2 - 4 oz swai filets
1/2 cup seasoned bread crumbs
2 T butter
2 T lemon juice

Steps:

Melt butter in shallow dish. Stir in lemon. Dip fish filets in butter/lemon and dredge through bread crumbs. Place filets in baking dish sprayed with pan spray. Bake at 350 for 20 minutes.

½ cup butter
1 lemon, juiced
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon dried parsley
3 cloves garlic, minced
6 (4 ounce) fillets cod
2 tablespoons lemon pepper

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Melt the butter in a medium saucepan over medium heat. Mix in lemon juice, salt, pepper, parsley flakes, and garlic. Bring to a boil. Cook and stir about 10 minutes, until thickened.
Arrange cod fillets in a single layer on a medium baking sheet. Cover with 1/2 the butter mixture, and sprinkle with lemon pepper. Cover with foil.
Bake 15 to 20 minutes in the preheated oven, until fish is easily flaked with a fork. Pour the remaining butter mixture over the fish to serve.

1 lb. Swai fish or Basa
salt
ground black pepper
1/2 tablespoon vegetable oil
2 tablespoons unsalted butter, melted
1/4 cup white wine
1 tablespoon lemon juice
1 pinch salt
1 teaspoon chopped Italian parsley

Steps:

Instructions Rinse the swai fish fillets with cold water. Pat dry with paper towels. Seasoned both sides of the fish with salt and ground black pepper. Heat up a skillet on medium-high heat. Add the vegetable oil. Pan fry the Swai fish fillet, about 1-2 minutes on each side. Turn the fish over gently and pan fry the other side until both sides are light brown with slightly crispy edges. Dish out on a plate. In a sauce pan, heat the melted butter, then add the white wine and lemon juice. Add a pinch of salt. As soon as the sauce bubbles, turn off the heat. Drizzle the sauce on the fish, garnish with parsley and serve immediately.
