Steps:
- Preheat the oven to 350F.
- Place 1 pie crust in ungreased 9-inch pie plate.
- Press firmly against side and bottom. Place in refrigerator to keep chilled.
- For the butterscotch sauce - in a small saucepan, stir 3/4 cup of the brown sugar with the half-and-half over low to medium heat until the sugar dissolves. Add the butter and vanilla, stirring until butter melts.
- Remove from heat and set mixture aside to cool completely.
- In a medium bowl, toss the apple wedges with the lemon juice.
- Add the remaining 1/4 cup brown sugar, cornstarch, lemon zest, cinnamon, allspice and nutmeg. Toss to combine well.
- Remove pie plate with pie shell from the refrigerator.
- Sprinkle 1 teaspoon flour onto the bottom of the unbaked pie shell.
- Scoop apple mixture onto the sprinkled flour.
- Pour the cooled butterscotch mixture evenly over the apples.
- Cover with top crust; pinch the 2 crusts together, fold the dough under itself so the edge of the fold is against the edge of the pie pan.
- Make several slits in top crust to allow steam to escape.
- Bake for about 45 minutes or until golden brown and the juices are bubbling. Cool completely on a wire rack before serving.

- Preheat oven to 375 degrees F.

- Mix together apples and lemon juice in a large bowl.
- In a small bowl, mix together sugar, flour, cinnamon, and salt; pour over apples, coating apples well.
- If using frozen pie shell, use deep-dish type, and bake on cookie sheet for 10 minutes to thaw.
- Pour apples into pie shell.
- Cover edges of pie crust with aluminum foil to prevent burning.

I found this on rampantscotland.com an interesting and informative web site, and tried this on my family last night. Very good and easy. Especially when using ready prepared pie crust and sliced, tinned or frozen apples. A thin layer of plum jam and a meringue topping make this pie different, and extra good. Prep time is determined by whether or not you use fresh or tinned/frozen apples.

- You can use a ready-prepared pastry flan case or make your own. I recommend Recipe #148258.(I would like to mention that on rampantscotland.com, most pie crust recipes are made with half lard, half butter. Seems to be another scottish touch, which I like).
- Peel and thinly slice the apples to fill the case completely.
- Beat together one egg and two tablespoon of cream. Mix this with the brown sugar, flour and pinch of salt.
- Spread this mixture over the apples and bake in a preheated oven at 220C/425F/Gas mark 7 for ten minutes. Then reduce the heat to 180C/350F/Gas mark 4 for a further 20 minutes or so, until the apples are soft.
- Make a meringue topping by placing two egg whites in a dry bowl and beat with an electric whisk/mixer until firm peaks form. Add the white sugar gradually, beating constantly until the mixture is thick and glossy and all the sugar has dissolved.
- Spread the plum jam over the apples and then spoon the meringue over the filling. Swirl into peaks with a fork or flat-bladed knife.
- Bake for a further 20 minutes or so until the meringue is lightly golden.(watch kind of closely, I've burned meringues by following these directions excactly because ovens vary) Serve cold.

I've been making this wonderful pie for years. It's so easy and tasty. Everyone wonders what's in it. This pie can bake while you eat dinner and then, voila...hot apple pie for dessert. Yum! UPDATE: I've been asked if instant pudding mix is OK--yes! When the recipe was published there was no instant; tried the instant in it--works fine! LOL

- In mixing bowl, combine apples and pie/pudding (DRY) mix; toss to coat well.
- Place apple mixture in unbaked pie crust.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
- Mix together flour, cinnamon, baking soda and salt in medium bowl.
- Beat brown sugar and 1/2 cup butter in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture alternately with apple juice. Stir in 1 1/2 cups butterscotch chips, apple and 1/2 cup walnuts. Drop by slightly rounded tablespoon onto lightly greased cookie sheets.
- Bake for 10 to 12 minutes, until lightly browned. Let stand 2 minutes; cool on wire racks.
- While the cookies cool make the butterscotch glaze: Melt remaining butterscotch chips and 2 tablespoons butter in small, heavy saucepan over lowest possible heat.
- When the butter and chips have melted remove the pan from heat and stir in 1 cup confectioners' sugar and 1 1/2 tablespoon apple juice until the glaze is smooth. Spread the glaze on the cooled cookies and sprinkle with remaining walnuts.

- Preheat an oven to 375 degrees F (190 degrees C). Grease the bottom of a 9 inch square baking dish.
