These sandwiches, which are inspired by Philly cheese steaks, are made with beef marinated in classic Korean barbecue flavors. Tender rib-eye steak is thinly sliced and pounded to mimic the texture of shaved meat, then tossed in a savory garlic-soy marinade. Thin-skinned shishito peppers, a common ingredient in Korean cuisine, stand in for traditional bell peppers. Shishito peppers vary in spiciness, so once blistered, they will add mild, or sometimes bold, heat to the sandwiches. Rib-eye creates the juiciest sandwiches, but sirloin is more affordable, and a solid substitute.

1 1/2 pounds boneless rib-eye steak, sliced crosswise 1/8-inch-thick
1/2 cup low-sodium soy sauce
1/2 cup coarsely chopped scallions (from about 6 large scallions)
3 tablespoons turbinado sugar
2 tablespoons minced garlic
1 teaspoon black pepper, plus more for seasoning
1/2 teaspoon toasted sesame oil
1/2 cup safflower or canola oil
1 large yellow onion, halved and sliced 1/4-inch-thick (about 2 cups)
8 ounces shishito peppers, stemmed and halved lengthwise
Kosher salt
4 (10-inch) hoagie rolls, split lengthwise
8 slices American cheese

Steps:

  • Arrange meat in a single layer on a large cutting board. Cover with plastic wrap and pound with a meat mallet (or the bottom of a small skillet) until meat is super thin, about 1/16-inch thick.
  • In a large bowl, combine soy sauce, scallions, sugar, garlic, pepper and sesame oil. Add meat and toss to evenly coat, massaging sauce into meat.
  • In a large skillet, heat 1/4 cup of the safflower oil over medium. Add onion and shishito peppers, and season with salt and pepper. Cook, stirring occasionally, until tender and lightly caramelized, 8 to 10 minutes. Divide among the rolls.
  • In the same skillet, heat 2 tablespoons safflower oil over medium. Add half of the beef and season with salt and pepper. Cook, stirring to break up the meat, until golden brown and cooked through, about 3 minutes.
  • Form into 2 even mounds and top each mound with 2 slices of cheese. Remove from heat and let stand until cheese melts, about 1 minute. Using a flat spatula or large serving spoon, scoop into 2 rolls and drizzle with pan juices. Wipe out skillet with paper towels. Repeat with remaining safflower oil, beef and cheese to make 2 more sandwiches.

450g very thinly sliced beef bulgogi meat (sold at Asian supermarkets), or sirloin
3 tbsp dark brown sugar
1 small unpeeled firm but ripe pear , grated (optional)
3 tbsp soy sauce
1 ½ tbsp toasted sesame oil
2 tbsp vegetable oil
5 garlic cloves , grated or crushed
1 ½ tsp grated ginger
1 ½ tbsp roasted crushed sesame seeds
1 small onion , thinly sliced
4 white button mushrooms , sliced
1 small carrot , julienned or chopped into fine matchsticks (see tip)
4 chives , snipped
1 tbsp black sesame seeds
1 tbsp toasted sesame seeds

Steps:

  • In a shallow dish, combine the beef, sugar and pear (if using) thoroughly, and leave to sit for 30 mins at room temperature. Meanwhile, in a large bowl, mix the soy sauce, sesame oil, 1 tbsp of the vegetable oil, the garlic, ginger and sesame seeds to make a marinade, and set aside.
  • When the beef is ready, squeeze out any excess sugary liquid, then add the beef to the marinade. Toss to coat, cover and marinate at room temperature for 30 mins. Can be marinated for longer, or left overnight in the fridge.
  • In a large frying pan or wok, heat the remaining vegetable oil over a medium heat. Add the onion and cook for 6-8 mins until softened. Add the mushrooms and carrots, and cook for 5 mins until slightly softened. Raise the heat to medium-high, add the beef and marinade, and cook for 4-5 mins, stirring occasionally, until the meat is browned. Transfer to a platter and sprinkle with the chives and sesame seeds.

¼ cup soy sauce
1 tablespoon brown sugar
1 tablespoon fish sauce

Steps:

  • Slice steak across the grain as thinly as possible. Add soy sauce, brown sugar, fish sauce, ginger, sesame oil, chile paste, sesame seeds, and garlic to a large bowl. Mix well. Add steak and marinate for 1 hour in the refrigerator, or up to overnight.
  • Preheat the oven to 450 degrees F (230 degrees C). Remove steak from the refrigerator and bring to room temperature.
  • Spray a sheet pan with cooking spray. Arrange onion and sugar snap peas on one side. Drizzle with enough olive oil to coat. Season with salt and pepper. Gently shake excess marinade off the steak and place on the other side of the pan.
  • Bake in the preheated oven until steak is slightly charred on the edges, 10 to 12 minutes. Garnish with green onions.

