CRISPY GRILLED FETA WITH SAUCY BUTTER BEANS



Crispy grilled feta with saucy butter beans image

Stuck in a food rut? Grab a can of butter beans, some feta and passata to make this super-speedy and super-tasty supper. Full of goodness, it's healthy too

500ml passata
2 x 400g cans butter beans , drained and rinsed
2 garlic cloves , crushed
1 tsp dried oregano , plus a pinch
200g spinach
2 roasted red peppers , sliced
1⁄2 lemon , zested and juiced
100g block of feta , cut into chunks
1⁄2 tsp olive oil
4 small pittas

Steps:

  • Put a large ovenproof frying pan over a medium-high heat, and tip in the passata, butter beans, garlic, oregano, spinach and peppers. Stir together and cook for 6-8 mins until the sauce is bubbling and the spinach has wilted. Season, then add the lemon juice.
  • Heat the grill to high. Scatter the feta over the sauce, so it's still exposed, drizzle with the olive oil and sprinkle over the lemon zest plus a pinch of oregano, then grind over some black pepper. Grill for 5-8 mins until the feta is golden and crisp at the edges.
  • Meanwhile, toast the pittas under the grill or in the toaster, then serve with the beans and feta.

400g green beans , trimmed and halved
3 tbsp olive oil
2 x 400g can chickpeas , rinsed and drained
1 garlic clove , roughly chopped
7 sundried tomatoes in oil, drained
2 whole roasted red peppers from a jar
1 tbsp sherry vinegar
200g pack feta cheese , broken into chunks

Steps:

  • Heat oven to 200C/180C fan/gas 6. Spread the beans onto a baking tray, season and drizzle over 1 tbsp oil. Roast for 10 mins until lightly charred. Tip into a bowl with the chickpeas.
  • In a food processor, make a dressing by whizzing together the garlic, sundried tomatoes, peppers, vinegar and the remaining oil. Season, stir into the beans with the feta and serve.

4 tomatoes
4 tablespoons olive oil
1 lemon, juice of
28 ounces canned butter beans or 28 ounces lima beans, drained
1/2 cup pitted ripe black olives
1 small red onion, sliced thin
1 1/2 cups feta cheese, crumbled
fresh parsley
salt
pepper

Steps:

  • Chop one tomato and place in food processor or blender.
  • Add the olive oil and juice from the lemon.
  • Process until smooth.
  • Cut the remaining three tomatoes into nice bite size wedges.
  • Place the drained canned beans and tomato wedges , olives, onion slices, feta cheese, and fresh roughly chopped parsley salt and pepper in a serving bowl or platter.
  • Toss in the tomato dressing.
  • Serve with toasted crusty roll, or pita bread is nice too.

I had to make this salad two days in a row. When I got home from work yesterday, my husband asked me where I'd hidden the leftovers from the night before because he wanted them for lunch. Well, I'd taken them with me for MY lunch -- so I made another batch last night to go with our chili. The night before that I'd served it with shredded chicken Bobbie-Q (see my recipes) over mashed potatoes. There was a bit left over last night -- and I made sure to leave it for my husband. I brought peanut butter & a cucumber for my lunch instead. *sigh* Anyway, if you do have any of this salad left, use it by the next day.

175g frozen broad bean
4 tbsp olive oil
1 shallot , finely chopped
1 garlic clove , sliced
2 sprigs fresh rosemary , leaves removed and roughly chopped
8 small cooked beetroot , quartered
140g bag mixed salad leaf
4 tbsp raspberry or red wine vinegar
2x blocks feta cheese , cut into cubes

Steps:

  • Cook the broad beans according to packet instructions, then drain and refresh them in cold water. If you've got the time, peel the skins off the beans with your fingers - this is a fiddly job, but it's worth the effort because the skins can be quite tough.
  • Heat 2 tablespoons of the olive oil in a frying pan. Add the chopped shallot and sliced garlic and fry for a minute or two over a medium heat until pale golden. Stir in the chopped rosemary, then tip in the beetroot quarters and stir gently for 3-4 minutes, so the flavours mingle in the heat. Remove from the heat and leave to cool.
  • Lift out the beetroot quarters and put them into a bowl together with the salad leaves. Stir the vinegar and the remaining olive oil into the pan juices, then pour over the beetroot and salad leaves. Toss gently to mix through. Finally, just before serving, toss in the broad beans and cubes of feta cheese and taste for seasoning.
