in foil, enclosing completely. Bake beets until tender, about 1 hour 15 minutes. Cool. Peel and coarsely grate beets. Whisk vinegar, sugar, mustard and caraway seeds in large bowl to blend. Gradually whisk in oil. Add cabbage, onion and grated beets to dressing and toss to coat. Let stand 45 minutes, tossing occasionally. Stir in dill. Season generously with salt and pepper. Line large bowl with lettuce. Mix 2 1/2 cups carrots into cabbage mixture. Spoon salad atop lettuce in bowl. Sprinkle remaining grated carrots over and serve.

1/4 cup red wine vinegar
2 tablespoons honey
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 cup olive oil
4 cups beets, boiled until tender, through a rouet, and pressed in paper towels
2 cups jicama, peeled and cut into sticks
3 cups fennel, cored, halved, and sliced with mandoline
1/4 cup grated onion
1 Asian pear, halved, cored, and sliced with a mandoline
2 tablespoons lemon juice
6 ounces goat cheese, crumbled

Steps:

  • In a small bowl combine the red wine vinegar, honey, black pepper, and salt. Slowly, while whisking add the oil until the mixture is emulsified. Combine all vegetables and let drain in a colander. Combine vegetables and dressing then toss with the lemon juice and goat cheese.

2 medium heads of cabbage (5-6 lb total)
3 medium beets (1 lb)
3 large garlic cloves
2 cups filtered water
1 1/4 cup oil (I used light olive oil)
1 cup white vinegar
1 cup of granulated sugar
2 Tbsp sea salt (best if it's not iodized)

Steps:

  • In a medium sauce pan, combine all marinade ingredients: 2 cups filtered water, 1 1/4 cup light olive oil, 1 cup vinegar, 1 cup sugar, and 2 Tbsp sea salt. Bring to a boil then remove from heat and cool to room temperature.
  • Finely shred cabbage (this is much easier with a mandolin and be sure to use safety gloves to protect your fingers) and transfer to your largest mixing bowl. Grate beets or cut them into matchsticks (we love this julienne slicer), then transfer to your mixing bowl. Finely dice garlic cloves and add them to the mixing bowl.
  • Pour cooled marinade over your chopped ingredients and stir to combine. Create a press to weigh down the cabbage enough to bring the marinade to the surface of the cabbage. We used a large dinner plate and a covered bowl with water for the weight. Refrigerate or let this stand in a cool room for 7-10 hours or overnight. We set it next to an AC vent.
  • Transfer salad to a large glass jug for easier storage in the fridge and keep refrigerated until ready to serve.This salad holds well in the refrigerator for about a week.

  • Preheat oven to 375°F. Wrap beets in foil. Bake until tender when pierced with knife, about 1 1/2 hours. Cool. Peel beets. Cut into 2 x 1/4 x 1/4-inch strips. Place in medium bowl.
  • Place cabbage in large bowl. Combine cider vinegar, Dijon mustard, grated orange peel and honey in small bowl. Gradually beat in oil. Add caraway seeds. Pour enough dressing over beets to coat. Pour remaining dressing over cabbage and mix. Season both salads with salt and pepper.
  • Arrange cabbage around edge of platter. Mound beets in center. Garnish with basil and serve.

1 1/2 cups chopped red onions
2 medium beets, grated
1 cup chopped fresh parsley
1/4 cup red wine vinegar
1/2 cup water
2 tablespoons brown sugar
1/2 teaspoon salt
1/3 cup chopped fresh dill
3 tablespoons chopped fresh chives
1/2 cup low-fat sour cream
salt & freshly ground black pepper

Steps:

  • Combine vegetables and parsley in a large bowl.
  • In a saucepan, combine vinegar, water, sugar and salt. Bring to a boil, stirring until sugar is dissolved.
  • Pour over vegetables and toss.
  • Add dill and chives and mix in well.
  • Cover and marinate overnight.
  • Stir well. Just before serving, drain off excess liquid.
  • Stir in sour cream and salt and pepper to taste.