1/4 cup rice vinegar
1 to 2 tablespoons gochugaru
1 to 2 tablespoons toasted sesame seeds
1 tablespoon fish sauce
1 teaspoon kosher salt
1/2 cup brown sugar
1/4 cup soy sauce
2 tablespoons grated ginger
1 tablespoon fish sauce
2 cloves garlic, minced
One 1 1/4-inch-thick boneless New York strip steak (about 1 pound)
Canola oil, for brushing
2 cups rice flour
1/2 cup all-purpose flour
2 cups soda water
Kosher salt
4 russet potatoes, peeled and sliced into 1/4-inch-thick fries
2 carrots, julienned
2 scallions, thinly sliced on the bias
1/2 small head Napa cabbage, thinly sliced crosswise

Steps:

  • For the steak: In a resealable plastic bag, combine the brown sugar, soy sauce, ginger, fish sauce and garlic. Add the steak, toss to coat and refrigerate for at least 2 hours.
  • For the fries: Preheat a deep fryer to 375 degrees F. Line a sheet pan with a cooling rack or paper towels.
  • In a large bowl, combine 1 cup of the rice flour and the all-purpose flour. Add the soda water and whisk to combine. In a separate dish, combine the remaining 1 cup rice flour and 1 tablespoon salt. Working a few at a time, dredge the potatoes in the rice flour then the tempura batter. Shake off any excess batter and carefully place the fries in the fryer; cook until golden brown and tender, about 8 minutes. Transfer the fries to the prepared sheet pan and season with salt. Set aside, and repeat for the remaining fries.
  • Preheat a grill or grill pan to high heat and preheat the oven to 375 degrees F.
  • Remove the steak from the marinade and brush with some canola oil. Place on the grill and cook for about 5 minutes per side. Transfer the steak to a sheet pan and finish cooking in the oven until medium rare, 7 to 10 minutes. Transfer the steak to a cutting board and rest for at least 5 minutes, tented with foil.
  • For the slaw: In a large bowl, combine the carrots, scallions and cabbage. In a separate bowl, combine the agave, vinegar, gochugaru, sesame seeds, fish sauce and salt. Add enough dressing to lightly coat the vegetables. Reserve the remaining dressing for another use.
  • Slice the steak, and then serve with the kimchi slaw and tempura fries.

1/4 cup soy sauce
2 tablespoons sugar
2 tablespoons Asian (dark) sesame oil
2 tablespoons rice wine or sherry
4 cloves garlic, finely chopped
4 scallions, minced
1-inch piece of fresh ginger, peeled, crushed and finely chopped
1 tablespoon sesame seeds, toasted
Freshly ground black pepper
1 head red leaf lettuce, separated into leaves, washed and dried
Sliced green chilies
Whole peeled and sliced garlic cloves
Bean paste
Pepper paste
White rice

Steps:

  • Score the meat, if necessary, and place between two pieces of plastic wrap, pound lightly with meat pounder, lightly, to tenderize. Slice the meat on the diagonal into thin strips. Place the meat in a shallow non-reactive baking dish. In a large bowl combine the marinade ingredients and pour them over the meat, mixing well. Cover and marinate in the refrigerator for 1 to 2 hours. Preheat the grill. Remove the meat from the marinade. Over high heat grill for 1 to 2 minutes on each side, until meat is nicely browned. Alternately, the meat may be cooked in a very hot frying pan. Wrap a few pieces of beef in a lettuce leaf and all or any of the garnishes. Eat at once.;
  • Julienned scallions mixed with chopped red leaf lettuce, red pepper flakes, sesame oil, soy sauce, rice vinegar, black pepper .

Neobiani, a dish of broad, thin slices of beef tenderized with shallow slits from a knife, was a feature of royal court cuisine during the Joseon dynasty in Korea (1392 to 1910) and a predecessor to today's beloved bulgogi of very thinly sliced marinated grilled meat. This variation borrows from neobani, but doesn't require knife skills: Well-marbled skirt steak is pounded thin and marinated in a tenderizing sweet purée of Asian pear, onion, soy sauce and maple syrup. Bulgogi, which means "fire meat," is best with the flame-licked char from a grill, but a hot skillet on the stovetop would work in a pinch.

1 medium Asian pear or Fuji apple (about 8 ounces), peeled, cored and chopped
1 cup chopped yellow onion, plus 1 large yellow onion, cut into ½-inch-thick rounds
10 large garlic cloves, peeled
1 (2-inch) piece fresh ginger, peeled and chopped
1/4 cup soy sauce
1/4 cup maple syrup
2 tablespoons granulated sugar
Kosher salt (Diamond Crystal) and black pepper
2 bunches scallions
Neutral oil, such as vegetable or canola, for grilling
Steamed white rice, for serving

Steps:

  • On a large cutting board, pound the steak until it is 1/8-inch thick using a meat mallet or heavy skillet. Transfer to a large bowl.
  • In a food processor or blender, blitz the pear, chopped onion, the garlic, ginger, soy sauce, maple syrup, sugar, 1/2 teaspoon salt and 1 teaspoon pepper until smooth. Pour the wet mixture over the steak, cover tightly and marinate in the refrigerator for at least 1 hour and up to 24 hours.
  • When ready to cook, prepare a charcoal grill for direct high-heat cooking, or heat a gas grill to high. On a sheet pan, coat the sliced onions and the scallions with 1 tablespoon oil and season with salt and pepper.
  • Carefully grease the grill grate: Use tongs to grip a wadded paper towel dipped in oil and then rub the grates with the oiled towel. Wipe off any marinade clinging to the steaks and place the steaks on the hot, greased grate, along with the onion rounds and scallions. Grill the steak until charred and caramelized at the edges, 2 to 4 minutes per side. Grill the onions and scallions until charred but still crisp, 1 to 2 minutes per side. If using a gas grill, close the lid between flips. Discard any remaining marinade. (See Tip for stovetop method.)
  • Arrange the steaks on a large platter, and top with the grilled onions and scallions. Serve family-style with steamed rice.
